- For the bars:.
- Cream butter & sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well.
- In separate bowl combine flour, salt & soda & stir with whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet ( 13 X 18 size). Bake at 375 degrees for 10 to 18 minutes until light golden brown or until a toothpick comes out clean in the middle.
- Cool completely before frosting.
- Frosting:.
- Combine butter & shortening until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined. Then add milk & mix until smooth and spreading consistency. Add food coloring if desired and mix well. Spread over cooled cookie. Decorate with sprinkles if desired.

I love sugar cookies, but there is a lot of effort that goes into making them. This recipe makes it so much easier!! I like to bake mine for exactly 10 mins. They are a little under cooked, but I think that they are better that way. Don't bake any longer than 15 mins... They seem to dry out more while baking. Keep it to 10 -12 mins.

- Bars: In a large bowl cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Mix in vanilla and almond extract.
- In a separate bowl whisk together flour, salt & baking soda. Add to wet mixture and mix just until combined.
- Spread on a greased, rimmed baking sheet (use a 13 x 18 pan). The dough will be just like cookie dough- heavy & sticky- so it's best to spray your hands with a little nonstick spray and use them to help mold the dough into the pan.
- Bake at 375 degrees for 10 mins - 15 mins, until light golden brown or until a toothpick comes out clean. (I like to slightly under cook mine. I take them out at 10 minutes exactly. They are not brown at all, but I think that they are better this way.).
- Cool completely before frosting.
- Frosting: In a large bowl, beat butter, vanilla, almond extract and salt.
- Add powdered sugar (1 cup at a time) until combined.
- add milk & mix until smooth and spreading consistency.
- Add a few drops of color, if desired.
- Spread over cooled cookie, then cut into bars.

Oh I love sugar cookies but they are time consuming so these are the perfect fix for that. I got this recipe from Amanda Cooks Blog - so tasty. Ammend your frosting color to fit the holiday - pastel for Easter, different shades of green for St. Pats etc. Enjoy

- In a large mixing bowl or stand mixer beat the butter, cream cheese, sugar, and egg until nice and frothy. About 4 minutes. Add the vanilla and almond extract and beat for 1 minute more.
- In a small bowl combine the flour, baking powder and baking soda. Mix them around so that all ingredients are well incorporated. Add the flour mixture to the butter mixture and beat for about 2 minutes. Press the dough into a large jelly roll (cookie sheet) pan. Bake at 350 degrees for 20 minutes. Let the pan cool completely.
- To make the frosting, in a medium sized bowl (or your stand mixer) combine the butter and cream cheese. Beat for about 2 minutes. Add the powdered sugar, milk, vanilla and food coloring. Mix for 1-2 minutes or until smooth. Add or reduce the amount of powdered sugar to get the desired consistency. Frost your pan of cookies. Cut the cookies into bars and serve.

- Preheat oven to 350 degrees. If butter hasn't been softened you can place in microwave for 10 seconds to *slightly* soften it.
- In a large bowl, cream together butter and sugar on medium speed for 20-30 seconds. While mixer is still on medium speed, add in egg, vanilla and almond extract.
