1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
1/4 cup ATHENOS Crumbled Reduced Fat Feta Cheese
4 spinach-flavored flour tortillas (10 inch)
6 oz. smoked salmon, thinly sliced
1 cup baby spinach leaves

Steps:

  • Mix cream cheese spread and feta cheese until well blended; spread onto tortillas. Top with salmon and spinach.
  • Roll up tortillas tightly; wrap individually in plastic wrap. Refrigerate 2 hours.
  • Cut each roll-up crosswise into 12 pieces to serve.

These appetizers are beautiful to look at (very colorful) and wonderful to eat. They are the focal point of any appetizer tray I have ever done. Yes, they are a bit "diddly" but well worth the effort.

1 lb smoked salmon
8 ounces cream cheese
2 teaspoons wasabi powder
3 large carrots, julienned
3 stalks celery, julienned
1 small zucchini, julienned
1 red pepper, julienned
1 green pepper, julienned
1 yellow pepper, julienned
1/2 red onion, chopped very finely
1 bunch chives
1 lemon

Steps:

  • Mix cream cheese and wasabi powder together.
  • Let sit for 15 minutes.
  • Meanwhile, cut smoked salmon into pieces approximately 2x3 inches.
  • Spread cream cheese mixture over smoked salmon pieces.
  • Place a piece of julienned carrot, celery, zucchini, red, green and yellow pepper on salmon.
  • Add several small pieces of chopped red onion.
  • Roll up salmon into small bundle and tie with one stem of chive.
  • Serve on a platter decorated with thin slices of lemon.

1/4 cup feta cheese, crumbled
4 spinach tortillas
6 ounces smoked salmon, thinly sliced
1 cup baby spinach leaves

Steps:

  • Mix cream cheese and feta. Spread evenly on the tortillas.
  • Top evenly with spinach leaves and salmon.
  • Roll up tortillas tightly; wrap individually in plastic wrap. Refrigerate at least 2 hours.
  • To serve, remove plastic wrap,. Cut each roll up crosswise into 12 pieces. Arrange on serving dish.
  • Note: You could also substitute ham for the salmon. And if you cannot find the green tortillas, you can use regular. It's just prettier with the green/spinach tortillas.

1 (15 ounce) can salmon, sockeye (red)
1 (8 ounce) package cream cheese (softened)
1 tablespoon lemon juice
2 teaspoons red onions, minced
1 1/2 teaspoons horseradish, adjust to taste
2 teaspoons liquid smoke
1/4 teaspoon salt
2 tablespoons fresh dill, minced
1/3 cup green olives, sliced (with pimentos)
3 large flour tortillas (10 inch, wheat or white)

Steps:

  • Drain, flake and remove skin and bones from salmon.
  • In a large bowl combine cream cheese, lemon juice, red onion, horseradish, salt, and liquid smoke.
  • Add salmon to cream cheese mixture; mix well.
  • Divide mixture between the flour tortillas; evenly spreading out the filling to the edge.
  • Sprinkle top of each tortilla with minced dill.
  • Spread two tablespoons of (drained) sliced olives down the center of each toritilla.
  • Roll up tortillas; wrap each roll in plastic wrap and refrigerate for 2 to 3 hours.
  • To Serve: Slice into bit-size pieces.

These pinwheels are absolutely delicious... don't wait for a party to make them, whip them up for a weekend brunch or evening snack! You can make these up to 1 day ahead and refrigerate. You should get around 48-50 pinwheels/sandwiches if you slice each bread roll into 8 pieces, but it will depend on how large you slice them, so servings is only estimated. Don't purchase the completely square slices of bread, purchase the sandwich loaf that is higher on the top. Plan ahead these need to chill for a minimum of 2 hours before slicing. You can also make these with fresh steamed asparagus, but I prefer the canned better.

1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
6 slices soft sandwich bread (crusts removed, can use white or whole wheat bread I like to use both)
12 ounces smoked salmon
6 canned asparagus spears
1 pinch cayenne (optional)

Steps:

  • In a bowl stir together softened cream cheese and mayo; season with a pinch of cayenne pepper or to taste (if using) mix very well to combine.
  • Remove crusts from ends of bread slices.
  • Using a rolling pin roll out the bread slices to flatten slightly.
  • Divide/spread the the cream cheese mixture between the 6 slices of bread.
  • Divide and top with smoked salmon slices.
  • Place one asparagus spread along the shorter end of each slice of bread (trim ends more if necessary to roll).
  • Roll each slice of bread up firmly.
  • Wrap EACH roll of bread up firmly in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
  • Remove from fridge, using a serrated knife, slices each roll into 6-8 pieces.
  • Cover and refrigerate pinwheels if not serving immediately.

2 tortillas, 10 inch rounds
2 1/2 tablespoons low-fat sour cream
2 1/2 tablespoons low-fat mayonnaise
1 -2 teaspoon prepared japanese horseradish (wasabi)
1/4 teaspoon grated ginger
1/4 teaspoon lemon zest
1/4 teaspoon soy sauce (optional)
2 cups loosely packed baby greens
1 -2 tablespoon very thinly sliced red onion
10 slices cucumbers, Very thin slices
1/2 avocado, sliced thin (optional)
6 ounces sockeye wild salmon (boneless and skinless, drained)
2 tablespoons almonds, toasted

Steps:

  • Mix dressing ingredients together.
  • Lay out the 2 wraps and spread 1 tablespoon of the dressing on over one side of each wrap.
  • Place the baby greens on the spread dressing. Top with red onions, line the cucumbers across the wrap. Mix the dressing into the salmon. Spread the salmon along side the cucumbers. Place the avocado slices along the salmon if using. Sprinkle the almonds over the salmon. Roll up tightly the tortillas be sure to roll so the cucumbers are all though the rolls. Slice each wrap into 8 slices and place cut side up.

1 cup unsalted butter, softened
1 (7 ounce) package store bought pesto sauce
6 ounces smoked salmon

  • With an electric mixer, beat 24 oz.
  • cream cheese with the butter until blended.
  • In another bowl, combine 4 oz.
  • cream cheese and pesto.
  • In another bowl, combine the smoked salmon and 4 oz.
  • cream cheese.
  • In another bowl, combine 4 oz.
  • cream cheese with the chopped olives.
  • In a 9x5x3 inch loaf pan lined with plastic wrap, spread 1 cup of butter/cream cheese mixture.
  • Spread pesto/cream cheese mixture on top.
  • Carefully, spread 1 cup of butter/ cream cheese mixture on top.
  • Carefullly, spread smoked salmon mixture on top.
  • Spread 1 cup of butter mixture on top.
  • Spread olive mixture on top.
  • Finally, carefully spread the last cup of butter mixture on top.
  • Cover with plastic wrap.
  • Press firmly and chill until cold and firm, at least 8 hours or up to 3 days.
  • Dropping the individual layers with a teaspoon makes it easier to spread more evenly.
  • To serve, remove top plastic and turn onto a platter.
  • Slice and serve on individual plates.
  • It's nice served with thin slices of bread, toast points, or crackers.

4 large flour tortillas
350g smoked salmon
serve with extra dill and rocket leaves

Steps:

  • Mix the cream cheese with the lemon juice, chopped dill and plenty of black pepper. Spread over 4 large flour tortillas and cover with the smoked salmon. Roll up like a Swiss roll, trim off the ends and discard. Wrap tightly in cling film, twisting the ends firmly to enclose. Place in the fridge until you are ready to use.
