THE BEST CHOCOLATE MOUSSE

The Best Chocolate Mousse image

The best chocolate mousse must be perfect. It should taste rich, indulgent and not too sweet, with a texture that is both light-and-airy and silky-and-smooth. After many attempts we nailed it and made a dessert that not only exceeded our standards, it's also quite easy to pull off. Close your eyes and take a bite -- you'll be transported to a 4-star French restaurant.

Time 1h15m

Yield 4 servings

Number Of Ingredients 9

1 3/4 cups cold heavy cream
1 large egg
2 large egg yolks
1/4 cup granulated sugar
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
4 ounces good-quality bittersweet chocolate, chopped
4 ounces good-quality semisweet chocolate, chopped

Steps:

  • Whip 1 cup of the heavy cream to soft peaks in a medium bowl (see Cook's Note). Set aside.
  • Add the egg, egg yolks, sugar, espresso powder, vanilla extract, salt and 1 tablespoon water to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has almost doubled in volume, about 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula, if necessary. Remove from the heat and continue whisking until cooled, about 2 minutes.
  • Put the chopped chocolate in a medium heatproof bowl and set over the saucepan of gently simmering water (do not allow the bowl to touch the water). Stir occasionally with a rubber spatula until the chocolate is melted and smooth. Remove from the heat and gently stir for about 3 minutes to cool slightly.
  • Whisk the egg mixture into the melted chocolate in 3 additions until combined. (The mixture may get very thick.) Using a rubber spatula, gently fold the whipped cream into the chocolate mixture in 3 additions until it is fully incorporated. It is important that the chocolate mixture is not warm to ensure that it combines smoothly with the whipped cream without seizing up.
  • Divide the chocolate mousse among four 4-ounce ramekins and chill until firm, about 1 hour.
  • Whip the remaining 3/4 cup cold heavy cream to stiff peaks. Top each chocolate mousse with whipped cream and serve. (For a softer texture, allow the ramekins to sit at room temperature while you whip the cream.)

Time 20m

Yield 6 to 8 servings

Number Of Ingredients 2

1 quart heavy or whipping cream
14 ounces bittersweet chocolate, melted

Steps:

  • Whip the cream to soft peaks and add about 1/3 of the melted chocolate. Fold gently with a rubber spatula. Mix the remaining chocolate into the whipped cream. Mix only until combined, as you will deflate the cream if you overmix. Place the mousse in a large pastry bag and pipe into decorative serving cups.

1-ounce sugar
Sweetened whipped cream, for garnish, optional

  • Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.
  • Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. CHOCOLATE MOUSSE

Time 1h25m

Number Of Ingredients 8

6 ounces semisweet, bittersweet chocolate, or a mixture, finely chopped
1 cup heavy cream
1/2 teaspoon instant espresso powder, optional
2 large egg yolks
1 large egg
1/3 cup sugar
Pinch fine salt
Unsweetened cocoa powder, for dusting, optional

Steps:

  • 1. Bring a saucepan filled with 1-inch or so of water to a slow simmer. Put the chocolate in a medium heatproof bowl and set the bowl over, but not touching the water. Stir the chocolate occasionally until melted and smooth. Alternatively, put the chocolate in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue to heat until completely melted, about 1 to 2 minutes more.
  • 2. Meanwhile, whip the cream in a medium bowl until it holds soft peaks. Take care not to over whip the cream or the mousse will be dense. Cover and refrigerate while you cook the eggs. Whisk 2 teaspoons warm water and espresso powder together in a small bowl, if using.
  • 3. Put the egg and yolks in another heatproof bowl that also sets over the simmering water in the saucepan. Beat the eggs, sugar, and pinch of salt until foamy and light, about 30 seconds. Set the bowl over the water and whip with an electric mixer or whisk, moving in a circular motion around the bowl, until the eggs are fluffy, thick, and warm to the touch, 2 to 3 minutes. Remove from the heat and continue beating on high speed until thick ribbons fall from the beater when lifted over the bowl and the mixture has cooled slightly, about 3 minutes more. Fold in the espresso. (The mixture will seem loose at this point - that is ok.)
  • 4. Fold about a quarter of the chocolate into the eggs to lighten it, then fold in the rest of the chocolate. Finally, fold the whipped cream into the chocolate base to make a smooth light mousse. Pour the mousse into 4 serving dishes or wine glasses. Cover and refrigerate until set, about 1 hour. If desired, dust the tops with cocoa powder before serving.

Scatter with chocolate curls, if you like, just before serving.

THE ULTIMATE MAKEOVER: CHOCOLATE MOUSSE

The ultimate makeover: Chocolate mousse image

This sophisticated dessert is great for a dinner party, or for a lighter family pud use ordinary dark chocolate with less cocoa solids

Provided by Angela Nilsen

Categories     Dessert, Dinner

Time 20m

Number Of Ingredients 8

85g dark chocolate , 70% (I used Green & Black's)
1 tbsp cocoa powder , plus extra for dusting
½ tsp coffee granules
½ tsp vanilla extract
2 egg whites
1 tbsp golden caster sugar
50g full-fat Greek yogurt
handful raspberries , to decorate

Steps:

  • Chop the chocolate very finely and put it into a large bowl that will fit over a pan of simmering water. Mix the cocoa, coffee and vanilla with 2 tbsp cold water, and pour over the chocolate. Place the bowl over the gently simmering water, give it all a stir, then remove from the heat. Leave with the bowl of chocolate still over the water, stirring occasionally to check when melted.
  • Stir the melted chocolate, it will be quite thick. Stir in 2 tbsp boiling water and the chocolate will immediately thin down and become silky smooth. Leave to cool slightly.
  • Whisk the egg whites to fairly soft peaks, then whisk in the sugar until thick and glossy. Beat the yogurt into the cooled chocolate. Fold about one-third of the egg whites into the chocolate mix using a large metal spoon, then very gently fold in the rest of the whites until they are evenly mixed in - being careful not to over-mix or you will lose the volume of the mousse. Spoon into 4 small cups or (125-150ml) ramekins and chill for a couple of hours, or overnight.
  • Place each mousse on a saucer or small plate. Top with a few raspberries, then dust with a little cocoa powder. Will keep for up to 2 days in the fridge.
