ONE PAN CHEESY SMOKED SAUSAGE PASTA SKILLET



One Pan Cheesy Smoked Sausage Pasta Skillet image

One Pan Cheesy Smoked Sausage Pasta recipe has smoked sausage and pasta in a spicy, creamy sauce that's all cooked in one pan for a quick weeknight meal.

1 tablespoon extra virgin olive oil
1 pound Smoked Turkey Sausage (sliced)
1 cup diced onion (about 1 medium onion)
1 tablespoon minced garlic (about 2-3 fresh cloves)
2 cups chicken broth
1 10-ounce can diced tomatoes (with or without chiles) ((like rotel))
1/2 cup milk or heavy cream
8 ounces dry pasta (like rotini, penne or farfalle)
salt and pepper (to taste)
1 cup shredded Cheddar-Jack cheese
1/3 cup sliced scallions (for garnish)

Steps:

  • Add olive oil to a 5 quart saute pan over medium high heat. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds.
  • Add chicken broth, tomatoes (undrained), milk, pasta, and seasonings. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes, or until pasta is tender and most of the liquid is absorbed.
  • Turn off the heat and stir in 1/2 cup of cheese. Sprinkle remaining cheese on top and cover for about five minutes to allow cheese to melt. Top with sliced scallions and serve. (You could also broil for a couple of minutes to melt the cheese).

2-1/2 cups uncooked bow tie pasta
1 package (16 ounces) Eckrich® Smoked Sausage, cut into 1/2-inch slices
1 tablespoon olive oil
2 medium zucchini, halved lengthwise and sliced
1/2 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, cook sausage in a large skillet over medium heat until browned, about 5 minutes. Remove from the skillet; set aside., To the same skillet, add oil, zucchini and onion; cook and stir until vegetables are crisp-tender, about 5 minutes. Stir in sausage, tomatoes, garlic salt, oregano and pepper. Cook, uncovered, until heated through, about 10 minutes, stirring occasionally., Drain pasta and place on serving platter. Top with sausage mixture. If desired, sprinkle with cheese.

I admit I hated them as a kid too. I was at deer camp a few years ago and one of my uncles brought a bunch he had from the farmers market. Knowing my culinary aptitude, he tossed the bag at me and said "see what you can do with these" This being a hunting camp, the pressure was on. I couldn't make some fancy dish, so I tried to keep it simple and came up with this. You can use any smoked sausage you like, I prefer a Portuguese linguisa, but you can use kielbasa, bacon or ham as well. You can omit the crushed red pepper if you don't like a bit of heat. Can be served as a side dish or a main course. This is the only way to eat brussel sprouts IMO.

1 lb Brussels sprout, washed and cut in half
1/2 lb smoked sausage, diced
1 medium carrot, diced
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 -2 tablespoon olive oil or 1 -2 tablespoon butter
1/2 cup chicken stock or 1/2 cup vegetable stock
salt and pepper, to taste

Steps:

  • Sauté sausage in a large sauté pan over medium heat until it starts to get some color. Remove from pan but do not discard the drippings. Leave the drippings in the pan.
  • To the pan add the oil/butter, garlic, red pepper, carrot, and brussels sprouts. Sauté over medium heat until the sprouts begin to brown. Add the cooked sausage back to the pan. Toss to mix.
  • Deglaze pan with the stock, continuing to cook until the liquid in the pan is almost gone. Remove from heat and serve while hot.
