1/3 cup buckwheat flour
2/3 cup all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
3/4 cup plus 2 tablespoons milk
1 extra-large egg
1/4 pound (1 stick) unsalted butter, clarified, divided
1/2 pound smoked salmon, thinly sliced
1/4 cup creme fraiche or sour cream
Fresh dill sprig, for garnish

Steps:

  • Combine both flours, baking powder, and salt in a bowl. In a separate bowl, whisk together the milk, egg, and 1 tablespoon of the clarified butter, then whisk into the flour mixture. Heat 1 tablespoon of the clarified butter in a medium saute pan and drop the batter into the hot skillet, 1 tablespoon at a time. Cook over medium-low heat until bubbles form on the top side of the blini, about 2 minutes. Flip and cook for 1 more minute, or until brown. Repeat with the remaining batter. (I clean the hot pan with a dry paper towel between batches.) Set aside.
  • To serve, top the blini with a piece of smoked salmon. Add a dollop of creme fraiche and a sprig of dill.

We make these every Christmas when guests are arriving. It's generally a job that me and Dad do - while greeting people with a drink you can also be knocking out a few freshly cooked blinis, adding simple toppings as you go. Yum.

1 cup of self-raising flour
1 large free-range egg
olive oil
1 cup of semi-skimmed milk
unsalted butter

Steps:

  • 1. For the blinis, place the flour and a pinch of sea salt in a large mixing bowl. Make a well in the centre, crack in the egg and add 1 tablespoon of oil, then beat into the flour. Gradually whisk in the milk until you've got a lovely, smooth batter.
  • 2. Put a large non-stick frying pan on a medium heat and add 1 small knob of butter. 3. Once hot and the butter's melted, add tablespoons of batter to the pan to make your blinis. Cook for 1 minute on each side, flipping over when they turn golden on the bottom and get little bubbles on top. 4. The first batch always helps you figure out your temperature control, so adjust it up or down if needed. 5. Transfer the cooked blinis to a plate, and continue with the remaining batter until it's all used up. Top with your favourite combos, season to perfection and enjoy. Give your guests a fresh, light start to a dinner party meal with this glamorous, seasonal starter

1 tbsp wholegrain mustard
1 tbsp red wine vinegar
3 tbsp olive oil
100g mixed garden leaves
200g pack smoked salmon
3 cooked beetroot, finely diced
100g plain flour
1 egg, separated
150ml milk
25g butter, melted
bunch chives, snipped
sunflower oil, for cooking

Steps:

  • For the blini mix, tip the flour into a bowl, then season. Make a well in the middle, then add the egg yolk and half the milk. Whisk until smooth, gradually add the rest of the milk, then the butter and chives. Whisk the egg whites until starting to stiffen, then fold into the batter. To cook, lightly grease a frying pan, then sizzle spoonfuls for 2-3 mins on each side until golden, flipping them over when bubbling. Set aside and keep warm.
  • Make a dressing in a large bowl with the mustard, vinegar and olive oil. Add the leaves, then toss. Serve the salad, salmon and blinis with some beetroot on the side.

Poi Blini with Smoked Salmon

1 1/2 cups creme fraiche
6 tablespoons lemon juice
3/4 cup chopped shallots
1/2 cup chopped fresh dill
1 1/2 tablespoons salt
1/2 tablespoon black pepper
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons chopped fresh chives
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh thyme
3/4 cup buttermilk
1/4 cup milk
1 egg, lightly beaten
1/4 cup melted unsalted butter
1/2 cup peeled, steamed, and mashed taro root
2 ounces thinly sliced smoked salmon
3 tablespoons ikura (salmon roe)
3 tablespoons daikon sprouts
3 tablespoons micro greens (tiny mixed salad greens)
Extra-virgin olive oil

Steps:

  • First, make the Dill Creme Fraiche. In a non-reactive mixing bowl, stir together all the ingredients. Cover with plastic wrap and chill in the refrigerator for 2 hours.
  • For the Poi Blini, in a mixing bowl, stir together the flour, baking powder, salt, and fresh herbs. Stir in the buttermilk, milk, and egg. Fold in the melted butter and the mashed taro. Cover the bowl with plastic wrap and let the batter rest in the refrigerator for 1 hour.
  • To make the blini, heat a nonstick griddle or skillet over medium heat. Spoon the batter onto the griddle 2 tablespoons at a time to form 3-inch pancakes and cook them until golden, 1 to 2 minutes per side, flipping them over when bubbles appear on the top. You should have a total of 16 blini.
  • Put 2 poi blini on each serving plate. Spread them with the creme fraiche. Drape smoked salmon over each blini. Garnish with ikura, daikon sprouts, and micro greens, then drizzle lightly with olive oil. Serve immediately.

SMOKED SALMON AND DILL BLINIS

1 cup buckwheat flour
1 cup all-purpose flour
1 pinch salt
1 tablespoon fast rise yeast
2 eggs
1 1/2 cups milk, warm
2 tablespoons unsalted butter, melted
2/3 cup creme fraiche
3 tablespoons fresh dill, chopped
8 ounces smoked salmon, thinly sliced

Steps:

  • In large bowl, mix together buckwheat & all-purpose flour with salt.
  • Sprinkle in yeast & mix well.
  • Separate yolk & white of ONE egg, then set white aside, reserved.
  • Whisk together remaining whole egg AND yolk of first egg, along with warm milk & 1 tablespoon melted butter.
  • Pour egg mixture onto flour mixture & beat well to form smooth batter. Cover with plastic wrap & let rise in warm place 1-2 hours.
  • In large bowl, whisk reserved egg white until stiff peaks form, then gently fold into batter.
  • Preheat heavy-bottom frying pan or griddle & brush with melted butter.
  • Drop tablespoons of batter onto pan, spacing well apart, & cook about 40 seconds, until bubbles appear on the surface.
  • Flip over the blinis & cook for 30 seconds on other side.
  • Wrap blinis in foil & keep warm in low-temperature oven. Repeat with remaining mixture, buttering pan each time.
  • Combine creme fraiche & dill.
  • Serve blinis topped with salmon & dollop of cream.

