Since this tangy salad keeps well, I make it a day ahead for my Christmas menu. It's also a great choice to take to a holiday potluck - even people who aren't fond of cranberries think it's yummy. I got the recipe from a friend at church who likes to cook and bake as much as I do. -Betty Claycomb, Alverton, Pennsylvania

1 package (6 ounces) cherry gelatin
1-1/2 cups boiling water
1 can (20 ounces) crushed pineapple, undrained
1 can (14 ounces) whole-berry cranberry sauce
1-1/2 cups seedless red grapes, halved
1/4 cup chopped pecans

Steps:

  • In a large bowl, dissolve gelatin in water. Stir in pineapple and cranberry sauce. Refrigerate for 30 minutes. Stir in grapes and pecans. Pour into a 2-qt. serving bowl. Refrigerate until firm.

2 cups boiling water
2 boxes (4-serving size each) Jell-O™ lemon-flavored gelatin
2 tubs (10 oz each) frozen cranberry-orange sauce, thawed
1 cup fresh raspberries

Steps:

  • Lightly brush 6 1/2-cup ring mold or 1 1/2-quart decorative bowl with vegetable oil.
  • In large bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in cranberry-orange sauce. Fold in raspberries. Pour into mold or bowl. Cover and refrigerate at least 6 hours but no longer than 24 hours.
  • To unmold salad from ring mold, dip mold into hot water for 10 seconds. Place serving plate upside down onto mold; turn plate and mold over, then remove mold. Refrigerate salad until serving. If using decorative bowl, do not unmold; scoop salad from bowl to serve.

2 cups boiling water
1 (16 ounce) can jellied cranberry sauce
1 (20 ounce) can crushed pineapple, drained
½ cup chopped pecans

Steps:

  • Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
  • Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

  • In a large saucepan, cook the gelatin and cranberry sauce over medium heat until gelatin is dissolved. Remove from the heat; stir in the pineapple and ginger ale until combined. , Pour into a 1-1/2-qt. serving bowl. Chill until set, stirring after 1-1/2 hours.

2 cups fresh cranberries
1 (15 ounce) can mandarin oranges, drained and chopped
1 cup pecans
1 (15 ounce) can crushed pineapple, drained
2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
¾ cup white sugar
1 cup boiling water
1 cup cold water

Steps:

  • Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
  • Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.

1 (16 1/2 ounce) can pitted dark sweet cherries, drained
10 1/2 ounces crushed pineapple in juice
1 (6 ounce) package cherry gelatin
2 cups boiling water
1 cup chopped pecans (optional)

Steps:

  • In a medium saucepan over low heat, melt the cranberry sauce.
  • Cut the cherries into pieces and add them to the melted sauce.
  • Stir in the pineapple with its juice.
  • Remove mixture from heat.
  • In a medium bowl pour the boiling water over the gelatin and stir until all the gelatin has dissolved.
  • Add the gelatin mixture to the cranberry mixture and stir.
  • Stir in the optional nuts.
  • Pour into a 9x13 inch pan and chill until set.

1 1/2 cups boiling water
2 (3 ounce) packages cranberry-raspberry gelatin
1 (12 ounce) can seltzer water
1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
3/4 cup sour cream
1 tablespoon sugar
1 (16 ounce) can whole berry cranberry sauce
1 celery rib, chopped, 1/2 cup
1/2 cup chopped walnuts
additional sour cream, and (optional)
fresh cranberries (optional)

Steps:

  • Coat 1-1/2 quart mold with cooking spray.
  • In bowl pour boiling water over cranberry gelatin mix; stir until dissolved. Add seltzer. Transfer 1 cup mixture to separate bowl; reserve. Cover remaining mixture; refrigerate.
  • Sprinkle unflavored gelatin over 2 T. cold water; let stand 1 minute. Microwave on High until dissolved; stir into reserved 1 cup cranberry gelatin. Whisk in sour cream. Pour in mold.
  • Refrigerate until just set, 2 hours. Uncover refrigerated plain cranberry gelatin mixture. Stir in cranberry sauce, celery and walnuts. Spoon into mold. Refrigerate until firm, 2 hours.
  • Run knife around edge of mold to loosen; place serving platter over mold and invert to release. Garnish as desired.

1 can minced pineapple
1 package sugar-free orange gelatin
1 package sugar-free raspberry gelatin
1 envelope knox unflavored gelatin
1/4 cup chopped celery
1/4 cup chopped pecans

Steps:

  • Mix the 3 gelatins with 3 cups boiling water.
  • Chill in the refrigerator until the consistency of egg whites.
  • Add the cranberries, pineapple (drained), celery, and pecans.
  • Stir until well mixed.
  • Refrigerate until Jell-O consistency.
