The chipotle raspberry marinade is actually labeled in the grocery store as "Chipotle Raspberry Sauce" and is found in the marinade section! Recipezaar would not accept it listed in the ingredients unless listed as follows! I served with cornbread and homemade raspberry butter. Veggie on the side was steamed green beans. Hope you enjoy.

3 lbs pork roast
8 ounces dry onion soup mix
15 ounces raspberry chipotle sauce (either store bought or your own recipe)

Steps:

  • Place pork roast in crock pot.
  • Sprinkle roast with dry onion soup mix and pat soup mix into the pork roast.
  • Pour Chipotle Raspberry Sauce on top of roast.
  • Be sure to use the whole jar and coat the whole top and sides of roast.
  • I have a brand new fabulous crock pot so the timing may be different on yours: Set crock pot on low for 6-7 hours and on high for 3. I set mine the first time on high for 4 and was a little dry. I like my pork medium well though! So 3 hours on high worked for me.

1 (4-pound) pork loin
Extra-virgin olive oil, as needed
3 tablespoons dry spice rub for pork
1 (10-ounce) jar seedless raspberry jam
1 (5-ounce) bottle chipotle hot pepper sauce (recommended: Tabasco)

Steps:

  • Preheat stovetop or outdoor smoker to approximately 230 degrees F.
  • Trim the white "silver skin" from the pork loin and lightly coat the entire loin with olive oil. Sprinkle the rub liberally on all sides of the loin.
  • Place pork in the smoker and smoke until internal temperature or pork reaches 150 degrees F, about 1 1/2 to 2 hours. Remove pork from smoker and wrap lightly in aluminum foil.
  • Meanwhile, preheat broiler.
  • Place the jam in a medium bowl and stir in about 1/3 of the chipotle sauce. Mix well, adding more chipotle sauce until the heat and taste reach your personal preference.
  • Unwrap the pork and cover with the glaze. Place on a broiler pan and broil until glaze is bubbling, about 3 minutes. Slice pork against the grain and serve.

A different type of smoked and slow cooked pork that really gives an unexpected twist to those that expect traditional bbq flavor. Your guests will impressed....especially when you tell them how easy it is to prepare.

5 -9 lbs boston butt (bone in)
1 cup favorite your favorite barbecue rub
1/2 cup kosher salt
1 (10 -12 ounce) bottle raspberry chipotle sauce or 1 (10 -12 ounce) bottle glaze

Steps:

  • THE NIGHT BEFORE -- OR A FEW DAYS AHEAD --
  • Mix kosher salt with dry rub (if your dry rub already has salt in it, omit this step).
  • Rub roast generously on all sides with rub mixture.
  • Tightly wrap seasoned roast in plastic wrap and refrigerate overnight or for 24-48 hours.
  • The morning that you plan to cook --
  • Let roast stand at room temperature for about 20 minutes.
  • COOKING THE ROAST.
  • Use apple wood chips or Adler wood chips that have been soaked in water for approx 20 minutes to provide a good smoke for the roast.
  • Smoke on indirect heat for approx one hour.
  • Remove roast from grill/smoker and wrap in double wrap in foil fat side up and place in dish or roasting pan at least 3 inches deep.
  • Continue cooking roast in a 225-240 degree oven for 7 to 9 hours or until bone pulls out with ease.
  • Open the foil and drain most but not all of the juice.
  • Remove the top layer of fat from the roast.
  • Using large forks, break the roast apart (similar to shredding).
  • Pour chipotle sauce over roast and work sauce into meat ( be sure to leave a nice layer of sauce on top).
  • Increase oven to 300 degrees.
  • Keeping foil rolled back, return glazed roast to oven and allow roast to caramelize -- 30-45 minutes.
  • Remove roast from oven and serve.

2 (1 lb each) pork tenderloins
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
salt and freshly ground black pepper
1 tbsp olive oil
1 bottle Razzpotle

Steps:

  • Wash pork tenderloins in cold water and pat dry. In a small bowl combine rosemary, thyme, and salt and pepper to taste. Mix well; rub over tenderloins. Allow to stand for 10 minutes. Heat oven to 350 degrees. Heat oil in a heavy, ovenproof skillet, over medium heat. Place tenderloins in skillet and sear, about 1 minute per side. Place skillet in oven and roast tenderloins until thermometer inserted into thickest part of meat registers 160 degrees, usually about 35 minutes. Remove pork to a serving platter and coat generously with Razzpotle sauce.

