This simple recipe for grilled chicken topped with a colorful mixture of summer veggies is a winner for a weeknight meal or for dinner on the patio with friends. Fresh basil and crumbled feta or goat cheese add a delicious twist.

2 tablespoons olive oil, plus additional for coating chicken
1 large red onion, thinly sliced
1 large yellow bell pepper, trimmed, seeded and thinly sliced
1 pint grape or cherry tomatoes, halved
Salt and ground black pepper
2 teaspoons Glace de Poulet Gold®
1 cup water
4 boneless, skinless chicken breast halves (6-8 ounces each)
2 tablespoons chopped fresh basil or parsley
1/4 cup crumbled feta or goat cheese

Steps:

  • Preheat the grill to medium.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.  Add the onion and pepper and sauté for a few minutes until the vegetables are lightly browned.  Add the tomatoes and season with salt and pepper.  Reduce the heat to medium-low and add the Glace de Poulet Gold® and water, stirring until the concentrate dissolves.  Simmer the vegetables in the stock until they are tender and the liquid has reduced slightly, about 5 minutes. Set aside.
  • Coat the chicken breasts with olive oil and season them with salt and pepper (or your favorite grilling rub).  Grill the chicken a 4-6 minutes per side, turning once, until they're cooked through.  Transfer the chicken to a plate and let rest for 5 minutes.
  • Gently reheat the vegetable mixture and add any juices the chicken has released while resting.  Add the chopped basil and season to taste with salt and pepper. Serve the chicken topped with the vegetables and sprinkled with crumbled feta or goat cheese.

4 boneless skinless chicken breasts
1/2 lb bacon
2 tablespoons Lawry's Seasoned Salt
1 cup barbecue sauce
2 cups sliced mushrooms
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
4 slices mozzarella cheese
4 slices American cheese

Steps:

  • Sprinkle chicken breast with Lawry's seasoning salt.
  • Place on grill cook over medium heat until done.
  • Cook bacon in large skillet. When bacon is done drain skillet, leaving about 1 tsp of bacon grease.
  • Place skillet back on stove on low heat and saute mushrooms, onions and peppers for approx 15 minutes or until tender.
  • Place cooked chicken breast on baking sheet. Cover each breast with BBQ sauce.
  • Place 2-3 slices of cooked bacon on each chicken breast and cover with sauteed mushrooms, onions and pepper, a slice of mozarella cheese and a slice of American cheese.
  • Place cookie sheet with chicken back on grill just long enough to melt cheese.

4 chicken breasts
1/2 cup all-purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon paprika
Salt and pepper, to taste
1/4 cup vegetable oil
1 onion
2 small garlic cloves
1 cup sour cream
1/2 cup chicken stock
1/4 chopped green onions, including green part

Steps:

  • Clean chicken breasts and dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt, and pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In a large skillet heat 1/4-inch vegetable oil over medium heat. Add chicken and brown well, about 2 minutes on each side. Remove from pan and set aside. Pour excess oil from pan, leaving a thin layer. Add onions and garlic, saute, stirring occasionally, until translucent, about 3 to 5 minutes. In a bowl combine sour cream, chicken stock and green onions and mix well. Transfer chicken back to skillet, pour sour cream mixture over it. Bring to a simmer and cook, covered, until done, about 10 minutes.;

3 1/2 pounds whole cut-up chicken
2 (5-ounce) packets chicken fry coating (recommended: Dixie Fry)
2 tablespoons salt-free chicken seasoning, divided (recommended: McCormick Grill Mates)
Canola oil, for frying
2 (12-ounce) jars roasted chicken gravy (recommended: Franco American)
1 teaspoon crushed garlic

Steps:

  • Cut away excess skin and fat from chicken pieces. Rinse with cold water and set aside; do not pat dry.
  • In a shallow bowl, stir together fry coating and 1 tablespoon chicken seasoning. Dredge chicken pieces in coating mixture; set aside.
  • In a large straight-sided pan, heat 1/2-inch oil over medium-high heat. Oil is ready for frying when a drop of water splatters when dropped in.
  • Fry coated chicken until golden brown, about 8 minutes per side. Remove chicken from pan and drain oil.
  • In a medium bowl, stir together gravy, remaining chicken seasoning, and crushed garlic; set aside.
  • Return chicken to pan over medium heat. Cover with gravy. Bring to a boil. Reduce heat, cover and simmer for 10 to 20 minutes or until completely done (no pink near the bone).
  • Serve hot.

3 tablespoons olive oil, plus more if needed
Two 8-ounce containers sliced white button mushrooms
1 sprig fresh thyme
1 medium sweet or white onion, large diced
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
2 cups beef stock, warmed
4 grilled chicken breasts, from the freezer or refrigerator section of the grocery, thawed if frozen
Two 10-ounce containers microwavable white rice
3 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and thyme and more olive oil if needed and saute until lightly browned and tender, 5 to 10 minutes. Add the onion and season with salt and pepper. Let cook until the onions are softened, 5 to 7 minutes. Mix in the flour and mustard and cook for about 2 minutes. Whisk in the beef stock and bring to a simmer. Cook until thickened, 3 to 4 minutes. Add the grilled chicken breasts, then cover the skillet and turn down the heat to medium-low. Let simmer for about 10 minutes.
  • Prepare the rice according to the package directions. Remove the rice to a large bowl and stir in 2 tablespoons parsley. Place rice on a platter, then top with the chicken and mushroom sauce. Garnish with the remaining fresh parsley.

