APPLE BROWNIES
Loaded with fall flavor, apple brownies mix up as quickly as the chocolate version -- just the thing for a school bake sale. Any sweet, firm variety of apple will work in this recipe, which was developed by John Bunker's friend Amy Traverso. Recipe adapted from " The Apple Lover's Cookbook," by Amy Traverso.

Steps:
- Preheat oven to 350 degrees with rack in center position. Generously butter an 8-by-11-inch baking dish.
- Whisk together flour, cinnamon, baking powder, salt, and baking soda in a medium bowl. In a separate bowl, beat together butter, sugar, and egg with a mixer until pale, about 2 minutes. Add walnuts and apples, and stir by hand until combined. Add flour mixture, and stir until combined, about 30 seconds more.
- Spread batter in pan, and bake until golden brown and slightly firm, about 40 minutes. Let cool on a wire rack 30 minutes, then cut into 12 bars.
SOFT APPLE BROWNIES WITH CHOCOLATE CHIPS
A great chocolate brownie is a wonderful thing, and an apple brownie is a delicious twist on a classic! In this recipe, the chewy soft brownie is enhanced with melty chocolate chips, tender apple bites, and hits of cinnamon and nutmeg to create an irresistible treat to go with tea or coffee, as well as for your kid (or adult) lunchbox!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan and dust with flour.
- Place apples in a bowl and sprinkle with vinegar. Set aside.
- Whisk white sugar, brown sugar, eggs, and vanilla extract together in a large bowl until well combined and pale brown. Add melted butter and whisk until smooth. Add flour, cocoa powder, baking powder, cinnamon, nutmeg, and salt. Whisk until brownie batter is well combined.
- Sprinkle 2 tablespoons flour over apples in the bowl and toss to coat. Fold floured apples and chocolate chips into the brownie batter; batter will be thick. Spread batter evenly into the prepared pan.
- Bake in the preheated oven until top is no longer shiny and a toothpick inserted in the center comes out clean, about 30 minutes, but check after 25 minutes and do not overbake.

APPLE CINNAMON BLONDIES
A blondie is a vanilla and brown sugar-flavored brownie, a heavenly confection that comes together with the most basic of pantry staples;I can almost guarantee you've got it covered in the pantry right now. If you have chocolate on hand then you can make the classic chocolate chip blondie; but in the fall, I suggest you try this apple-cinnamon version. It's a cross between a dense, chewy blondie and a dainty, fragrant apple cake.

- Preheat the oven to 350 degrees F. Butter a 13-by-9-inch baking pan. Line with parchment paper, leaving a slight overhang.
- In a medium bowl, whisk together the flour, cinnamon, baking powder and salt. In a large bowl, beat the sugars and butter with an electric mixer on medium until light and fluffy, about 3 minutes. Add the eggs and vanilla and beat to combine. Add the flour mixture to the butter mixture and beat to combine. Fold in the apples and walnuts.
- Transfer the batter to the prepared pan and spread it out into an even layer. Bake until a toothpick inserted into the center comes out with moist crumbs attached, 20 to 25 minutes. Transfer the pan to a rack to cool completely. Then lift the bars out using the parchment overhang and transfer to a cutting board. Cut into 24 pieces.

- In a large heavy saucepan, combine the sugar, butter and water; bring to a boil, stirring constantly. Remove from the heat; stir in 2 cups chocolate chips until melted. Cool slightly. , In a large bowl, beat eggs and vanilla; stir in chocolate mixture. In another bowl, mix the flour, baking soda and salt; gradually add to chocolate mixture, mixing well. Stir in remaining chocolate chips. , Spread into a greased 13-in. x 9-in. baking pan. Bake at 325° for 35-40 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., Sprinkle with confectioners' sugar. Cut into bars. Store in an airtight container.

This was my Mom's recipe. Easy and quick to make. Apples and walnuts are packed into a cinnamon spiced blonde brownie. Always a hit when I bring it to parties. Very moist and great to make in the fall when apples are plentiful.

- Heat applesauce, sugar, margarine, and chocolate chips over low-medium heat in saucepan until partly melted. Do NOT heat until smooth. There should still be visible chocolate chips in batter. In separate mixing bowl, mix flour, baking soda, salt, and flour. Add eggs and vanilla to mixture and blend. Add cooled chocolate mixture and mix. Pour batter into greased 9.5 inch pie pan or comparable. Bake 350 degrees for 25-30 minutes or until done.
