A fun twist on the standard apple crisp, this apple crisp with ginger is going to delight your taste buds and have you coming back for more and more!

6 cups chopped apples ((about 6 medium sized apples))
2 tablespoons peeled and finely chopped fresh ginger root
1/2 teaspoon lemon zest
1 teaspoon lemon juice ( (zest the lemon before juicing!))
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup rolled oats ((quick or old-fashioned, not steel-cut))
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg ( (use already ground if you have to))
2/3 cup packed brown sugar
6 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 350°F. Lightly spray a 10 by 8 inch baking pan with cooking spray. Set aside.
  • In a large bowl, mix ginger root, lemon zest, lemon juice, sugar, and cinnamon. Add apple chunks and mix thoroughly. Make sure the zest and ginger root are distributed equally throughout the apples. Put into baking dish.
  • In the same bowl that you used for the apple mixture, mix flour, oats, cinnamon, nutmeg, and brown sugar. Add the softened butter, and use two knives held together in your hand (or a pastry cutter or fork) to cut the butter into the dry ingredients. The mixture should hold together in large clumps.
  • Using a large spoon or your hand, sprinkle the crisp topping over the apple mixture. Put into preheated oven and bake 1 hour and 10 minutes, or until apples are soft and crisp is lightly browned on top. Cool slightly, and serve warm with ice cream, if desired.

2 tablespoons unsalted butter or 2 tablespoons margarine
2 tart apples, unpeeled, cored and thinly sliced
1/2 cup apple juice
1/3 cup granulated sugar
2 tablespoons fresh ginger, grated
1 teaspoon ground cinnamon
2 cups dried apple rings
1/4 cup candied ginger, finely chopped
20 gingersnaps, crushed
1 cup low-fat vanilla yogurt
whole gingersnaps, for garnish if desired

Steps:

  • Heat butter in a skillet over medium-high heat. Saute fresh apple slices 5 minutes, or until tender.
  • Stir in juice, sugar, fresh ginger and cinnamon. Cook 5 minutes, or until liquid is syrupy.
  • Add dried apple slices and candied ginger. Reduce heat to medium, and cook 3 minutes more, or until heated through.
  • Sprinkle bottom of a 2-qt. bowl with 1/2 cup crushed gingersnaps.
  • Stir remaining gingersnap crumbs into the apple mixture.
  • Layer apple mixture and yogurt in bowl.
  • Garnish with whole gingersnaps, if desired.

In 1998, I was invited by Pat Adrian, director of the Good Cook division of the Book of the Month Club, to judge the group's annual office baking contest. There were luscious cakes, pies and cookies of all types, but these gingersnaps were the hands-down winners. Julie Ellis-Clayton, the winner of the contest, was kind enough to share her recipe with me.

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
12 tablespoons (1 1/2 sticks) unsalted butter
1 cup sugar
1 large egg
1/4 cup molasses
1/2 cup sugar in a shallow bowl, for finishing

Steps:

  • Set racks in the upper and lower thirds of the oven and preheat to 350 degrees. Combine the flour, baking soda, salt, and spices in a bowl; stir well to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the butter and sugar for about 5 minutes until very light, fluffy and whitened. Add the egg and continue beating until smooth. Lower speed and beat in half the dry ingredients, then the molasses. Stop the mixer and scrape down bowl and beater. Beat in the remaining dry ingredients. Remove bowl from mixer and use a large rubber spatula to finish mixing the dough. Use a small ice cream scoop to scoop out 1-inch diameter pieces of dough. Roll into balls between the palms of your the hands, then roll in the sugar. Place the balls of dough on the prepared pans leaving about 3 inches all around each, to allow for spreading. Bake the cookies for about 15 to 20 minutes, or until they have spread, the surface has crackled, and they are firm to the touch. Slide the papers from the pans to racks. Store the cooled cookies between sheets of parchment or waxed paper in a tin or platic container witha tight-fitting cover.

