12 hard-boiled large eggs
1/2 cup mayonnaise
3 chipotle peppers in adobo sauce, finely chopped
1 tablespoon capers, drained
1 tablespoon stone-ground mustard
1/4 teaspoon salt
1/4 teaspoon white pepper
Minced fresh cilantro

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set whites aside. In a small bowl, mash yolks. Add the mayonnaise, chipotle peppers, capers, mustard, salt and white pepper; mix well. Stuff or pipe into egg whites. Refrigerate until serving. Sprinkle with cilantro.

12 large eggs
1 fat garlic clove, minced
1/4 teaspoon kosher salt, more to taste
1/2 cup mayonnaise
2 tablespoons tomato paste
2 teaspoons red wine vinegar, more to taste
1/4 teaspoon freshly ground black pepper
1/4 teaspoon hot smoked paprika, more to taste and for garnish

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a full boil, let cook for 1 minute, then turn off heat and cover pan. Allow eggs to stand for at least 15 minutes.
  • Once eggs are cool enough to handle, peel and cut in half lengthwise. Scoop yolks into a bowl; place whites on a serving platter.
  • Using a sharp knife or mortar and pestle, chop or smash garlic with salt to make a paste. Add paste to yolks and mash together with a fork. Add mayonnaise, tomato paste, red wine vinegar, pepper and paprika and continue to mash until mixture is smooth. Taste and add more vinegar, salt and paprika if desired.
  • Spoon yolk mixture into whites and dust with paprika.

1/2 cup soaked hickory wood chips
12 hard-cooked large eggs, peeled
1/2 cup Miracle Whip
1 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Minced fresh parsley, optional

Steps:

  • Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Cool slightly., Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in Miracle Whip, mustard, salt, pepper and paprika. Spoon or pipe into egg whites. If desired, top with additional paprika and chopped parsley. Refrigerate, covered, until serving.

12 hard-boiled eggs, peeled
1/2 cup mayonnaise, plus more for brushing
1 tablespoon Dijon mustard
2 teaspoons chipotle adobo sauce from chipotle peppers in adobo
1 teaspoon smoked paprika, plus more for dusting
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for medium-high heat.
  • Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
  • Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.
  • When ready to serve, pipe some of the yolk mixture into each egg white and dust with a little paprika.

Diced jalapenos, optional
1/3 cup mayo
1/4 cup finely chopped brisket (we've been known to substitute jalapeno sausage)
1/4 cup finely chopped red onions
1 tablespoon house-made mustard or Dijon mustard
1 teaspoon sriracha or your favorite hot sauce
Salt
Smoked paprika or cayenne pepper

Steps:

  • Cream together the egg yolks, some jalapenos if you're feeling devious, the mayo, brisket, onions, mustard, sriracha and salt to taste. Pipe a generous portion into each of the whites. And because we have a monster smoker just sitting around waiting for someone to stuff edible things into it, we smoke the eggs for 3 to 4 minutes. A quick dusting of smoked paprika or cayenne on top and they're done.
  • These deviled eggs have personality.

Wow, there is some heat to these eggs. They were enjoyed by all who tried them. I must admit that I chickened out and used 1 1/2 Tbsp. of chipotle sauce instead of the pepper! LOL This is one AMAZING DEVILED EGG!!! I love the mixture of the chipotle and orange zest. It is a wonderful combination. 2 tablespoon(s) plus 2 teaspoons mayonnaise

1 teaspoon(s) chopped canned chipotles

  • Combine the thoroughly mashed yolks with the mayonnaise, salad dressing, vinegar, and mustard. Blend in the chipotles and orange zest. Taste, then season with salt and pepper.

2/3 cup mayonnaise
1 1/2 teaspoons tarragon-infused champagne vinegar
3/4 teaspoon dry mustard
2 1/2 teaspoons Dijon mustard
1/3 teaspoon cayenne
1/2 teaspoon curry powder
salt and pepper

Steps:

  • Place the eggs in a saucepan, cover with cold water, and bring to a boil over high heat.
  • Reduce the heat, and simmer for exactly 9 minutes.
  • Pour off most of the water and immediately run cold water over the eggs.
  • Crack the eggshells, roll each egg between your palms and peel under running water.
  • Cut a small sliver off both ends of each egg (so they'll sit without wobbling) and halve them crosswise, forming round cups.
  • Remove the yolks, and mix with the mayonnaise through curry powder with a rubber spatula until smooth.
  • Season to taste with salt and pepper.
  • Mound the yolk mixture into the egg whites.
  • (For fancier eggs, spoon the yolk mixture into a pastry bag with a star tip, and pipe the mixture into the egg whites to form rosettes).
  • Refrigerate until served.
