This is a wonderful appetizer for oyster lovers. Simple to prepare with readily available ingredients. Great for unexpected guests. Spread on Baguettes or dip with crackers.

EASY SMOKED OYSTER SNACK
I keep these ingredients on hand for when I need to come up with a quick and easy snack or hors d'oeuvre. Frankly, I'm guessing about how many I get from one block of cream cheese and 1 can of smoked oysters. I just keep going until one of the ingredients is used up or until I have all I need for the occasion.

HOW TO SMOKE OYSTERS WITH GUINNESS BRINE
This is a 1, 2, 3, 4, 5 recipe on smoking oysters that is so easy to do it hurts. This recipe partially came to me from a friend on the island then after trying his way I modified to as it stands now. The only tip I can give you is to always use fresh ingrediants for the best results. Also make sure you have a couple of extra pints ready for when your done smoking these baby's it will be well worth the work.

- Oysters have very high water content, so drain the oysters very well. Place the oysters in a strainer over night in the refrigerator. Remove from refrigerator and blanch in boiling water 4 to 6 minutes. Oysters should plump up a bit and be firm to the touch. Remove them and rinse in cold water. Place oysters in the first 3 ingredients. Dice peppers and stir gently into the brine and oyster mix. Cover and let sit 10 to 12 hours in refrigerator. Stir up occasionally to coat all oysters with the brine. Remove from brine, rinse and pat dry. Place on racks and allow to air dry 2 - 3 hours. If you have stainless steel wire racks place 2 together to form a checker pattern before placing oysters on them and spray with a non-stick coating.
- Start smoker according to the directions that came with your device. When a good heavy smoke has started, use any wood chips you like, personally I use a blend of equal parts mesquite, cherry and arbutus, place racks in your smoker. Keep heat down to 130 to 150 degrees fahrenheit. Oysters will shrink about 50% during smoking. When the oysters feel firm and only depress slightly they are finished. Depending on your smoker, times could very from 15 minutes to 1 hour. If you are using a cold smoke technique, it could take 2 - 3 hours.
- When they are done remove them from the smoker, sit back with a pint, and enjoy.
- If you wish to can them go right ahead. If you are using the small wide mouth canning jars (these are the best size, 125 to 250 ml max.) add 1 to 3 TBLS. E.V.O.O. to the jar over the oysters before sealing.

PETITE SMOKED OYSTER STEW W/BACON, POTATOES AND ONIONS
I LOOOOOOVE smoked oyster stew!! This is my own easy version! It's delish! Enjoy! :) Time does not include cooking the bacon, I always have cooked bacon on hand in the freezer that I use for ocaisions like this.

- Cut up unpeeled potatoes into bite-sized cubes and boil til tender in small saucepan. Once water starts to boil, will only take about 4 minutes.Check them with a knife for tenderness.
- *While potatoes are boiling, saute chopped onion in butter til tender.
- Drain saucepan of potato water keeping potatoes in there.
- Add half and half, milk, boullion, garlic powder, pepper, oysters and cooked onions with the butter and juices.
- Heat over LOW heat til heated through.
- Stirring gently ocaisionally.
- *I just use a fork to lift and drain the oysters out of the can, and what's ever on them oil-wise, is fine. Just adds flavor anyways! If your stew is too oily on top, just skim off with a spoon, or don't worry about it! The crackers will absorb that! ;).
- Garnish heavily, each bowl with bacon.
- Serve with oyster crackers or saltines.
- Some like a little hot sauce served with on the side, too.
- *If using bacon that you have on hand that has been precooked, just wrap in papertowel and microwave about 10 seconds. (Thaw cooked bacon first if using it from your freezer and it's not already thawed.).

- Preheat the broiler with oven rack 5 inches from the heat. Line a baking sheet with heavy-duty aluminum foil.
- Spread the butter evenly on both sides of the bread, and place on the prepared pan. Broil in preheated oven until deep golden brown, about 2 minutes per side.
- Spread 1 ½ tablespoons Deviled Egg Spread onto each toasted bread slice. Sprinkle evenly with chopped egg whites and diced celery. Cut each slice into 4 triangles.
- Top each triangle with smoked oysters and about ¼ teaspoon of trout roe. Garnish with chopped chives, and serve with lemon wedges and hot sauce.
- Serve with: Green salads; potato, tomato, or egg dishes; grilled vegetables
