I am a busy nurse and mom of 2. I like this recipe because it is so easy, quick, and has minimal ingredients. The soup in this recipe has peas, carrots, celery, potatoes, corn, and small bits of chicken--a good variety that my kids find yummy!! Add your own twist--try a crunchy topping instead of / in addition to cheese.

1 (14 3/4 ounce) can marie callendar's chicken pot pie style soup
2 1/2 cups wide egg noodles
1 cup shredded mild cheddar cheese
salt & pepper (to taste)

Steps:

  • Boil egg noodles until tender, Drain.
  • Place cooked noodles in a small casserole dish.
  • Add Pot Pie soup and mix together.
  • Sprinkle cheese over ingredients, Cover with foil.
  • Bake 12 minutes at 400 degrees.
  • Salt & Pepper to taste.

This chicken pot pie casserole combines a Pennsylvania Dutch noodle pot pie with a more traditional crust-style pot pie for a hearty and comforting meal.

1 (8 ounce) package no-cook lasagna noodles
3 (10.5 ounce) cans condensed cream of chicken soup
3 cups milk
2 tablespoons dried parsley flakes
2 tablespoons dried minced onion
1 tablespoon onion powder
1 tablespoon chicken soup base
2 teaspoons garlic powder
2 teaspoons ground black pepper
1 teaspoon salt
2 (2 pound) whole rotisserie chickens, meat shredded and bones discarded
1 (8 ounce) package shredded Cheddar cheese
½ (8 ounce) package shredded Italian cheese blend
1 (10 ounce) can refrigerated buttermilk biscuits, separated and cut into quarters

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Break lasagna noodles into pieces. Grease a large oven-proof dish.
  • Combine condensed soup, milk, parsley, minced onion, onion powder, soup base, garlic powder, pepper, and salt in a large mixing bowl; stir until smooth. Stir in broken lasagna noodles until combined. Gently fold in shredded chicken until incorporated. Carefully pour chicken mixture into the prepared dish, smoothing out the top evenly.
  • Bake in the preheated oven until noodles are almost tender, 25 to 35 minutes.
  • Remove from the oven and sprinkle with 1/2 of the Cheddar cheese and all of the Italian cheese. Layer the biscuit chunks in a single layer over top, and sprinkle with remaining Cheddar.
  • Return to the oven and bake until biscuit dough is thoroughly cooked, 15 to 20 minutes. Tent with foil if the edges start to get too brown. Remove from the oven and let cool for 5 to 10 minutes before serving.

This of my version of the ultimate easy and cheater chicken pot pie. We make this on nights when the family is all going a different direction but we want some comfort food! It comes together really quickly and uses every day ingredients. When I have the time I make my own crust and I sometimes use different vegetables. I have even used frozen stew veggies that I thawed before cooking! Sometimes I used canned chicken! You can make it as easy or complicated as you want!

2 prepared pie crusts
1 cup chicken, cooked and chopped
2 (15 ounce) cans mixed vegetables (I use Veg All as I like the addition of potatoes)
1 (10 3/4 ounce) can condensed cream of chicken soup

Steps:

  • Line pie plate with 1 crust.
  • Mix together the chicken, vegetables and soup. Pour into pie plate.
  • Top with top crust. Seal crusts by folding top crust under the edge of bottom crust edge and pressing with a fork.
  • Poke or cut a few lines in the crust to release steam.
  • Bake at 425 degrees Fahrenheit for 30 minutes or until crust is brown.

I love to experiment in the kitchen and everyone in my family loves chicken pot pie, but not the prepackaged over floury crust... so I had a little fun with it.

