CHARLESTON RED RICE

This is pure southern soul food. Its been made for generations in my family since the early 1900's. Every area of the south has a version of red rice but I saw that Zaar did not have a recipe quite like this one. I cannot get enough of this southern delight and thought you might like it as well.

Number Of Ingredients 10

1 (6 ounce) can tomato paste
2 medium onions, diced fine
1 bell pepper, diced fine
2 teaspoons salt
2 -3 teaspoons granulated sugar
1 lb bacon, fried and grease held aside
1 lb smoked beef sausage
3 cups water
2 cups raw long grain rice
2 tablespoons black pepper

Steps:

  • Fry bacon and remove from the pan:.
  • Saute'onions and peppers in the bacon grease;.
  • Add tomato paste water salt sugar and pepper.
  • Cook uncovered slowly about 5 minutes and then add the rice another 5 minutes until mixture is bubbly then pour into the top section of a rice steamer or you can use a very large Pyrex dish.
  • Pour mixture in and add the sausage and crumble up the bacon and mix into the rice mixture.
  • Cover and bake for 35- 45 minutes in a preheated oven at 350 degrees or steam in steamer.
  • I bake it now days but the family recipe says to steam it.

A solo side dish of moist, and flavorful rice. Substituting 1/4 teaspoon of your favorite curry powder in place of the garlic will give the rice a rich glow and a more subtle flavor. Cooking is a Creative Sport.

2 tablespoons olive oil (optional)
1 clove garlic, diced
1/3 cup onion, diced
1/3 cup uncooked rice (, not instant)
2/3 cup chicken stock

Steps:

  • Heat the olive oil in a small sauce pan that has a tight fitting cover.
  • Add garlic and onion, and stir until the onion becomes transparent, but stop before the garlic starts to turn brown.
  • Add rice and continue to sir until all the grains are coated in the olive oil.
  • Add the chicken stock, lower the heat to barely on, and cover with a tight fitting lid.
  • Keep pan over the low heat for exactly 15 minutes.
  • Remove from the heat but Do NOT peek, and let the pan sit for another 10 minutes.

SOLO SWEET AND TART MUSHROOM RICE

The flavor of the mushrooms, which offer a safe and natural alternative to MSG, is balanced by the sweetness of sauted onions and then by the fresh flavors of garlic and lemon which are added at the last moment. This rice dish for one, can be easly expanded, and I like to serve it with Pickle Dilly Green Beans recipe#16256, and lightly flavored red or white meat.

1/3 cup raw white rice (Not the quick cook stuff)
2 ounces cans sliced button mushrooms
1/3 cup onion, diced
2/3 cup chicken stock
1 teaspoon olive oil
1 teaspoon butter
1 clove garlic, diced
1 tablespoon lemon juice

Steps:

  • Heat oil and butter in a medium sized pan until melted and saute the onion until nearly transparent.
  • Add mushrooms and rice and stir until all the rice grains are coated in the oil/butter mixture.
  • Add the chicken stock and cover with a tight fitting lid.
  • Cook rice mixture covered over very low heat for 15 minutes and then let sit for another 10 minutes.
  • DO NOT remove the lid.
  • As soon as the rice starts to cook, put the diced garlic in a small dish and cover with the lemon juice.
  • Set aside until the rice is ready to serve.
  • After the waiting period, remove the cover from the rice pan, add the garlic and lemon juice and fluff before serving.

This recipe was given to me, upon request! We have a fresh Mex grill place here that uses sweet rice. This recipe is very similar to this restaurants. Use it on your fresh tortilla salads, or in burritos, on the side, any way you have it, it is darn good (and sweet!) NOTE: The amount of sugar makes it very sweet. You can alter the amount of sugar if you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

1/2-1 tablespoon vegetable oil
1/2 of a white onion, chopped (add more or less to your taste)
1/2 bunch fresh cilantro
1 1/3 cups white rice
3 cups chicken broth
1/4-1/2 cup white sugar

Steps:

  • Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
  • Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
  • Add the rice, cooking until it is light brown (being careful not to burn).
  • Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil.
  • Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.

The recipe uses Sun Dried Tomato and the oil that was used for packing. The rice has a mild sweet/sour taste that adds flavor, but will not distract from the other dishes in the meal.

1 tablespoon sun-dried tomato (packed in olive oil)
1 tablespoon oil (from the Sun Dried Tomato)
1 tablespoon butter
1/3 cup long grain rice
2/3 cup chicken stock (Canned is fine)

Steps:

  • Heat the oil from the tomato in a small sauce pan that has a tight fitting lid.
  • Add the butter and stir until melted.
  • Add onion and saute until nearly transparent.
  • add rice and stir until all the grains are coated with the oil/butter.
  • Add the tomato, and chicken stock.
  • Cover, reduce heat to the lowest level and allow to simmer for 15 minutes.
  • Remove from heat, but do NOT remove the cover.
  • Allow to sit for another 15 minutes.
