The fennel and cumin may seem unusual ingredients for potato salad, but we find those flavors delightful.

6 cups boiled potatoes (about 4 large, diced)
3 hard-boiled eggs, chopped
1 cup celery, chopped
1/4 cup onion, chopped
1/4 cup dill pickle, chopped
1 tablespoon pimentos, minced
4 slices bacon, cooked & crumbled
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons vinegar
1 tablespoon Season-All salt or 1 tablespoon seasoning salt
3/4 teaspoon dry mustard
1/4 teaspoon pepper
1/2 teaspoon fennel seed, crushed (optional)
1/4 teaspoon ground cumin (optional)

Steps:

  • Put potatoes, eggs, celery, onion, pickle, pimento & bacon in a bowl.
  • Combine sour cream, mayonnaise, vinegar and seasonings; blend thoroughly. Pour over potato mixture & toss lightly.
  • Chill several hours to lget flavors blend. Serves 6-8.

A few years ago in an on-line fabric swap, one of the gals from Germany shared with me that THIS is the kind of potato salad served in the Bavarian part of Germany today. Quite different from what we Americans call "German" potato salad. As my dad would say: puts hair on your chest!

6 -8 medium potatoes
1/2 cup vinegar
1/2 cup sugar
1/4 cup salad oil
1 -2 onion, chopped
1 cup mayonnaise
2 large dill pickles, diced
2 hard-boiled eggs, chopped

Steps:

  • Cook the potatoes in boiling water; slice and keep warm.
  • While the potatoes are cooking, prepare the marinade: combine vinegar, sugar, salt & pepper to taste, oil, and onion in a small bowl; stir until sugar dissolves (or you give up).
  • Pour marinade over warm potatoes; stir to mix; allow to "work" for at least several hours (overnight is better) at room temperature.
  • Just before serving, add mayonnaise, pickles and eggs.
  • NOTE: My quilting friend pointed out that the pickles and eggs were strictly optional, and even the mayo wasn't "required.".

A little lime, salt, and honey go a long way in this dish created out of sheer boredom. One night last summer we were grilling fish and corn, yet again. When I asked my boyfriend what he wanted as a second side dish, all he said was, 'something different.' I decided to try a twist on the traditional fruit salad that I grew up eating, and it was a huge hit! The best thing about this recipe is that most fruits are great with the dressing, so you can use your favorites or whatever is in season.

¼ cup fresh lime juice
3 tablespoons honey
2 teaspoons salt
½ teaspoon ground cayenne pepper
1 pound fresh strawberries, hulled and quartered lengthwise
3 cups cubed seedless watermelon
1 fresh pineapple - peeled, cored and cut into 1 inch chunks

Steps:

  • Stir together the lime juice, honey, salt, and cayenne pepper in the bottom of a large salad bowl.
  • Toss the strawberries, watermelon, and pineapple with the dressing. Chill the fruit salad until ready to serve.
