EASY PIZZA DOUGH PRETZEL BITES

Easy Pizza Dough Pretzel Bites image

Provided by Trisha Yearwood

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 8

1/4 cup Dijon mustard
1/3 cup sour cream
1 1/2 teaspoons honey
Kosher salt
3/4 pound pizza dough
1/2 cup baking soda
1 large egg
Kosher salt

Steps:

  • For the creamy mustard dip: Stir together the mustard, sour cream and honey. Season with salt. Transfer to a small serving bowl and refrigerate until ready to serve.
  • For the pretzel bites: Preheat the oven to 425 degrees F. Line a tray with paper towels.
  • Bring 3 quarts water to a boil in a large pot. Divide the pizza dough into four pieces and roll each piece into a rope about 3/4-inch in diameter. Cut each rope into approximately 1-inch long segments.
  • When the water comes to a boil, add the baking soda and stir to combine. Add half of the dough to the water and boil for about 45 seconds. Transfer the boiled dough to the paper towels. Repeat with the remaining dough. Lightly pat the dough with a paper towel to dab off some of the foamy water.
  • Line a baking sheet with parchment paper. Beat the egg with 1 1/2 tablespoons water in a small bowl.
  • Dip each dough bite into the egg wash, letting the excess drip off, then place it on the prepared baking sheet, leaving about 1 inch of space between each. Sprinkle the tops of the bites lightly with salt and bake until deep golden brown all over, 13 to 15 minutes.
  • Serve warm with the creamy mustard dip.

HOMEMADE SOFT PRETZEL BITES

Homemade Soft Pretzel Bites image

Adapted from Bobby Flay From the blog Two Peas and Their Pod http://twopeasandtheirpod.com/homemade-soft-pretzel-bites/

Provided by hansje54

Categories     Breads

Time 50m

Yield 60 pretzel bites, 5 serving(s)

Number Of Ingredients 15

1 1/2 cups warm water
2 tablespoons light brown sugar
1 (1/4 ounce) package active dry yeast
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2-5 cups all-purpose flour
vegetable oil
3 quarts water
3/4 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
coarse sea salt
1/2 tablespoon unsalted butter
1/2 tablespoon all-purpose flour
1/2 cup milk
8 ounces cheddar cheese, grated

Steps:

  • For the Pretzels:.
  • Combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
  • Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
  • Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
  • Preheat the oven to 425 degrees F.
  • Bring the water to a boil in a small roasting pan over high heat and add the baking soda.
  • Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.
  • Remove to a baking rack and let rest 5 minutes before eating. Serve with cheese sauce, recipe below.
  • For the cheese sauce:.
  • Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute. Whisk in the milk and cook until slightly thickened. Remove from heat and stir in the Cheddar cheese until smooth and all of the cheese is melted. Season with salt and pepper, to taste.
  • If you want to make cinnamon and sugar pretzel bites-instead of adding salt, sprinkle the bites with cinnamon and sugar. For the frosting mix-soft cream cheese-about 3 T, powdered sugar, a teaspoon of vanilla extract, and a little bit of milk. Whisk together. Add more milk if it is too thick, if it is too thin, add more powdered sugar. I don't measure. I just guess until the consistency is right.*.

SOFT PRETZEL BITES

Soft Pretzel Bites image

These soft pretzel bites come together in a little over an hour and are perfect for those game day parties, tailgates, or even as a tasty little snack!

Provided by Jennifer Stewart

Categories     Easy Finger Foods

Time 1h20m

Number Of Ingredients 9

½ cup warm water (105 to 110 degrees F)
1 ½ teaspoon instant yeast
½ teaspoon granulated sugar
1 ¼ cup unbleached all-purpose flour
½ teaspoon salt
1 teaspoon olive oil
4 cups water
1/4 cup baking soda
1 tablespoon melted butter (optional)

Steps:

  • Put warm water, yeast, and sugar in a mixing bowl. Let stand for 4 to 5 minutes for the yeast to start to foam. If water is too hot, it will kill the yeast, and too cold it will delay activation of the yeast. The wait time allows the yeast to get activated and foam. If it does not foam after the time, this could mean your yeast might not be active and could impact the final product.
  • Add flour and salt. Mix using a dough hook for 3 to 4 minutes or add to a stand mixer fitted with a dough hook and mix. The dough will be slightly sticky.
  • Cover the dough bowl with plastic wrap or a damp cloth and let it rest for 45 minutes in a draft-free place. My kitchen is very drafty, so I put my bowl in the microwave.
  • While the dough is resting, bring the 4 cups of water to a boil in a large pot. Once the water is boiling, turn the heat off and add the baking soda. Stir to combine. Let the water cool until the dough is ready.
  • Preheat oven to 400 degrees F. Line a baking sheet with a silicone mat or oil the baking sheet. Set aside.
  • After the dough rests for 45 minutes, pour 1 teaspoon olive oil on a clean surface.
  • Remove the dough from the bowl and place on prepared surface.
  • Cut the dough into 4 pieces and roll each piece into a rope, roughly a foot long.
  • Cut each rope into 1-inch pieces. You should have approximately 48 pieces.
  • Place a few of the cut bites into the water for 30 to 60 seconds.
  • Scoop them out and place them on the prepared cookie sheet.
  • Repeat steps 12 and 13 for all the bites.
  • Bake in the preheated oven for 12 to 14 minutes or until the bites are nice and golden brown.
  • Remove the pan from the oven.
  • Brush the bites with melted butter and sprinkle with coarse salt if desired.
  • Serve with your favorite dipping sauce.
  • Enjoy!

