These soft scrambled eggs are so easy and SO dreamy! Four quick and easy secrets to the best scrambled eggs of your life.

4 eggs
1/2 tablespoon butter
salt to taste

Steps:

  • Melt the butter in a medium-sized non-stick skillet over medium-low heat. We want the butter to pretty much coat the whole pan.
  • Whisk the eggs. When the butter is just barely bubbling, add the eggs to the pan directly in the center so that the butter gets pushed out to the sides. ZERO STICKAGE. This is good.
  • Watch for the edges to just barely start to set, and then gently swipe a spatula around the edges of the pan to create large soft curds. Don't flip the curds over. Continue this process, pausing in between to allow time for the eggs to cook but working quickly enough so as not to overcook the eggs, just gently pushing/folding the liquid eggs to form curds. The entire process should take 2-3 minutes or less.
  • When the eggs are barely set and you have some big folds of heavenly soft scrambled eggs laying in the pan, remove from heat. Serve on a breakfast sandwich or with your bowls or just by themselves. SO. AMAZINGLY. GOOD.

2 large avocados
1/2 teaspoon grated lemon zest plus 1 teaspoon lemon juice
Kosher salt and freshly ground black pepper
4 slices multigrain or sourdough bread, toasted
1 tablespoon unsalted butter
2 ounces cream cheese, cut into bits
4 large eggs, beaten
2 radishes, very thinly sliced
1 tablespoon finely chopped chives

Steps:

  • Coarsely mash the avocados in a bowl with the lemon zest and juice, 1/4 teaspoon salt and pepper to taste. Spread the mash evenly onto the toasts.
  • Melt the butter in a medium nonstick skillet over medium-low heat. Add the cream cheese, eggs and 1/4 teaspoon salt and cook, stirring constantly with a rubber spatula, until the mixture is just set with small, creamy curds, about 5 minutes. Spoon the eggs onto the toasts and top with the radishes and chives. Sprinkle with salt.

Yield 1 serving of eggs and kale, plus 6 cups of quinoa

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
1/4 teaspoon grated fresh ginger
1 cup cooked quinoa (see below)
1/2 cup roughly chopped kale leaves and tender stems
Kosher salt and freshly ground black pepper
3 large eggs
2 tablespoons coconut water

Steps:

  • Set a large nonstick skillet over medium-high heat. Add 2 tablespoons of the olive oil and heat to shimmering. Add the ginger and cook until fragrant, about 15 seconds. Add the quinoa and shake the skillet to spread it out into an even layer. Cook, without stirring, until the bottom gets crispy, about 3 minutes.
  • Flip the quinoa and continue cooking until the other side gets crispy, about 3 minutes. Add the kale, season with a pinch of salt and a twist of pepper, stir to combine and cook for 1 minute. Transfer to a plate and set aside.
  • In a medium bowl, whisk together the eggs and coconut water to thoroughly blend. Wipe out the skillet, set it over medium-high heat and add the remaining 1 tablespoon olive oil, then immediately add the eggs and begin stirring. Season the eggs with a pinch of salt and a twist of pepper. Cook, stirring constantly, until small, soft curds form, about 2 minutes.
  • Serve the scrambled eggs on top of the crispy quinoa.
  • Make the quinoa: In a medium saucepan, combine 3 1/4 cups water, 2 cups quinoa (rinsed) and a good pinch of salt. Bring to a boil. Stir the quinoa, cover, reduce the heat to maintain a gentle simmer and cook until the quinoa pops open (releasing the circular white germ of the seed) and all the liquid is absorbed, about 15 minutes. Spread the quinoa out on a sheet pan and let cool before transferring it to an airtight container. Cooked quinoa will last up to 5 days in the fridge.

1 tablespoon chopped fresh chives
1/4 teaspoon fleur de sel or coarse kosher salt plus more for sprinkling
1 tablespoon butter
1/2 cup fresh ricotta cheese*
4 1/3- to 1/2-inch-thick slices whole grain bread or 8 whole grain baguette slices, lightly toasted and buttered
Whole chives (optional)

Steps:

  • Whisk eggs, chopped chives, and 1/4 teaspoon fleur de sel in medium bowl until well blended. Melt butter in heavy medium nonstick skillet over medium heat. When foam subsides, add eggs and stir with heatproof silicone spatula until eggs are almost cooked but still runny in parts, tilting skillet and stirring with spatula to allow uncooked portion to flow underneath, about 2 minutes. Remove from heat. Add ricotta and stir just until incorporated but clumps of cheese are still visible.
  • Arrange 2 toasts or 4 baguette slices on each of 2 plates. Spoon scrambled eggs atop toasts. Sprinkle with more fleur de sel and pepper. Garnish with whole chives, if desired.

3 tablespoons heavy cream
2 tablespoons unsalted butter
salt & freshly ground black pepper, to taste (I use kosher salt)
2 avocados, peeled and cut in slices
8 slices smoked salmon
chives, chopped (optional)

Steps:

  • Crack eggs into a bowl and add the cream, whisk until the eggs look foamy. (Important to whisk to incorporate air into the egg mixture.makes the scrambled eggs turn out light and fluffy.).
  • Heat a large nonstick skillet over medium heat.
  • Add butter and melt until it foams, then turn the heat down to low.
  • Slowly pour in the egg mixture.
  • Using a rubber spatula, slowly stir the eggs from the outside of the pan to the center. (Once eggs begin to set, stirring slowly will create large, fluffy results.).
  • *This takes approximately 10 minute Don't let the eggs brown. Be patient!
  • Season the eggs with salt and pepper.
  • Serve with slices of avocado and smoked salmon. Garnish with chives, if desired.

2 slices bread or 1 English muffin

Steps:

  • Melt some butter in a skillet/frying pan. When 1/2 the butter is melted, turn off heat. If your butter is cold, zap it in the microwave for 12 seconds. Let the pan get cold & then break 2 eggs. Because the pan is cold, don't use a mixing bowl, mix it in the frying pan. The safe way to crack eggs is over a hard, flat surface. Stir eggs & add 3 tablespoons whole milk per serving. Add salt & freshly ground pepper. Turn burner on low. Stir well. Cook SLOWLY over low heat until it just comes together, stirring often. Serve with lightly browned toast or english muffin.
