TURKEY SAUSAGE PIZZA

- Preheat oven to 400°. With greased fingers, press dough onto a 12-in. pizza pan coated with cooking spray. Prick dough thoroughly with a fork. Bake until lightly browned, 10-12 minutes., Meanwhile, in a large skillet, cook the sausage, onion, mushrooms and green pepper over medium heat until sausage is no longer pink, 6-8 minutes, breaking up sausage into crumbles; drain., Spread crust with pizza sauce. Top with sausage mixture; sprinkle with cheese. Bake until crust is golden brown and cheese is melted, 12-15 minutes longer., Freeze option: Wrap and freeze cooled pizza. To use, thaw overnight in the refrigerator. Unwrap; bake on a pizza pan at 400° until heated through, 18-22 minutes.

- Prepare pizza dough according to package directions. Place dough on a greased baking sheet. With floured hands, press into a 12-in. x 10-in. rectangle. Bake at 425° for 3 minutes., Meanwhile, in a small nonstick skillet coated with cooking spray, saute peppers until crisp-tender. , Spread pizza sauce over crust to within 1 in. of edges. - In a small bowl, combine the all-purpose flour, 1/2 cup whole wheat flour, yeast, salt and sugar. Stir in the water, oil and honey; beat just until moistened. Stir in enough remaining whole wheat flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 30 minutes., Meanwhile, in a large skillet, saute the onion, 2 teaspoons vinegar, 1 teaspoon syrup, salt and cayenne in oil until onion is tender. Remove from the heat; stir in the sage, mustard and remaining vinegar and syrup., Grease a 12-in. pizza pan; sprinkle with cornmeal. Roll out dough to fit prepared pan; prick thoroughly with a fork.