1 lb chicken breast
1 (10 1/2 ounce) can cream of mushroom soup (cream of chicken can be substituted if you don't like mushroom)
1 (7/8 ounce) packet instant chicken gravy
4 ounces cups water
1 medium onion
1 (16 ounce) package mixed vegetables
5 medium potatoes (in a hurry? use some thawed french fries)
1 (12 ounce) can flakey biscuits
1 (14 1/2 ounce) can chicken broth
1 teaspoon italian seasoning
1 teaspoon garlic salt (i recommend the California style with chunks of garlic and parsley)
1 teaspoon black pepper
1 tablespoon salted butter or 1 tablespoon margarine
1/4 teaspoon ground red pepper
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Combine broth, butter, pepper, garlic salt, red pepper, Italian season and chicken in baking dish.
  • Bake 25 minutes.
  • Once chicken is cooked remove from baking dish and place in freezer for quick cooling and save liquids. (can be done the night before!).
  • Put the liquid in a bowl and add gravy, soup, and flour. Mix until smooth.
  • Peel and chop potatoes. Rinse and put in a saucepan.
  • Add liquid mixture and water to potatoes and boil 15 minutes or until potatoes soften but don't lose their crispness.
  • Preheat oven to 400°F.
  • Peel and chop onion.
  • Chop cooled chicken into small pieces. (use your best judgement -- you know if you like big chunks or not :) ).
  • Pour liquids, potatoes, mixed veggies, onion, and chicken into large baking dish.
  • Bake 35 minutes.
  • Bake biscuits according to package directions -- (I know it says not to say that, but canned ones are the easiest and you don't need any other ingredients, and they all have different directions. I don't recommend baking the biscuits on top of the casserole because they come out half mushy -- and nobody likes mushy biscuits. Usually they're 400 degrees and if its 450 you can still bake both at the same time by just taking 8 or 10 minutes off the casserole bake time -- but watch closely!).
  • Remove from oven. Allow to cool 5 minutes. Enjoy!

A hearty soup that is easy and quick to make. It started out as a chicken pot pie recipe and was altered to make into a soup with noodles. Just delicious! This recipe makes a lot! It is easy to cut in half to make less if needed. It will thicken as it cools, but is as good the next day for leftovers.

1 (8 ounce) package egg noodles
½ cup cubed red potatoes
½ cup diced carrots
2 tablespoons olive oil
4 (6 ounce) skinless, boneless chicken breast halves
1 pinch garlic salt, or more to taste
salt and ground black pepper to taste
⅓ cup salted butter
⅔ cup all-purpose flour
1 quart heavy cream
1 (32 ounce) container chicken broth
1 tablespoon minced garlic
½ cup frozen peas
½ cup frozen corn

Steps:

  • Fill two large pots with lightly salted water and bring to a rapid boil. Cook egg noodles in one pot until tender yet firm to the bite, and cook potatoes and carrots in the second pot until tender, 7 to 10 minutes. Drain noodles, potatoes, and carrots; set aside.
  • Heat oil in a large skillet over medium-high heat. Season chicken with garlic salt, salt, and pepper; add to the hot skillet. Saute until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the heat and cut into cubes; set aside.
  • Meanwhile, melt butter in a large stockpot over medium heat until a pinch of flour sprinkled in will just begin to bubble. Slowly whisk in flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until flour has turned golden and begins to smell like toast, about 20 minutes. If it gets a little clumpy, that's okay.
  • Slowly add cream; keep stirring. Add chicken broth and garlic; stir until smooth. Add frozen peas and corn. Add egg noodles, potatoes, carrots, and chicken. Cook and stir until heated through, about 10 minutes.

3 chicken breasts, cooked and diced
1/4 cup butter
1/3 cup flour
1 small onion, chopped
1/4 teaspoon black pepper
1 1/2 cups chicken broth
1/2 cup milk
12 ounces frozen mixed vegetables, cooked
1/4 cup chicken gravy (optional)
2 refrigerated pie crusts

Steps:

  • Preheat oven to 425 degrees.
  • Take out pie crusts and let get to room temperature.
  • In saucepan, simmer butter and onion until soft.
  • Stir in flour and pepper, and cook until bubbly.
  • Slowly stir in broth and milk, a little at a time.
  • Heat to boil, stirring constantly.
  • Boil one minute.
  • Add chicken, veggies and gravy.
  • Unroll 1st pie crust and cut into 4 sections.
  • Cover the bottom of a 9x13 baking dish with the 4 sections of pie crust.
  • Spoon chicken filling over crust.
  • Unroll 2nd pie crust and slice into 3/4" strips.
  • Arrange 1/2 of the strips on a diagonal in one direction, about 1/2" apart, longest strips in the middle.
  • Arrange the other 1/2 of the strips on a diagonal in the opposite direction to create a lattice effect.
  • Bake on a cookie sheet 40-45 minutes or until crust is golden brown.
  • Let stand approximately 10 minutes before serving.
