Before serving this classic Mexican cocktail, be sure to add a salt rim to your glass - but switch things up! We're sharing three flavored salts, so you can choose your favorite or try them all.

Lime wedges, for the glasses and garnish
Coarse salt or flavored salt, for the glasses (recipe follows)
12 ounces silver tequila
6 ounces fresh lime juice
3 ounces orange liqueur (such as Cointreau)
3 tablespoons superfine sugar
3 oranges
1/8 teaspoon smoked paprika
Kosher salt
4 limes
Kosher salt
Large pinch cayenne pepper
1 tablespoon sugar
2 tablespoons dried hibiscus flowers
3 tablespoons kosher salt

Steps:

  • Moisten the rim of 6 rocks glasses with a lime wedge or water, then dip each glass in coarse salt.
  • In a pitcher, combine the tequila, lime juice, orange liqueur and sugar and stir until the sugar dissolves. Add ice just before serving. Divide among the prepared glasses.
  • Grate the orange zest onto a microwave-safe paper towel-lined plate. Microwave until the zest is dry, tossing every 30 seconds, about 1 1/2 minutes.
  • Transfer the dried zest to a spice grinder along with the smoked paprika and 1 teaspoon kosher salt. Process until combined, then mix with 1 1/2 tablespoons more kosher salt.
  • Grate the lime zest onto a microwave-safe paper towel-lined plate. Microwave until the zest is dry, tossing every 30 seconds, about 1 1/2 minutes.
  • Transfer the dried zest to a spice grinder along with 1 teaspoon kosher salt. Process until combined, then mix with the cayenne, sugar and 1 more tablespoon salt.
  • Using a spice grinder, process the hibiscus flowers until powdery, then mix with the kosher salt.

Salt, for garnish
3 cups tequila
2 cups fresh lime juice, plus lime slices, for garnish
1 1/2 cups orange liqueur
1/4 cup agave syrup

Steps:

  • For the rim: Moisten the rim of the glasses with lime wedges and dip in the salt.
  • For the margarita: Combine the tequila, lime juice, orange liqueur and agave syrup in a large pitcher. Stir vigorously to combine. Pour over ice in the salt-rimmed glasses, garnish with a slice of lime and serve immediately.

Basic Margarita Recipe
Assorted fruits: Try mango, pineapple, strawberries, blackberries, blueberries, raspberries, or peaches.
Assorted herbs: Basil, cilantro, mint, lavender, and thyme work well.
Sliced jalapenos and/or cucumbers
Assorted salts and sugars to rim glasses
Fresh limes cut into wedges for garnish

Steps:

  • Add desired fruits and/or herbs to cocktail shaker and gently muddle.
  • Add ice and Basic Margarita ingredients. Shake well.
  • Rub the rim of glass with a lime, then dip into desired sugar or salt.
  • Strain margarita into the glass and garmish with lime wedge.

I love a good margarita and this one is quite tasty. A very relaxing drink. A bartender told me what the basic ingredients are in one. After a few tries I finally came up with the right amounts of the ingredients to suit my taste You can't taste the tequila in it, so be careful. A beer afterwards or a second margarita may make the drink sneak up on you, Hence the name. You may add more tequila for a stronger drink.

1 tablespoon Rose's lime juice (appx) or 1 lime, juice of
1 tablespoon kosher salt (appx) or 1 tablespoon margarita salt (appx)
ice cube
lime wedge (optional)
1 1/2 ounces gold tequila (or any kind)
1 1/2 ounces triple sec
1 1/2 ounces prepared sweet-and-sour mix
1 1/2 ounces Rose's lime juice
4 fluid ounces margarita mix

Steps:

  • Pour the 1 tablespoon of lime juice onto a saucer. Spread it around the saucer.
  • Pour the tablespoon of salt onto another saucer.
  • Dip a glass into the lime juice and then in the salt. You can skip this step if you don't want salt on the rim.
  • Place ice cubes into the glass
  • Pour the rest of the ingredients into the glass and stir well.
  • You can also put the ingredients in a blender and blend well for a frozen/blended margarita.
  • Garnish with a lime wedge for a nice little touch!

This is a wonderful recipe for Margaritas on the Rocks by the pitcher-full! It is best to prepare the lime-lemon juice and zests mixture before hand to allow them to meld appropriately -- Cooking time reflects refrigeration time. I discovered this in Cook's Illustrated Magazine -- just in time for summer! I have altered the ingredients to suit my personal taste. Enjoy!

4 teaspoons grated fresh lime zest
1/2 cup fresh lime juice (from 2-3 limes)
4 teaspoons grated fresh lemon zest
1/2 cup fresh lemon juice (from 2-3 lemons)
1/3 cup superfine sugar (more or less to suit your personal taste)
1 pinch table salt
crushed ice
1 cup tequila (Preferably Patron)
1 cup triple sec

Steps:

  • Combine lime zest and juice, lemon zest and juice sugar, and salt in a large measuring cup; cover with plastic wrap and refrigerate (preferably overnight).
  • Divide 1 cup crushed ice between 4 to 6 margarita glasses.
  • Strain juice mixture into 1 quart pitcher or cocktail shaker.
  • Add Patron tequila, Triple Sec; stir or shake to combine thoroughly.
  • Pour over ice; serve immediately and enjoy : ).
