SALMON DILL SOUP
This is the best soup I have ever made, according to my husband, who loves salmon so much that he could eat it every day. Salmon is a treat for both of us, so when I get some, I try to make it a very special dish like this one. -Hidemi Walsh, Plainfield, Indiana

Steps:
- Place the first 4 ingredients in a saucepan; bring to a boil. Reduce heat to medium; cook, uncovered, until vegetables are tender, 10-15 minutes. , Add mushrooms. In a small bowl, mix flour and milk until smooth; stir into soup. Return to a boil; cook and stir until mushrooms are tender. Reduce heat to medium; stir in cheese until melted., Reduce heat to medium-low. Add salmon; cook, uncovered, until fish just begins to flake easily with a fork, 3-4 minutes. Stir in pepper and salt. Sprinkle with dill.

CHILLED CUCUMBER SOUP WITH SMOKED SALMON AND DILL
Steps:
- Melt butter in heavy large pot over medium heat. Add onions and sauté until slightly softened, about 3 minutes. Add cucumbers and potato; stir 1 minute. Add broth, dill sprigs, and 1 teaspoon salt. Increase heat and bring to simmer. Reduce heat to low; cover and simmer until cucumbers and potato are tender, stirring occasionally, about 25 minutes. Working in batches, puree soup in processor until smooth. Return to pot. Cool 15 minutes. Whisk in 1/2 cup crème fraîche and 4 tablespoons minced dill. Cover and chill until cold, about 4 hours. (Can be made 1 day ahead. Keep chilled.) Taste soup, adding more salt if desired. Ladle soup into 6 bowls. Place dollop of crème fraîche in center of each bowl; sprinkle with smoked salmon and remaining 2 tablespoons minced dill.
SMOKED SALMON AND CREAM CHEESE SOUP
This lightly-creamed soup is truly special. It works as comfort food for a casual soup & salad dinner or a starter course for an elegant dinner party. On our recent trip to the US, my SIL gave me the recipe. She said her mother had copied it from a cookbook & did not recall the source. I wish I knew who to acknowledge & thank for this classy taste sensation. I hope you try this & enjoy it as we did. (PLS READ NOTES shown as steps 7, 8 & 9 of prep)... *Edited To Add* This recipe was revised to include the addition of garlic & Old Bay Seasoning.

Steps:
- Melt butter in med-size stock pot over med heat. Add onion + garlic & saute till onions are soft, 10-15 minutes.
- Stir in dill, Old Bay Seasoning, tomatoes & smoked salmon. Cook 3 minutes. Then add flour & cook 1 min more.
- Gradually stir in water & heat to a soft boil. Reduce heat & simmer uncovered over med-low heat for 20 minutes.
- Stir in spinach & simmer 5 more minutes.
- Stir in cream cheese (1 oz at a time) over low heat, allowing ea bit to melt into the soup.
- When all the cream cheese has been added & the soup is smooth, stir in the vodka & lemon juice. Taste for seasonings & serve immediately.
- NOTES: I entered this recipe as given to me & made a half recipe w/2 chgs in my trial version.
- I left out the vodka (none in the house!), subbed dry white wine & frankly doubt I will ever use the vodka. I pd homage to a DH pers pref & subbed diced broccoli florets for the spinach. I pd homage to 1 of my own by adding 4 oz baby shrimp.
- Pers pref are often at the heart of any success a recipe enjoys. I found this soup in need of salt, but DH did not. He found the lemon juice a bit excessive, but I did not. Bottom line is tasting for your pers pref is advised.

SMOKED SALMON AND DILL SOUP
Don't want to lose this. Sounds like a good use of leftover smoked salmon. You need 6 oz. smoked salmon to make this.

Steps:
- Melt butter in a large saucepan.
- Gently cook shallots in butter until soft.
- Stir in flour, then gradually add milk; bring to a boil; add stock and and cucumber.
- Simmer 10 minutes.
- Reserve several salmon bits for garnish and chop remaining salmon bits and add to stock mixture.
- Cook gently 2-3 minutes.
- In a food processor fitted with a metal blade, or a blender, process soup to a puree.
- Clean pan and return soup to pan; stir in chopped dill and half and half.
- Season with salt and pepper and gently reheat.
- Garnish with salmon bits. lemon pieces and dill sprigs.

