CHEWY GRANOLA BARS
Extra chewy granola bars. You can make them your own by picking different ingredients to add in! Try using any combination of miniature chocolate chips, sunflower seeds, raisins, chopped dried fruits, candy-coated chocolate pieces, chopped nuts, etc.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
- In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
- Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Stir peanut butter and melted butter together in a bowl until smooth. Add brown sugar, honey, corn syrup, vanilla extract, cinnamon, and salt; stir. Mix applesauce into peanut butter mixture.
- Combine oats and flour in a bowl; toss to coat oats with flour. Stir peanuts and raisins into oat mixture. Pour peanut butter mixture over the oat mixture; stir to coat completely. Spread mixture into the prepared baking dish.
- Bake in the preheated oven for 10 minutes. Sprinkle chocolate chips over the top and continue baking until chocolate melts and edges begin to brown, about 5 minutes more. Spread melted chocolate chips with the back of a spoon or a rubber spatula to coat the top. Cool completely before cutting into bars.

- Preheat oven to 350°. Cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, honey and vanilla. Whisk together flour, cinnamon, baking powder and salt; gradually beat into creamed mixture. Stir in oats, Rice Krispies, nuts and, if desired, raisins or chocolate chips. , Press into a greased 13x9-in. pan. Bake until light brown, 25-30 minutes. Cool on a wire rack. Cut into bars.

I like these granola bars because they are chewy...not cakelike, not crunchy....nice and chewy. I've tried others, but my kids always ask for these. The recipe is from TOH.

Steps:
- In a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
- In a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
- Microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
- Quicky stir the dry ingredients in to the marshmallow mixture. You'll have to work quickly as the mix will get gooey fast.
- Spread into a greased 13-in. X 9-in. X 2-in. baking pan. To flatten the granola bars, I spray the BOTTOM of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
- Bake at 350 degrees F. for 15-20 minutes.
- Cool and cut into 24 bars.

SOFT & CHEWY GRANOLA BARS
This recipe is from my daughter's Home Ec class. She brought a sample home after they made them. They are nice and soft, a little chewy, and very tasty. I would think you should be able to change it up to suit your family. Try craisins with white chocolate chips, nuts, raisins, other dried fruits. Don't add too much or your granola bars will not have enough "glue" to hold together! They will stay soft for a few days if well wrapped.

- Preheat oven to 325 degrees. Butter a 9-by-13-inch baking pan; line bottom with parchment paper, and butter parchment. Set aside. In a large bowl, mix together the oats, brown sugar, flour, and baking soda. Stir in the pecans, raisins, chocolate chips, sunflower seeds, and wheat germ, and set aside.
- Place apricots in the bowl of a food processor fitted with the metal blade, and process until smooth, about 60 seconds. Add the butter, and process until smooth. With the machine running, add honey through the feed tube, processing until smooth. Transfer apricot mixture to bowl with oat mixture, and fold until thoroughly combined.
- Transfer mixture to prepared pan. Using a rubber spatula, press it firmly into bottom and edges of pan, and level the surface. Place in oven, and bake until golden, about 30 minutes. Transfer pan to a wire rack, and let cool completely.
- Invert onto a baking sheet, and lift to remove pan; peel off parchment paper. Reinvert onto a cutting board, and cut into 24 bars, each about 1 1/4 by 3 inches. Bars can be wrapped in waxed paper and stored in airtight containers at room temperature up to 2 weeks.

- Prepare a nine inch square baking pan by lining it with aluminum foil, dull side up. Give the foil a light coating of non-stick cooking spray and set aside.
- In a large bowl, combine the rolled oats, chopped almonds, chopped cranberries, coconut, pepitas, and flax seed and stir well to evenly mix it all up.
- In a small saucepan set over medium heat, combine the sugar, honey, and butter. Cook, stirring occasionally, until the butter melts and the mixture starts to bubble. Once it has come to a light boil, cook the mixture for one to two minutes to dissolve the sugar. Remove the pot from the heat and stir in the vanilla and kosher salt. Pour this over the oat mixture and stir very well to combine.
- Scrape the mixture into your prepared pan and press it down into an even layer. To do this, I like to use a piece of parchment paper to lay over the top of the granola bar mixture and press firmly with my hands of a second nine inch square pan. Scatter the top of the granola bars with the finely chopped dark chocolate and give it another good press.
