STRAWBERRIES AND JALAPENOS



Strawberries and Jalapenos image

Number Of Ingredients 5

1 pound hulled and quartered strawberries
4 tablespoons granulated sugar
2 finely diced jalapenos, seeds and stems removed
1/2 tablespoon lemon zest plus 2 to 4 tablespoons lemon juice
Splash of orange liqueur, optional

Steps:

  • Toss strawberries in sugar and refrigerate, covered, for at least 30 minutes but preferably overnight.
  • Soak jalapenos in 1 cup water with 2 tablespoons lemon juice for 30 minutes (15 minutes if you want more bite); drain.
  • Add jalapenos and remaining 2 tablespoons lemon juice or the optional orange liqueur to the strawberries, toss and let stand 15 minutes.
  • Toss in lemon zest right before serving. Spoon over ice cream and serve.
  • Keep refrigerated in an airtight container (but allow to come closer to room temperature before serving).

JALAPENO CRANBERRY SAUCE

1 cup granulated sugar, plus more if needed
1 tablespoon zested fresh ginger
1 to 2 jalapenos, seeds and ribs removed, diced
Zest and juice of 1 large orange (1/2 cup of juice is necessary)
One 12-ounce bag fresh cranberries
Zest from 1 lemon
1 tablespoon lemon juice
Kosher salt

Steps:

  • In a medium saucepan, put the sugar, ginger, jalapenos, orange zest and orange juice. Simmer for 2 minutes. Add the cranberries and set over medium heat for 20 minutes, stirring frequently. Add water if the mixture appears too dry. Add in the lemon zest and juice and season with salt or a bit more sugar. Let cool completely and serve.

1/4 cup finely chopped onions

Steps:

  • Blend dressing, 1/4 cup cilantro and half the peppers in blender until smooth.
  • Chop remaining cilantro; place in medium bowl.
  • Add fruit, onions, remaining peppers and dressing mixture; mix lightly.

2 lbs fresh tuna steaks, sushi grade
4 tablespoons cajun seasoning
3 ounces raspberry preserves
1 ounce jalapeno juice
1 small jalapeno, minced

Steps:

  • Lightly dust both sides of tuna steaks with Cajun seasoning.
  • Grill for 1 minute on each side (rare).
  • Melt preserves in microwave until liquid, add jalapenos and juice and stir.
  • Drizzle the sauce over plate, place tuna on top of, and add more drizzle on the fish DO NOT GLAZE THE FISH if you like more sauce add it in a dipping dish.
  • I serve with Jasmine rice and fresh steamed broccoli.

I found this on the net while looking for a similar recipe to broil salmon for another Zaar member. Although it was originally listed for wings - I think it could be used for other meats as well.

Number Of Ingredients 6

3 jalapenos, seeded and finely chopped
1 1/2 cups sugar
1 quart hoisin sauce
2 cups water
2 small limes, Juice of
2 tablespoons garlic, Minced

Steps:

  • In a food processor, puree the jalapenos with the sugar.
  • Add the hoisin sauce, water, and lime juice.
  • Add the minced garlic.
  • Puree until fully incorporated.
  • Pour into a 2 quart container.
  • Allow the sauce to sit for 1 hour to allow the sugar to dissolve, stirring occasionally.
  • If using for wings, place frissee or other lettuce/garnish on a plate.
  • Arrange the cooked wings on top of the lettuce.
  • Drizzle the sauce over the wings and lettuce.
  • Garnish with parsley and chopped peanuts.
  • For salmon or other meats, drizzle sauce and bake/broil as usual for meat chosen.
  • When cooked, baste or drizzle again with small amount of sauce, leaving a small amount for dipping.
  • Enjoy.

This not so healthy, but oh so good, sauce is great with almost anything! Especially good with fried foods, but also works with tortilla chips (hmmmm... those are fried, too, huh?) and vegetables. It has a kick, but you could omit one of the jalapenos to tone it down.

2 cups whipping cream
2 jalapenos, minced (from a jar, not fresh)
1 cup light sour cream
1 tablespoon jalapeno juice
1 teaspoon chicken bouillon
2 tablespoons clarified butter
1 ounce monterey jack cheese, shredded (light, if desired)
1 ounce cheddar cheese, shredded (light, if desired)
1 tablespoon flour

Steps:

  • In a heavy saucepan on high heat, bring cream to the boil.
  • Just as it is ready to boil, stir in sour cream until completely blended.
  • Reduce heat and add chicken and jalapeno juice.
  • Simmer until heated thoroughly.
  • Meanwhile, in another pan, melt butter and add flour to create a roux/paste.
  • Whisk paste until it browns SLIGHTLY.
  • Add paste to cream pot just before it boils up.
  • Whisk continuously until paste dissolves into cream.
  • Remove from stove and add cheese and chopped jalepenos.
  • Serve/Use immediately.

2 tablespoons diced onions
1 teaspoon chopped garlic
2 tablespoons olive oil
1 cup tomato puree
1 chipotle chile in adobo, chopped (canned, in adobo sauce)
1/4 cup heavy whipping cream, plus
2 tablespoons heavy whipping cream

Steps:

  • In a large saute pan over med heat cook onions and garlic until translucent, 3 to 5 minutes.
  • Stir in tomato puree and chipotle pepper and bring to a simmer over med heat. Continue to cook for 15 minutes, stirring occasionally to allow flavor to blend and sauce to reduce slightly. Lower heat if bottom of pan gets too hot so sauce does not burn.
  • Remove pan from heat and whisk in ream, then set aside. Makes about 1 1/4 cups of sauce.