Steps:
- In a small skillet cook the shallot in the butter over moderately low heat, stirring, until it is soft, transfer the mixture to a bowl, and let it cool.
- Stir in the salmon, cream cheese, dill, chives, lemon juice, and salt and pepper to taste.
- Stir until the filling is throughly mixed and chill the filling, covered, until well-chilled.
- Put 1 won ton wrapper on a lightly floured surface, add 1 tablespoon of the filling in the center,brush the edges well, trim the excess dough around the filling.
- Repeat with remainder of wrappers, then transfer to a dry kitchen towel, turning occasionally to let them dry slightly.
- Bring a pot of boiling salted water to a gentle boil and in it cook the ravioli in batches for 2 minutes, or until they rise to the surface and are tender.
- (Do not let the water boil vigorously once the ravioli have been added.) Transfer the ravioli as they are cooked with a slotted spoon to a dry kitchen towel or paper towels to drain and keep them warm.
- Arrange 3 of them on each of 4 heated plates.
- Drizzle the ravioli with the melted butter and serve them with the sour cream and dill.

PAT'S SMOKED SALMON SOUP
This recipe comes from a book that was created for charity between all the churches in our town and surrounding towns. The lady that this recipe belongs to is a member at the Baptist church but all nominations gave there favourite recipes, I thought this one was a bit different. If you don't like wine in your food just replace it with stock the amount is 1/2 of a bottle.

- Mix all the veetables in a bowl.
- Sweat 1/2 the vegetables in 1/2 the butter without browning for 5 minutes and reserve. Brown the other half in a separate pan in the remaining 1/2 of butter. Add smoked salmon trimmings to the browned vegetables and sweat for 2 minutes. Mix in the white wine and bouquet garni and reduce by half. Add fish stock to cover or water if not available. Simmer for 25 minutes and then strain. Add to the reserved vegetables. Cook for a further 15 minutes then stir in the cream. Simmer for 5 minutes. serve with a garnish of chopped chives.

Blinis are small pancakes of Russian origin and are an easy-to-make appetizer! Preparation time does not include time needed for batter to rise!

- In large bowl, mix together buckwheat & all-purpose flour with salt.
- Sprinkle in yeast & mix well.
- Separate yolk & white of ONE egg, then set white aside, reserved.
- Whisk together remaining whole egg AND yolk of first egg, along with warm milk & 1 tablespoon melted butter.
- Pour egg mixture onto flour mixture & beat well to form smooth batter. Cover with plastic wrap & let rise in warm place 1-2 hours.
- In large bowl, whisk reserved egg white until stiff peaks form, then gently fold into batter.
- Preheat heavy-bottom frying pan or griddle & brush with melted butter.
- Drop tablespoons of batter onto pan, spacing well apart, & cook about 40 seconds, until bubbles appear on the surface.
- Flip over the blinis & cook for 30 seconds on other side.
- Wrap blinis in foil & keep warm in low-temperature oven. Repeat with remaining mixture, buttering pan each time.
- Combine creme fraiche & dill.
- Serve blinis topped with salmon & dollop of cream.

SMOKED SALMON, DILL AND POTATO PIE
Egads but I love salmon no matter what way it's served and smoked salmon is a real treat. This makes my mouth water just to think of it.

- Peel the potatoes and slice thinly, cutting lengthways.
- The quickest way to do this is with a mandoline- a blade set in a wood or steel frame- or with the slicer attachment of your food processor.
- Rinse the potatoes and shake dry.
- Place the crème fraîche or cream in a heavy-bottomed saucepan, big enough for both the potatoes and the cream.
- Gently melt the cream.
- Stir in the spring onions and season with half a teaspoon of salt and a generous grating of pepper.
- Add the potatoes and stir them around thoroughly so all the slices are coated with cream.
- Cover the pan and cook, stirring occasionally and checking that the bottom slices aren't sticking and burning, for 15 minutes.
- Remove the lid.
- The potatoes will now be almost cooked and there will be far more sauce.
- Give everything a good stir and remove from the heat.
- Preheat the oven to 360F or 180 degrees C.
- Smear a 1.
- 5 to two-litre capacity gratin dish with the butter.
- Whisk the egg yolks with the milk.
- Chop the dill.
- Add one third of the potato mixture to the buttered dish and smooth it out.
- Scatter half the dill over the potatoes, season again with salt and pepper and then cover with half the smoked salmon.
- Dribble over half the egg mixture.
- Make another layer exactly the same and then finish the pie with potato, arranging the top so the surface is smooth.
- Place the dish in the oven and cook for 25 minutes until the top is patched with brown and the pie is cooked through, the potato and salmon held in a creamy, dill custard.

- Cook bacon in a 3-quart heavy saucepan over moderate heat, stirring frequently, until crisp, then transfer to paper towels to drain. Pour off all but 2 tablespoons fat from saucepan, then add onion, celery, potatoes, salt, and pepper and cook, stirring occasionally, until onion is softened, 5 to 7 minutes. Stir in water and bring to a boil, then reduce heat and simmer, covered, until potatoes are almost tender, about 10 minutes.