2 ½ teaspoons kosher salt
4 cups all-purpose flour, or more as needed
1 teaspoon vegetable oil
3 quarts cold water
½ cup baking soda
cooking spray
1 egg

BEER CHEESE AND SOFT PRETZEL BITES

Beer Cheese and Soft Pretzel Bites image

This recipe uses one of maybe my favorite hacks ever! I take deli or bakery pizza dough and turn it into browned-and-crunchy on the outside, chewy on the inside pretzel bites that beg to be dipped in a cheesy beer sauce. Serve these at your next tailgate or party and watch them disappear!

Provided by Kardea Brown

Categories     appetizer

Time 55m

Yield 8 to 12 servings

Number Of Ingredients 20

1 pound bakery pizza dough
All-purpose flour, for dusting
1/2 cup baking soda
2 tablespoons sugar
1 large egg yolk
Pretzel salt or coarse kosher salt, for sprinkling
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
Half a 12-ounce can lager beer (I like LO-Fi Brewing)
1/2 cup half-and-half
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
Pinch Miss Brown's House Seasoning, recipe follows
1 1/2 cups shredded sharp Cheddar
Kosher salt and freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Make the soft pretzel bites: Preheat the oven to 450 degrees F. Line a rimmed baking sheet with a cooling rack covered with paper towels.
  • Bring 8 cups of water to a boil in a large stockpot. (It may seem like a small amount of water for a large pot, but once you add baking soda it'll foam up.)
  • While the water comes to a boil, place the dough ball on a lightly floured surface. Cut into 4 equal pieces. Roll each portion into a long rope. Cut the ropes into 1-inch pieces.
  • When the water is boiling, add the baking soda and sugar. Cook the dough pieces, in batches, for 30 seconds. Drain on the paper towels.
  • Whisk together the egg yolk and 1 teaspoon water in a small bowl. Dip the tops of the pretzels in the egg wash and sprinkle with salt. Place on parchment paper-lined baking sheets. Bake until the pretzel bites are nicely browned, 9 to 10 minutes.
  • For the beer cheese: Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cook until foamy, about 2 minutes. Gradually whisk in the beer until the mixture is smooth, then add the half-and-half. Simmer until the mixture thickens, about 5 minutes. Whisk in the mustard, Worcestershire sauce and House Seasoning. Gradually add the cheese and stir until smooth. Season to taste. Serve the pretzel bites with the beer cheese.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

  • Whisk the yeast into 1 and 1/2 cups warm water. Allow to sit for 1 minute. Some clusters of yeast may remain. Add salt, brown sugar, and melted butter. Whisk until fairly combined. Slowly add 3 cups of flour, 1 cup at a time. Mix with a wooden spoon (or dough hook attached to stand mixer) until dough is thick. Add 3/4 cup more flour until the dough is no longer sticky. If it is still sticky, add up to 1/4 cup more. Poke the dough with your finger – if it bounces back, it is ready to knead.
  • Turn the dough out onto a lightly floured surface. Knead the dough for about 3 minutes, then shape into a ball. Place in a large greased mixing bowl. I usually use nonstick spray to grease it, but olive oil works too. Cover and let the dough rest in a warm area for about 10 minutes.
  • Preheat oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • With a sharp knife, cut ball of dough into 6 sections. Roll the dough into six 20-inch long ropes. Cut the rope into 1.5 inch pieces to make bites.

  • In a large mixing bowl, whisk together the flour, salt, malt powder or sugar and yeast. Set the whisk aside and switch to a sturdy wooden spoon. Stir in the milk and tap water until a soft dough forms. Turn onto a generously floured surface and knead, adding small amounts of flour as needed to keep the dough from adhering to the counter. You do not want a firm dough... it should be fairly slack, a little tacky and soft, yet smooth. Place dough in a clean bowl, cover with a damp tea towel and set aside to rise in a warm, draft-free place until nearly doubled in bulk and puffy, about an hour or so.
  • In the work-bowl of a stand mixer fitted with a dough hook, combine the flour, salt, malt powder or sugar and yeast. Mix on low just to combine dry ingredients. Remove bowl from the mixer, cover with a damp tea towel and set aside to rise in a warm, draft-free place until nearly doubled in bulk and puffy, about an hour or so.
