These cinnamon sugar soft pretzel bites are perfect soft pretzels with a chewy pretzel crust coated in cinnamon sugar. Perfect served with a warm cream cheese dip!

2 1/4 tsp instant yeast
1 1/2 cups warm water
1 tsp salt
1 TBS brown sugar
2 TBS unsalted butter ((melted))
4 cups all purpose flour
1 large egg
1 TBS water
9 cups water
1/2 cup baking soda
1/4 cup butter ((melted))
3/4 cup sugar
3 tsp cinnamon
4 oz cream cheese (softened))
1/4 cup butter ((softened))
1/2 tsp vanilla
1 1/2 cups powdered sugar

Steps:

  • Dissolve your yeast in your warm water in a large bowl. Stir together for about 1 minute until mostly combined.
  • Add in your salt, sugar and butter and stir everything together.
  • Add in your flour, 1 cup at a time until dough is thick and no longer sticky. Add more flour 1 TBS at a time if needed to make sure dough isn't sticky. (Poke dough with your finger, and dough should bounce back - then it is ready)
  • Lightly flour a flat surface.
  • Knead your dough for 3 minutes and form into a ball.
  • Oil a large bowl with nonstick spray and place dough in. Cover bowl with a towel and place in a warm area.
  • Allow to rest in warm area for about 30 minutes.
  • Preheat your oven to 425 degrees.
  • Bring 9 cups of water with ½ cup of baking soda to boil.
  • Cut your dough ball into 6 sections.
  • Roll each section into long ropes about 20-22 inches long.
  • Cut each rope into about 10-12 1.5 inch pieces.
  • Drop one rope worth of pretzel bites into your baking soda bath and let sit for 20-30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment or a silicone liner.
  • Beat together your egg and 1 TBS water in a small bowl.
  • Brush egg over each pretzel bite and place on prepared pan.
  • Place in oven and bake for 15 minutes or until pretzel tops are a nice golden brown.
  • Remove from oven.
  • Combine sugar and cinnamon in a small bowl.
  • Dip each pretzel bite into melted butter then into cinnamon sugar mixture.
  • Set back on tray and repeat with additional pretzel bites.
  • Mix together your butter and cream cheese until smooth.
  • Add in your powdered sugar and vanilla and mix until completely combined. (Add in milk 1/2 TBS at a time, if needed to make dip softer and smoother) Microwave for 20 seconds to reheat if you're not using immediately.

4 cups unbleached all-purpose flour
3 tsp saf-instant yeast
1 1/2 cups warm water
1 tbsp cane sugar
1 tsp sea salt
1/2 cup water (room temperature)
1 tsp baking soda
2 tbsp butter (melted)
1/2 cup cane sugar
1 tsp cinnamon

Steps:

  • Preheat the oven to 425F degrees. Line 2 large baking sheets with parchment paper.
  • In a large bowl combine the yeast warm water and sugar. Add in the flour and salt and knead until smooth. I did by hand or you can use a stand mixer with a dough hook.
  • Grease a second bowl with nonstick cooking spray and place the dough into the bowl. Cover with a clean dish towel and let rise for 30 minutes.
  • Divide the dough into 8 equal parts. Do it as you would slice a pizza (vertical cut, horizontal cut and cross cut). Roll each part into a rope about 24 to 26 inches long and cut into bite size pieces and transfer them to the baking sheet.
  • In a small glass bowl, combine water and baking soda. Brush this liquid over the pretzel bites or use a spray bottle.
  • Bake 10 to 12 minutes, or until golden brown. Brush each hot baked pretzel bite with melted butter immediately after taking them out of the oven. Then dip them in the cinnamon sugar mix.

