I never bring home leftovers whenever I take this creamy, stick-to-your-ribs casserole to a potluck. Its mild flavor has broad appeal. I especially like the way that the crumb topping adds a bit of crunch to each meaty serving. -Faye Hintz, Springfield, Missouri

Ingredients

8 cups cubed cooked chicken
2 cans (10-1/2 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
1 cup crushed Ritz crackers (about 25 crackers)
2 tablespoons butter, melted
1 teaspoon celery seed
Optional: Fresh parsley and sweet red pepper rings

Steps:

Preheat oven to 350°. Combine chicken, soup and sour cream; spread into a greased 13x9-in. baking dish. Combine crumbs, butter and celery seed; sprinkle over chicken mixture. , Bake, uncovered, until bubbly, 30-35 minutes. If desired, garnish with parsley and red pepper.

Ingredients

3 cups cooked diced chicken, (1 whole stewed chicken, or 3-4 boneless skinless breasts, or can sub rotisserie)
1 cup diced water chestnuts
1 (4 oz.) can mushrooms, drained
1/2 cup chopped or thinly sliced celery
1/2 small onion (1/4 cup) finely chopped
4 hard-boiled eggs, diced
1/2 cup mayo
1 can cream of chicken soup
6 Tbl. melted butter
1 1/2 cups crushed "chicken in a biskit" crackers, or ritz or club

Steps:

1. Stir/fold all together except butter and crumbs, pour into baking dish. Top with buttered cracker crumbs. Bake at 350• for about 30 minutes or til bubbly.

Ingredients

12 cups oyster crackers
2 tablespoons dry chicken base
1 teaspoon onion powder
2 tablespoons sour cream
1 cup vegetable oil

Steps:

Mix first 3 ingredients well. Toss with sour cream and oil till crackers seem evenly coated. Spread on cookie sheet and bake at 300° for 30 minutes.
