These are similar to Russian Tea Cakes but use cake flour instead of regular. They literally melt in you mouth!!!

½ cup butter, softened
2 tablespoons white sugar
1 teaspoon vanilla extract
1 cup sifted cake flour
1 cup pecan halves
½ cup confectioners' sugar for rolling

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together butter and sugar until smooth. Beat in the vanilla. Grind pecans in a food processor or blender; toss with cake flour. Stir the pecan mixture into the creamed mixture until well blended. Roll the dough into tablespoon balls, then place them 1 inch apart onto the prepared cookie sheets.
  • Bake for 25 to 20 minutes in the preheated oven, or until lightly browned. Roll warm cookies in confectioners' sugar. When they are cooled, roll them again.

STOVETOP SMOKED PECANS



Stovetop Smoked Pecans image

Number Of Ingredients 6

2 cups whole pecans
1 tablespoon vegetable oil
1 tablespoon light brown sugar
2 teaspoons smoked sweet paprika
2 teaspoons kosher salt
1 teaspoons freshly ground black pepper

Steps:

  • Place the pecans in a bowl. Pour the oil, sugar, paprika, salt and pepper over the pecans. Stir to combine.
  • Place a heavy-bottomed pot on the stovetop, and have on hand a pasta pot insert or a steamer basket that fits inside this pot, and a tight-fitting lid. Line the bottom of the pot with heavy-duty aluminum foil. Fill the bottom with the drained wood chips. Top with the pasta pot insert or the steamer basket. Place the pecans in the insert. Turn the heat to medium-high. As soon as smoke is visible, place the lid on the pot and reduce the heat to low. Smoke the pecans for 20 minutes.
  • Remove from the heat and pour the warm pecans on a serving platter. (Allow the wood chips to cool completely before discarding.) If making ahead, store the pecans in an airtight container.

A little puff of pecan-y goodness. Melts in your mouth. Perfect for the holidays. I have had this in my Christmas Cookie repertoire for many years.

1/2 cup salted butter, softened
2 tablespoons sugar
1 teaspoon vanilla
3/4 cup finely chopped pecans
1 cup cake flour
1/4 teaspoon salt (or less)
powdered sugar, reserved

Steps:

  • Preheat oven to 300°.
  • Put on some Christmas music.
  • Chop pecan in a food processor or by knife.
  • Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
  • Coat hands with flour. Use a teaspoon scoop or a teaspoon and shape into cherry-size and place on a parchment-lined or greased cookie sheet.
  • Bake at 300° 15-20 minutes.
  • (These should be light in color. Do not brown!) While cookies are still quite warm, roll them in confectioner's sugar. When cool, roll in confectioner's sugar again.

1 tablespoon water
1 tablespoon poppy seeds
1 package (8 ounces) cream cheese, softened
2 tablespoons sherry
1/2 teaspoon liquid smoke, optional
1/4 cup finely chopped pecans
1 tablespoon finely chopped onion

Steps:

  • Unfold puff pastry; cut into 1-in. squares. Place on parchment-lined baking sheets. Whisk egg and water; brush over squares. Sprinkle with poppy seeds. Bake at 400° for 8-10 minutes or until golden brown., In a small bowl, combine the cream cheese, sherry and Liquid Smoke if desired; stir in pecans and onion., Split each square horizontally; spread with 3/4 teaspoon cream cheese mixture. Replace tops.

Don't underestimate the allure of a generous pile of green grapes, either.

8 ounces sharp Cheddar cheese, shredded (2 cups)
1/2 cup pecans, toasted
1/3 to 1/2 cup mayonnaise
1 teaspoon bottled smoke
1 heaping teaspoon Dijon mustard
Dash of Worcestershire sauce
Dash of hot pepper sauce
Black pepper
Smoked paprika

Steps:

  • COMBINE the cheese, pecans, mayonnaise, bottled smoke, and mustard in a medium bowl. Blend well with a fork, adding more mayonnaise if you want a softer, more moist consistency.
  • ADD the Worcestershire sauce, hot pepper sauce, and pepper to taste and mix well. Sprinkle with paprika. Pile the cheese into a crock and serve with crackers or vegetables and fruit (see head-note).