6 tablespoons butter, melted
2 tablespoons brown sugar
1 (.25 ounce) package active dry yeast
2 ½ teaspoons kosher salt
4 cups all-purpose flour, or more as needed

3 quarts cold water
½ cup baking soda
cooking spray
1 egg
1 tablespoon water

Steps:

  • Place 1 1/2 cups water, butter, brown sugar, yeast, and salt in the bowl of a stand mixer fitted with the hook attachment. Mix until well combined. Let sit for about 5 minutes.
  • Turn mixer on low speed and add 4 cups flour, 1 cup at a time. Add additional 1/2 cup flour if dough appears sticky. Increase speed to medium and knead until dough is smooth and pulls away from the sides of the bowl, 4 to 5 minutes. Sprinkle in more flour if dough still seems a little tacky.
  • Oil a large mixing bowl. Add the ball of dough. Cover with plastic wrap and let rise in a warm place for about 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Grease a sheet pan with cooking spray.
  • Bring 3 quarts water to a boil in a large saucepan. Slowly add baking soda and return to a boil.
  • Meanwhile, remove dough from the bowl, flatten into a disc shape, and cut into 8 wedges. Roll each wedge into a 24-inch rope. Cut each rope into 1-inch pieces.
  • Drop batches of dough pieces into the boiling water for about 35 seconds. Remove to the prepared sheet pan. Beat egg with 1 tablespoon water; brush over the tops of each boiled dough piece. Repeat with remaining dough.
  • Bake in the preheated oven until golden brown, 14 to 16 minutes. Cool slightly before serving.

1 1/2 cups warm water
2 tablespoons light brown sugar
1 (1/4 ounce) package active dry yeast
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2-5 cups all-purpose flour
vegetable oil
3 quarts water
3/4 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
coarse sea salt
1/2 tablespoon unsalted butter
1/2 tablespoon all-purpose flour
1/2 cup milk
8 ounces cheddar cheese, grated

Steps:

  • For the Pretzels:.
  • Combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
  • Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
  • Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
  • Preheat the oven to 425 degrees F.
  • Bring the water to a boil in a small roasting pan over high heat and add the baking soda.
  • Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.
  • Remove to a baking rack and let rest 5 minutes before eating. Serve with cheese sauce, recipe below.
  • For the cheese sauce:.
  • Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute. Whisk in the milk and cook until slightly thickened. Remove from heat and stir in the Cheddar cheese until smooth and all of the cheese is melted. Season with salt and pepper, to taste.
  • If you want to make cinnamon and sugar pretzel bites-instead of adding salt, sprinkle the bites with cinnamon and sugar. For the frosting mix-soft cream cheese-about 3 T, powdered sugar, a teaspoon of vanilla extract, and a little bit of milk. Whisk together. Add more milk if it is too thick, if it is too thin, add more powdered sugar. I don't measure. I just guess until the consistency is right.*.

1 cup very hot water
2 tablespoons baking soda
4 tablespoons melted butter
1/2 cup sugar
1 teaspoon cinnamon
2 -3 ounces softened cream cheese
1 -2 tablespoon butter, softened
1/2 cup confectioners' sugar
1 -2 tablespoon milk

Steps:

  • With your mixer, combine flour, salt, sugar, and yeast. Then add in 1 cup warm water and mix until well combined. You could also do this by hand or use a food processor. Knead the dough until it is smooth.
  • Sprinkle flour in the bottom of a bowl. Place the dough in the bowl and cover it. Allow it to sit for about 30 minutes to rise.
  • Knead the dough for 30 seconds to 1 minute. Divide the dough into 4 equal sections. Form each section into strips about 8 inches long and about 1 inch wide. Cut each strip into 8 pieces so that you have 32 pretzel bites.
  • Pre-heat your oven to 475 degrees.
  • In a shallow dish combine one cup of very hot water with 2 tablespoons baking soda. Whisk well to combine.
  • Place pretzel bites in the water/baking soda mixture and allow to site for one minute. Then flip the pretzel bites and allow to sit in the mixture for one minute longer. Arrange the pretzels on a greased baking sheet.
  • Allow the pretzel bites to rest for about 5 minutes, then place them in the oven for 10-11 minutes, or until the pretzel bites are nice and brown.
  • While the pretzel bites are baking, melt 4 tablespoons of butter (1 minute in the microwave does the trick) and in a small bowl combine 1/2 granulated sugar with 1 teaspoon cinnamon. Dip each pretzel bite in butter, then in the cinnamon sugar mixture.
  • With your mixture, cream together cream cheese and butter. Add in confectioners sugar and mix until smooth. Add in 1-2 tablespoons of milk depending on your desired consistency.
  • Serve pretzel bites with cream cheese frosting on the side.