Steps:

  • Make the filling: Heat oven to 400 degrees. In a large bowl, stir together brown and granulated sugars, cornstarch, cinnamon, ginger and nutmeg. Stir in apples and cranberries, sprinkle with lemon juice, and toss until combined. Taste mixture: An apple slice should be slightly sweeter than you'd like; the cranberries will seem like they need a little extra sugar. Add more sugar or lemon juice if needed.
  • Scrape apple mixture into a 9-by-13-inch baking dish or a shallow gratin dish, mounding them slightly in the center. (This will even out as it bakes.) Dot top with cold butter cubes. Place baking dish on a baking sheet to catch any bubbling juices that may spill over.
  • Bake for 25 minutes, stirring once halfway through, while you make the topping.
  • Make the topping: In a medium bowl, whisk together flour, brown sugar, ginger, cardamom, cinnamon, cloves, salt and lemon zest. Add butter and molasses, and use your fingers to crumble the mixture together to form 1/2-inch crumbles.
  • After 25 minutes of baking, stir the apples and mound slightly again. Gently press down on them with a spoon or spatula. Scatter crumbles evenly on top of apples.
  • Bake until topping is crisp and filling bubbles up around the sides of the dish, an additional 30 to 35 minutes. If the top starts to look too dark before the juices are bubbling, loosely cover top of crumble with foil. Transfer to a rack and let cool for at least 30 minutes before serving. If you made it ahead of time, you can also reheat the crumble at 400 degrees for 10 to 15 minutes.
  • Within an hour of serving, make the bourbon cream. Using an electric mixer or a whisk, beat together cream, confectioners' sugar and bourbon until soft peaks form. Chill if not serving immediately. Serve with apple crumble.

Steps:

  • For the crisp: Peel and core the apples. Roughly chop into 1-inch chunks and toss with the sugar in a large bowl. Cover with plastic wrap and refrigerate 8 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Butter a 13-by-9-inch or 2-quart baking dish.
  • Drain the apples from their liquid and return the apples to the bowl. Add the cinnamon, nutmeg, salt, cloves and ginger and toss well. Using a rubber spatula, mix in the walnuts, maple syrup and half the cream cheese. Spread evenly in the prepared baking dish, then dot the mixture with the remaining cream cheese.
  • For the topping: Mix together the crushed gingersnaps, oats, sugar and melted butter. Spread the topping evenly across the crisp and bake until bubbly, 25 to 30 minutes. Serve hot or at room temperature with ice cream.

3 Granny Smith apples, about 1 1/2 pounds
1 teaspoon lemon juice
Grated zest of 1 lemon
Grated zest of 1 orange
1 teaspoon freshly grated ginger
1/4 cup butter
6 tablespoons flour
1/2 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Peel, quarter and core apples and slice each into sixteenths.
  • Mix slices with lemon juice, zest and grated ginger.
  • Cut butter into small bits and mix with flour, sugar and cinnamon until mixture resembles coarse crumbs.

3 lb. Granny Smith apples (about 6 large), peeled, cored, cut into ½" pieces (about 7 cups)
¾ cup (packed; 150 g) dark brown sugar
3 Tbsp. fresh lemon juice
1 Tbsp. ground cinnamon
1 Tbsp. vanilla extract
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
½ tsp. ground ginger
¼ tsp. freshly grated nutmeg

Steps:

  • Toss 3 lb. Granny Smith apples (about 6 large), peeled, cored, cut into ½" pieces (about 7 cups), ¾ cup (packed; 150 g) dark brown sugar, 3 Tbsp. fresh lemon juice, 1 Tbsp. ground cinnamon, 1 Tbsp. vanilla extract, 1½ tsp.   • Preheat oven to 375°F. Pulse flour, brown sugar, granulated sugar, cinnamon, salt, ginger, and baking powder in a food processor until combined, about 2 times. Add butter, and process until flour mixture goes past the crumbly stage and starts to clump together and look moist, about 30 seconds. Add oats, and pulse to combine, about 3 times. Transfer to a medium bowl, break up any large clumps, and chill, covered, until ready to use.
  • Heat a 9-inch cast-iron skillet over medium-high. Add butter, and melt until sizzling. Stir in sugar to moisten in spots. Cook, stirring occasionally, until sugar is a deep amber color, about 5 minutes. Add apples (the pan is going to be overflowing, but they will cook down quickly), lemon juice, and salt. Cook, stirring often, until apples have softened and liquid is slightly reduced, 5 to 6 minutes. Stir in flour and apple brandy until combined. Scatter oat topping evenly over apple mixture, and top evenly with ginger candy. Bake in preheated oven until oat topping is golden brown, 30 to 35 minutes. Let cool slightly, about 10 minutes. Spoon into bowls, and serve with vanilla ice cream or whipped cream.
