1-Hour Soft and Buttery Dinner Rolls image

My favorite 1-Hour Soft and Buttery Dinner Rolls recipe is easy to make by hand or with a stand mixer and absolutely heavenly served warm out of the oven.

Number Of Ingredients 8

1 cup water
2 tablespoons melted butter
1/2 cup milk
2 tablespoons honey
1 tablespoon active-dry yeast*
3 1/2 to 4 cups all-purpose flour
1 teaspoon fine sea salt
extra melted butter, for brushing on top

Steps:

  • Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
  • In a microwave-safe bowl (or saucepan, see below), stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F. It will be warm but not hot to the touch. (*Alternately, you can heat the mixture over medium-low heat in a saucepan until it reaches 110°F.)
  • Pour the liquid mixture into the large bowl of a stand mixer. Sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
  • Add in 3 1/2 cups of flour (not all of the flour) and the salt.
  • (See alternate instructions in the notes below for how to knead the dough by hand.) Use the dough-hook to mix in the dry ingredients on medium-low speed until combined. If the dough is sticking to the sides of the bowl, add in 1/4 cup more flour at a time until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch. (Only use up to 4 cups of flour total.) Continue mixing on low speed for 4-5 minutes until the dough is smooth. Then form the dough into a ball with your hands and transfer it to a greased bowl.
  • Cover the bowl with a damp towel or paper towel, and let it rise briefly for 15 minutes.
  • Gently punch the dough down and divide into 15 equal-sized pieces. Form each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15-20 minutes.
  • Uncover and bake for 15 minutes, or until the rolls are lightly golden brown on top and cooked through.
  • Transfer the baking dish to a wire cooling rack and brush the tops of the rolls with melted butter.
  • Then serve warm and enjoy!

1/2 cup whole milk
1 (1/4-ounce) envelope active dry yeast (about 2 1/4 teaspoons)
2 teaspoons kosher salt
2 1/2 cups all-purpose flour, plus more
1 tablespoon honey
4 tablespoons (1/2 stick) unsalted butter, softened, cut into pieces, plus 2 tablespoons melted
Olive oil (for bowl)
Ingredients for variations (see below)

Steps:

  • Heat milk in a small saucepan over low until warm to the touch (an instant-read thermometer should register 120°F-130°F). Transfer to a glass measuring cup. Add yeast and whisk to combine. Let sit until yeast starts to foam, 5-10 minutes.
  • Beat salt and 2 1/2 cups flour in the bowl of a stand mixer fitted with the dough hook on low speed until combined, about 30 seconds.
  • Add honey and 1/2 cup warm water to milk mixture and mix with a fork to dissolve. Add milk mixture to dry ingredients. Beat on low speed, scraping down sides of bowl if needed, until incorporated. Add 4 Tbsp. softened butter; increase speed to medium-high and continue to beat, adding more flour as needed (1/4-1/2 cup depending on variations), until dough is supple and a little tacky but not sticky, about 10 minutes.
  • (If you don't have a stand mixer, mix salt and flour in a large bowl, then add milk mixture. Mix with a wooden spoon until dough comes together. Turn out onto a work surface and knead in pieces of butter one at a time. Continue to knead, adding flour as needed, until dough is soft and tacky, about 10 minutes.)
  • Transfer dough to a large oiled bowl and cover with plastic wrap. Let rise at room temperature until doubled in size, 90-105 minutes.
  • Turn dough out onto a work surface (don't flour work surface unless dough seems really sticky). Divide dough in half, then continue to divide in half until you get 16 equal pieces (each should weigh about 1.5 oz.). Roll each piece into a ball with your dominant hand (counterclockwise if you're right-handed, clockwise if you're left-handed), keeping outside edge of your hand pressed against work surface and gently pushing base of dough inward. Place rolls a few inches apart on 2 parchment-lined rimmed baking sheets.
  • Cover loosely with plastic. Let rise at room temperature until puffy and dough springs back slowly when poked gently, filling indentation about halfway, 60-90 minutes.
  • Arrange racks in upper and lower thirds of oven; preheat oven to 400°F. Score top of each roll with a sharp paring knife or serrated knife. Brush tops with 2 Tbsp. melted butter. Bake rolls, rotating sheets halfway through, until golden brown, about 25 minutes. Let cool slightly before serving.
  • Variations:
  • Shallot-Cheddar: Add 1/4 cup finely chopped shallots and 1/2 cup shredded cheddar cheese to dry ingredients. Sprinkle 1/4 cup shredded cheddar cheese on top after brushing with butter.
  • Olive-Thyme: Add 1 Tbsp. chopped thyme and 1/2 cup coarsely chopped mixed olives to dry ingredients. Dip tops of rolls in panko (Japanese breadcrumbs) after brushing with butter.
  • Garlic-Dill: Add 1 Tbsp. finely chopped garlic and 1/4 cup chopped dill to dry ingredients.
  • Everything Bagel: Add 1/2 cup sunflower seeds to dry ingredients. Mix 1/2 tsp. kosher salt and 1/2 tsp. each of any and all of the following, whatever's in your cupboard: sesame seeds, poppy seeds, granulated onion, granulated garlic, caraway seeds, fennel seeds. Dip rolls in salt-seed mix after brushing with butter.
  • Black Pepper-Rosemary: Add 1 1/2 tsp. chopped rosemary and 1 1/2 tsp. freshly ground black pepper to dry ingredients. Top rolls with extra black pepper after brushing with butter.

