There's no need to frost these rich, buttery vanilla chocolate chip cupcakes as they are tasty as is. They're great as a snack or to serve at parties.

8 ounces (2 sticks) unsalted butter (room temperature)
1 1/2 cups sugar
4 large eggs (room temperature)
2 teaspoons vanilla extract or 3 packets vanilla sugar
2 1/2 cups all-purpose flour
2 teaspoons baking powder
Pinch of salt
1 cup milk
1/2 cup chocolate chips or finely chopped semisweet or dark chocolate

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F/190 C. Grease and flour cupcake tins or line them with paper liners.
  • Using an electric mixer and a large bowl, beat together the butter and sugar until the mixture is light and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla.
  • In a separate medium bowl, whisk together the flour, baking powder, and salt.
  • While beating on low speed, add the flour mixture alternately with the milk to the creamed butter and sugar mixture, beating just until a smooth, thick batter forms. Do not overmix.
  • Stir the chocolate into the batter now if you like, or add it after you have filled the cupcake liners.
  • Spoon the batter into the prepared cupcake tin, filling a little more than half full.
  • Bake the cupcakes until set and golden in color, approximately 20 to 25 minutes. The cupcakes are done when a toothpick inserted in the center comes out clean.
  • Allow the cupcakes to cool in the pan for several minutes before transferring to a rack to cool completely.

Steps:

  • Preheat oven to 350°F Line a muffin pan with paper liners.
  • In a small bowl, mix together flour, baking powder and salt.
  • In a large bowl, using an electric mixer, beat together sugar and butter until well combined. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract. Alternately beat in flour mixture and milk, making three additions of flour mixture and two of milk, beating until smooth. Stir in chocolate chips.
  • Scoop batter into prepared pan. Bake in preheated oven for 23 to 28 minutes or until golden and tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack.
  • Top cooled cupcakes with favorite frosting.

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant vanilla pudding mix
1 cup water
1/2 cup canola oil
4 large eggs
1 cup miniature semisweet chocolate chips
1 can (16 ounces) chocolate or vanilla frosting
Additional miniature semisweet chocolate chips, optional

Steps:

  • In a large bowl, combine the cake and pudding mixes, water, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in chocolate chips. , Fill paper-lined muffin cups two-thirds full. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to wire racks to cool completely. Frost cupcakes. Sprinkle with additional chips if desired.

1 1/2 teaspoons baking powder

2 large eggs, at room temperature
1/2 cup whole milk, at room temperature
1 teaspoon pure vanilla extract
Frosting of choice
Special equipment: one 12-cup muffin pan and 12 paper cupcake liners, such as Betty Crocker Standard Size Baking Cups

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Set aside.
  • In a medium bowl, whisk together the flours, baking powder and salt.
  • In a large bowl, using an electric hand mixer, beat the sugar and butter until combined. Add the eggs, milk and vanilla. Beat until smooth. Add the dry ingredients and mix until just blended. Steps:

  • Preheat the oven to 190C/375F/Gas mark 5. Prepare your cupcake tray with the cases needed.
  • Put the butter/margarine in with the caster sugar and use an electric whisk to beat until light and fluffy.
  • Slowly whisk in the eggs a bit at a time so that they don't curdle. Once fully whisked add the vanilla essence.
  • Sift the flour into the mixture and fold it using a spatula so as to get all of the flour mixed. Once consistent, add the chocolate chips and fold them in as well.
  • Use two tea spoons to spoon the mixture into the cases until they're 3/4 full. Place in the oven for 15-20 minutes, check regularly with a cocktail stick (if they are undercooked the cocktail stick will come out with mixture on it). Once cupcakes are done place on a cooling rack until cool.
  • Dust with icing sugar and enjoy!

½ cup butter, softened

½ cup brown sugar

1 (18.25 ounce) box yellow cake mix
1 ⅓ cups water
⅓ cup canola oil
3 eggs

Steps:

  • Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine.