GRILLED KANSAS CITY SMOTHERED BBQ CHICKEN

4 boneless skinless chicken breasts pounded to 1/2-inch thickness
2 cups Kansas City BBQ sauce, divided (see below for recipe)
1/3 cup white mushrooms, sliced
1/2 medium onion, thinly sliced
8 slices provolone cheese
Fresh cilantro or parsley (optional)
Reynolds Wrap® Non-Stick Foil
1 cup ketchup
1/2 cup brown sugar
1/4 cup yellow mustard
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
2 tablespoons honey
2 tablespoons dark molasses
2 teaspoons chili powder
2 teaspoons garlic powder
1 teaspoon liquid smoke
1 teaspoon onion powder
1 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Whisk together all sauce ingredients in a medium sauce pan. Bring to a boil, reduce to simmer and cook for 10 to 15 minutes. Remove from heat and allow to cool to room temperature. Reserve 1/2 cup of sauce and pour remaining sauce in a large sealable bag. Add chicken breasts to bag. Seal and refrigerate for 30 minutes. Preheat grill to medium heat and arrange four 12x12-inch pieces of Reynolds Wrap® Non-Stick Foil on the grill. Use tongs to transfer one chicken breast to each foil square. Discard marinade. Brush each chicken breast with some of the remaining BBQ sauce. Top with sliced mushrooms and onions. Fold foil around each chicken breast to enclose the chicken and veggies. Allow to cook over medium heat for 10 to 12 minutes or until chicken is tender and juices run clear or meat thermometer reads 170 degrees F. Unwrap foil packets and place two slices of provolone cheese over the top of each chicken breast so that the cheese is lying on top of the mushrooms and onions. Allow to cook uncovered 2 to 3 minutes longer or until cheese is melted. Garnish with fresh parsley or cilantro and serve.

1 (24 ounce) jar pickle juice (Claussen or Vlasic)
1/2 large onion, sliced
3 mushrooms, sliced
2 slices swiss cheese

Steps:

  • Marinade chicken in pickle juice from 1 - 5 hours.
  • Heat Kamado Joe grill up to 300 degrees set up to cook indirect. On the gridle side of the grill saute onions and mushrooms in butter sprinkle with salt and pepper. Remove from grill and set aside.
  • Place chicken on grill and cook until internal temperature is 160 degrees.
  • Put the bacon, sauteed mushrooms and onions on top the chicken and cover with cheese. Final chicken temperature should be 165 degrees.

1 (6 ounce) boneless skinless chicken breasts
1/2 cup sliced onion
1 (4 ounce) can mushroom stems and pieces (drained weight)
1 tablespoon olive oil
1 tablespoon butter
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a medium size cast iron frying pan, heat the oil and butter and stir until the butter nolonger foams.
  • Add the thawed chicken breast and fry on one side for 4 minutes.
  • Turn the breast over and add the onions, continue to fry for 2 minutes add the mushrooms, and continue to cook for two more minutes.
  • Add salt and pepper.
  • Reduce heat and check for an internal temperature of 160 degrees (F).

1 3 1/2 to 3 3/4-pound chicken, quartered
Paprika
2 large onions, sliced
3/4 cup dry white wine
2 bay leaves
1 14 1/2-ounce can chicken broth

3 tablespoons water
1/4 cup whipping cream
1/4 teaspoon ground mace or nutmeg
Mashed potatoes
Chopped fresh parsley

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Sprinkle both sides of chicken with salt, pepper and generous amount of paprika. Add to skillet and cook until beginning to color, turning occasionally, about 10 minutes. Transfer chicken to plate. Add onions to skillet, stir to coat with butter and scrape up any browned bits. Reduce heat, cover and cook until tender, stirring occasionally, about 15 minutes.
  • Set chicken atop onions. Add wine and bay leaves to skillet. Increase heat and boil until most of wine evaporates and mixture is syrupy, about 8 minutes. Add broth; bring to boil. Reduce heat, cover and simmer until chicken is cooked through, turning occasionally, about 30 minutes. Using tongs, transfer chicken to platter. Tent with foil.
  • Mix flour and 3 tablespoons water in small bowl until smooth. Add to broth in skillet and mix until smooth. Add cream and mace. Boil until thickened to sauce consistency, stirring occasionally, about 8 minutes. Return chicken and simmer until heated through. Taste sauce and adjust seasonings.
  • Spoon potatoes onto plates. Place chicken on plates. Spoon sauce over; sprinkle with parsley and serve.