1 cup (240ml) whole milk, warmed to about 110°F
2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 Tablespoons granulated sugar, divided
1 large egg
1/4 cup (60g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour*
optional topping: 2 Tablespoons melted unsalted butter mixed with 1 Tablespoon honey

Steps:

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
  • Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
  • Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
  • When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
  • Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
  • Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
  • Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

2 tablespoons extra virgin olive oil
1 tablespoon sugar
2 1/4 teaspoons fast rise yeast (1 package) or 2 1/4 teaspoons instant yeast (1 package)
3 cups all-purpose flour
1/2 cup instant potato flakes
salt
1 egg, lightly beaten
1 cup dried cranberries
1 cup pecans, toasted and chopped
1 tablespoon olive, brown
3/4 cup pitted kalama olive, chopped and patted dry
2 tablespoons minced fresh rosemary

Steps:

  • Preheat oven to 200°F When oven reaches 200°F, turn it off.
  • Line baking sheet with parchment. Grease large bowl.
  • Whisk water, oil, sugar, and yeast in liquid measuring cup until yeast dissolves.
  • Mix flour, potato flakes, and salt in large bowl. Make well in flour, then add water mixture to well. Stir until dough becomes shaggy and difficult to stir. Turn out onto floured work surface and knead until dough is smooth and forms cohesive ball, about 10 minutes.
  • Cover with plastic wrap and place in turned-off oven until dough has doubled in size, about 45 minutes.
  • Punch down dough on lightly floured work surface. Divide dough into quarters and cut each quarter into 3 equal pieces. On clean surface, form each piece into rough ball by pinching and pulling the edges unders so that the top is smooth. Then cup each round with your palm and move in a circular motion on an unfloured surface to shape a smooth ball. Transfer to prepared baking sheet. Cover loosely with plastic wrap and return to turned-off oven until doubled in size, about 20 minutes. (Or refrigerate rolls for up to 24 hours.).
  • Remove rolls from oven and discard plastic wrap. Heat oven to 400°F Brush rolls with egg and sprinkle lightly with salt. Bake until golden brown, about 15 minutes, rotating sheet halfway through cooking. Cool rolls on sheet 10 minutes. Serve.
  • Variation - Cranberry Pecan Rolls:.
  • Add cranberries and pecans when mix in flour.
  • Variation - Rosemary Olive Rolls:.
  • Reduce salt to 1 teaspoon. Add 1 T olive brine along with water. Add 3/4 cup olives, and 2 T minced fresh rosemary along with flour.
