Easy Bean Dip image

A rich cream bean dip full of flavor! Loads of cheese and a handful of jalapenos take this dip to the next level!

Number Of Ingredients 8

4 ounces cream cheese (softened)
16 ounces refried beans (canned)
½ package taco seasoning
4 ounces mild green chiles (diced and drained)
½ cup sour cream
2 green onions (divided)
¼ cup jalapenos (chopped, optional)
3 cups cheddar cheese (divided)

Steps:

  • Preheat oven to 375°F.
  • Slice green onions dividing the white and green portions. Set the green part aside.
  • Combine cream cheese, refried beans, taco seasoning and sour cream with a hand mixer on until fluffy.
  • Add the whites of the onions, jalapenos, chiles and 2 cups of cheddar cheese.
  • Spread into a 2qt (or 8x8) baking dish.
  • Top with remaining cheese and bake 20-25 minutes or hot and cheese is melted.
  • Serve with tortilla chips.

This can also be used for a tasty open-face sandwich, spread over slices of buttered bread. Sprinkle with grated cheddar cheese and broil until heated and cheese melts.

Number Of Ingredients 7

3/4 cup pinto beans
1/2 lemon, juiced
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon canned jalapeno pepper, chopped and seeded
3/4 teaspoon salt
3 tablespoons chopped green onions

Steps:

  • Soak and cook beans according to directions.
  • Drain.
  • Place beans and remaining ingredients except 1 tablespoon of the green onions in blender container.
  • Blend until smooth or, mash beans to puree and mix with remaining ingredients.
  • Place in small bowl and garnish with 1 tablespoon chopped green onion.
  • Serve as a dip with crisp raw vegetables or corn chips.

1 (16 ounce) can refried beans
1 cup picante salsa or 1 cup favorite salsa
1/2 cup shredded Mexican blend cheese
1/2 cup sliced green onion
1 tablespoon chopped fresh cilantro
1/2 tablespoon finely chopped fresh jalapeno (optional)
1/4 teaspoon garlic powder

Steps:

  • In medium saucepan, combine all ingredients.
  • Cook until hot and bubbly.
  • Serve warm or room temperature.
  • Makes 2 to 3 cups.

400g can cannellini beans , rinsed and drained
400g can chickpeas , rinsed and drained
juice 2 lemons , zest 1
2 garlic cloves , crushed
2 tsp ground cumin
100ml Greek yogurt

Steps:

  • Put half the beans and chickpeas into a food processor with the lemon juice, garlic, cumin and yogurt, then whizz until smooth. Tip in the rest of the beans and pulse once to get a very chunky dip. Stir in the lemon zest and plenty of seasoning, then divide between 4 containers and store in the fridge.
