PROPER BAKED BEANS
Baked beans on toast is a British staple, but you can very easily make it something special with a side of fresh soda bread. Don't be put off by the long cooking time - it's just a few minutes of effort and the rest of the time it takes care of itself.

Steps:
- Drain the white beans and put them in a large pan. Cover with water and bring to the boil. Drain again and return to the pan. Cover with water and cook for approximately one hour, or until just soft. Remove from the heat and drain.
- In a large saucepan, heat the rapeseed oil over a medium heat. Add the streaky bacon and fry until crisp. Add the onion and garlic to the pan and cook until the onion is soft. Add the tinned tomatoes, tomato purée, sugar, vinegar and 500ml/18fl oz water. Bring to the boil and then add the soaked beans. Reduce the heat to low and cook for 1½-2 hours, or until you have a thick sauce with soft tender beans
- Meanwhile, make the soda bread. Preheat the oven to 200C/400F/Gas 6.
- Mix all the ingredients together and form into a loaf shape of your choice.
- Place on a baking tray, dust with flour and bake in the oven for 45-50 minutes, or until the loaf is golden-brown and sounds hollow when tapped.
- Remove from the oven and leave to cool. Slice and toast when needed.
- Season the beans with salt and pepper and serve with slices of toasted soda bread.
SODA BAKED BEANS
This recipe can also be done in a crockpot, or it can be cooked in the oven! Don't use the sugar-free soda for this. The fresh garlic can be replaced with 1 teaspoon garlic powder if desired, this is best if made a day ahead to blend the flavors, refrigerate then warm over low heat on top of the stove.

Steps:
- In a large pot heat oil over medium heat; add in the onions, garlic, jalapeno pepper, curry powder and cayenne; saute for about 4 minutes.
- Add in the chopped smoked sausage; saute for about 2-3 minutes.
- Add in all the remaining ingredients; bring to a boil, stirring until the brown sugar dissolves.
- Reduce the heat to medium-low and simmer uncovered until thickened, stirring occasionally for about 1 hour (or you can simmer for more time if desired).

OLD FASHIONED BAKED BEANS
Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

Steps:
- Soak beans overnight, well covered with cold water.
- Pour off soaking water and pick over beans to remove any bad ones, or debris.
- Put beans in a pot.
- Cover with fresh cold water and add 1 tsp. baking soda.
- Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
- Cut onion in quarters and put in bottom of a bean crock or large casserole.
- Add the partially cooked beans.
- Put cut up salt pork on top.
- (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
- Pour over the beans.
- Add more boiling water, if needed, to come just to the top of the beans.
- Also, if needed during baking tme, add more boiling water.
- Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.