1/3 cup olive oil
2 chipotle chiles
1/3 cup brown sugar substitute
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons soy sauce
1/3 cup water

Steps:

  • Place pork roast in baking dish.
  • In a separate bowl, assemble the remaining ingredients, stir well.
  • Pour marinade over roast, cover and place in the refrigerator for at least 1 hour.
  • In a preheated oven, cook at 500 degrees for 10 minutes, then reduce heat to 300 degrees.
  • Cook until roast reaches an internal temperature of 170 degrees.
  • Allow to cool five minutes before serving.

Grilling is cooking over hot coals. Barbecuing is cooking over indirect coals at low heat for a long time, usually with aromatic smoke added. It's the "crock pot" of charcoal cooking. I use an "El Cheapo Brinkman" smoker and get fantastic results. It's called "el Cheapo" because they only cost about $50. It will cook just as well as one costing thousands, it just won't impress your friends as much, if you're in to that sort of thing. The rub is from "How to Cook Meat" The cooking time includes 48 hours brining time.

3 quarts brine, solution (#11266 from Di Neal is great)
1 whole boston butt (you don't need anything "better")
1/4 cup sugar
1/4 cup paprika
1 tablespoon kosher salt
2 tablespoons black peppercorns
2 tablespoons cumin seeds
2 tablespoons new mexico chile powder, whole ((I've used Ancho, Smoked Chipotle, and Tex-Mex, they're all good)
3/4 cup white vinegar
3 -4 tablespoons hot sauce (Cholula or Tapatio)
1 tablespoon sugar
kosher salt
fresh ground black pepper

Steps:

  • Prepare the brine solution and let it cool.
  • Trim any surface fat from the roast.
  • Place the roast in a large zip-lock bag and add the brine.
  • Seal the bag and place it in a bowl to catch any drips.
  • Refrigerate at least 24 hours, 48 hours is mo better.
  • Turn the bag every 6 hours.
  • After 48 hours prepare the rub.
  • Grind the cumin seeds, chili powder, and peppercorns in a spice mill.
  • Mix the cumin, pepper, sugar, paprika, salt, and chili powder in a medium bowl.
  • Now you have a choice.
  • Barbecue it or cheat and cook it in an oven or a crock pot.
  • Whichever you decide preheat to 225°F.
  • Remove the roast and discard the brine.
  • Thoroughly dry the roast with paper towels.
  • It's called a rub, so rub it hard and well, work it into the meat.
  • When it is completely covered, if there is any rub left rub that into the roast 'til the spices are all used.
  • Place the roast on the top rack of the smoker and place presoaked hardwood (Alder, Apple, Cherry, Hickory, Mesquite or whatever turns you on) on the coals.
  • Talk with friends and sip a nice ale as you check the cooker temperature.
  • Adding charcoal and fresh wood to maintain 225°F (Go easy on the wood. It's far better to under smoke and end with a delicate flavor than achieve a flavor too strong to be enjoyed).
  • Cook for 10-12 hours.
  • If you choose to cheat, place the roast in a crock pot,set on low and cook for 10-12 hours.
  • If you opt for the oven, place the roast in a pan and roast it for 10-12 hours.
  • Note; If you choose to use the smoker the juices will drop into the water basin. If you use a crock pot or oven you will have to drain the juices fairly regularly. I heated the nozzle of my nylon turkey baster and squeezed it to make the hole flatter and smaller, the thin juices don't dribble out so easily.
  • Each works well but with the charcoal cooker you get smoked meat and the fun of being forced to sit around with friends drinking ale and watching the coals. The cooking of food should be as much fun as the eating of it.
  • When done let it cool to handling temperature.
  • Cut, chop, or shred the meat into bite sized servings.
  • Mix the vinegar, hot sauce, and sugar.
  • Add salt and pepper to taste.
  • Toss vinegar mix with the meat.
  • Reheat and serve. Great with a garden salad and a baguette to soak up the juice.