A few years ago, a friend of Ina Garten's (The Barefoot Contessa) in Paris threw a party, but there was a problem. While he had taken care of the drinks, the food slipped his mind. Ina stepped in with these crowd-pleasing blini topped with smoked salmon and creme fraiche. It was a brilliant save, brightened even further with some bubbly. 8 tablespoons butter
1/3 cup buckwheat flour
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 extra-large egg
3/4 cup milk
2 tablespoons milk
1/2 lb smoked salmon, thinly sliced
1/4 cup creme fraiche
fresh dill, for garnish
salmon black caviar, for garnish (roe)

Steps:

  • In a small saucepan, clarify butter by simmering over low heat. Set aside, allowing milk solids to sink to bottom. Pour off clear yellow liquid & reserve; discard white sediment.
  • Whisk together flours, baking powder, salt, egg, milk and 1 Tablespoon clarified butter until smooth.
  • Heat 2 Tablespoons clarified butter in a small skillet and drop batter in 1 Tablespoon at a time.
  • Cook on medium-low heat until bubbles form on top side of blini, about 2 minutes. Flip and cook until golden brown.
  • Repeat with remaining batter.
  • Place 1 piece of smoked salmon on top of each of the blini.
  • Add a dollop of creme fariche, a dill sprig and a sprinkling of salmon caviar, if desired.
  • Serve immediately.

GIANT SMOKED SALMON & BEETROOT BLINI

These super-sized buckwheat pancakes make a great dinner party or festive starter for sharing

Number Of Ingredients 15

200g tub crème fraîche
2 tbsp horseradish sauce
zest 1 lemon , juice of ½, plus wedges to serve
140g cooked beetroot (not in vinegar), drained and finely diced
1 tsp rapeseed oil , plus a drizzle
200g pack smoked salmon
1 tbsp small capers , drained and rinsed
handful rocket leaves
100g buckwheat flour
100g self-raising flour
1 tsp baking powder
225ml milk
2 large eggs , separated
25g butter , melted, plus extra for cooking
drizzle of oil , for cooking

Steps:

  • First, make up the blini batter. Put the flours, baking powder, ½ tsp salt, the milk, egg yolks and melted butter in a bowl and whisk until smooth. In another bowl, whisk the egg whites until they hold stiff peaks. Stir a good spoonful of the whisked whites into the batter to loosen the mixture, then add the remaining egg whites and carefully fold everything together with a big metal spoon.
  • Heat a small knob of butter and a drizzle of oil in a large frying pan, roughly 23cm wide across the base. Pour a third of the blini mixture in the pan, using your spoon to encourage the batter towards the edge of the pan. Leave to cook for a few mins, until the blini starts to set around the edges and the underside is golden brown. Slide onto a plate, then carefully flip back into the pan and cook for a further 1-2 mins until golden. Repeat with the remaining mixture. Leave the blinis to cool on a wire rack, then place on a plate, separated by a layer of baking parchment and covered with cling film. The blinis will keep like this for 24 hrs.
  • Mix the crème fraîche, horseradish, most of the lemon zest, a good squeeze of lemon juice and some seasoning in a bowl. In a second bowl, toss the beetroot, oil and a squeeze of lemon juice. Set aside until ready to serve.
  • Place each blini on a board or large plate. Spoon on dollops of crème fraîche, arrange slices of salmon over and scatter beetroot, capers and the remaining lemon zest on top. Finish with a few rocket leaves and a drizzle of oil. Cut and serve with lemon wedges.

There's no more festive or luxurious party snack than buckwheat blinis with caviar and smoked salmon, but with chef Jenn Louis's recipe, they're easy to make at home.

1 cup whole milk
5 tablespoons unsalted butter, divided
1/2 cup all-purpose flour
1/3 cup buckwheat flour
4 teaspoons sugar
1/4 teaspoon kosher salt
1 1/4 teaspoons active dry yeast
2 large eggs, lightly beaten
4 ounces crème fraîche
4 ounces smoked salmon
2 ounces caviar of your choice
minced chives

Steps:

  • Place milk and 3 tablespoons butter in small saucepan. Stir over low heat just until butter melts. Meanwhile, whisk together both flours, sugar, salt, and yeast in a medium bowl. Pour warm milk mixture into dry ingredients and whisk until smooth. Cover with plastic wrap and let rest at room temperature until doubled in volume, 1½-1¾ hours.
  • After resting, batter will be bubbly and lofty. Whisk to deflate; then stir in beaten eggs just to incorporate-the texture should be silky. Meanwhile, set a skillet over medium heat and add a tablespoon of butter. Working in batches, pour 2 tablespoons batter for each blini onto skillet, spacing apart. Cook until bubbles form on top and they begin to pop, about 1½ minutes. Turn blinis; cook until golden brown on bottom, another 1½ minutes (add more butter to the pan as you need it). Transfer blinis to a serving platter. Tent with foil to keep warm while you cook remaining blinis. Makes approximately 12 blinis.
  • Assembly: Serve blinis with a dollop of crème fraîche, smoked salmon, and caviar-the more the better!
