GOOSE PASTRAMI

Goose Pastrami image

I specifically call for Canada goose breasts here because they're the only ones I think are large enough to make this with, although domestic goose breasts will also of course work, if you have them lying around. Ditto for swan or sandhill crane breasts. Could you do it with snow goose or speck breasts? Yeah, but they'll be a lot smaller, and I'd only cure them for 24 hours instead of 24 to 36.

Provided by Hank Shaw

Categories     Cured Meat

Time 3h20m

Number Of Ingredients 11

2 skinless Canada goose (or domestic goose breasts
Kosher salt (see recipe notes)
3 grams Instacure No. 1, (good for up to 3 pounds of goose)
1/2 teaspoon dried thyme
1/4 teaspoon celery seed
1/4 teaspoon caraway seed
1 teaspoon sugar
1/4 teaspoon crushed juniper (optional)
1 teaspoon ground black pepper (plus 1 tablespoon ground black pepper)
1/4 cup brandy (red wine, vinegar or water)
1 tablespoon ground coriander

Steps:

  • Weigh your goose breasts. For every pound of goose, you'll need 10 grams of kosher salt, which is about a tablespoon. It's OK if you are a little off on this measurement. Mix the salt, curing salt, sugar as well as the thyme, celery seed, caraway, juniper and the teaspoon of black pepper and grind them all together in a spice grinder. Pack the goose breasts with this mixture, massaging it into the meat. Put the goose into a closed container in the fridge for 24 to 72 hours.
  • When you are ready, rinse off the goose and pat it dry. It's fine if you have a little bit of the cure stuck to the meat, but you don't want too much. Put the goose breasts on a rack in the fridge and let them dry uncovered for a day.
  • Dip the goose into the brandy -- or really any other liquid you want -- and then coat thoroughly in the remaining black pepper and ground coriander seed. I like to grind this myself so the texture is a little coarse, a little fine.
  • Smoke the goose breasts until the interior hits 140°F, which takes me about 3 hours.
  • Let the goose pastrami cool and eat as lunch meat, or on crackers or whatever.

SMOKED GOOSE WITH WILD RICE STUFFING

Smoked Goose with Wild Rice Stuffing image

Provided by Food Network Kitchen

Categories     main-dish

Time 3h

Yield 4 to 6 servings

Number Of Ingredients 37

2 whole (3-pound) wild goose
2 tablespoons softened butter, divided
Salt and pepper, to taste
2 tablespoons olive oil
2 carrots, cut in chunks
2 celery stalks, cut in chunks
1 onion, cut in half
1 turnip, split
1 garlic bulb, cut in half
2 bay leaves
1 tablespoon whole peppercorns
2 quarts cold water
Reserved goose bones
2 tablespoons butter, plus extra for coating geese
1 onion, diced
2 garlic cloves, minced
2 carrots, diced
2 tablespoons marjoram leaves, plus extra for coating geese
3 tablespoons fresh sage, torn in pieces, plus extra for coating geese
2 cups dry red wine
2 cups wild rice, cooked
2 cups rye bread cubes, dried
1 cup roasted chestnuts, shelled
Salt and pepper, to taste
1 egg
1 tablespoon caraway seeds
1 cup goose stock or chicken broth
1 cup Port
1 star anise
1 teaspoon juniper berries
1 teaspoon whole allspice
5 whole cloves
1 piece fresh ginger, about 1-inch long
1 cinnamon stick, broken in half
1 orange, peel cut in large strips
1 cup dried cherries, divided
2 cups goose stock or chicken broth

Steps:

  • To prepare the goose, it is necessary to remove the bones from the bird. First, turn the bird upside down with the back facing you. Cut out the backbone with poultry shears, be sure to cut close and not lose the underside of the breast meat attached to the back. Now, at an angle, carefully slit along both sides of the rib cage with a boning knife to remove the breast plate. Scrape away the meat as you cut. Using a towel, grab the thigh bones from inside the goose and pull the leg towards you out of the socket, leaving the meat attached to the body. Next, sever the wings at the joint as close to the body as possible. Reserve the wings and bones for the stock. Repeat the process with the other goose.
  • The geese are now boneless. Carefully slice the breast to open them up and make an even thickness. Smear the surface of each goose with 1 tablespoon of softened butter; season with salt and pepper. Set aside while preparing the stock and stuffing.
  • To prepare the goose stock, coat a large stockpot with olive oil and place over medium heat. Add the vegetables and saute for 2 minutes. Add the remaining ingredients, including all the geese bones, and cook for 1 hour.
  • To prepare the stuffing, melt butter in a skillet over medium heat. Add the onion, garlic, carrot and herbs. Saute for 5 minutes then add the wine. Simmer for about 10 minutes to reduce the wine to a tight paste. Add the wild rice, rye bread, and chestnuts. Stir and season with salt and pepper. Scrape the skillet mixture into a large bowl, blend in the egg, caraway seed and 1 ladle full of goose stock; mix thoroughly until evenly moistened. Spoon a layer of stuffing evenly to the edges of each goose and roll up like a jellyroll. Tie securely with butcher?s twine.
  • Rub the outside of the goose roasts with butter, sage and marjoram for added flavor. Transfer the stuffed geese to a stovetop or conventional smoker and follow manufacture?s directions. Cook in a preheated 350 degree F oven for 20 to 40 minutes until juices run clear. Be careful not to overcook, as the meat would be extremely tough and dry. Let stand 10 minutes to allow the juices to settle. Cut off the twine and slice vertically to form pinwheels.
  • To prepare the sauce, coat a stockpot with Port and place over medium heat. Bring up to a simmer then stir in the spices and orange peel. Add 1/4 cup dried cherries and simmer to reduce the alcohol, about 5 minutes. Add the goose stock and continue to simmer for 15 minutes. Strain the sauce into a smaller saucepan to remove the solids. Add remaining 3/4 cup of dried cherries and serve.

  • If you are using the Scotch, put the goose breasts in a bowl and coat them with the whisky. Put them into a closed container just about large enough to hold them and refrigerate overnight.
  • The next day, mix all the remaining ingredients in a bowl. Drain the goose breasts, or just pat them dry if you have not done the Scotch soak. Massage the spice mixture into the meat, making sure every bit of the goose is covered. Put the goose breasts into a closed container that just barely fits the meat. Pour in any excess salt/spice mixture, cover and refrigerate for 3 to 4 days. Every day during the curing process, turn the goose breasts over so they are evenly coated.
  • When the meat has cured, it will be dark red and slightly firm to the touch throughout. Rinse it off briefly under cold running water and pat it dry. Let the meat sit out in a cool place for 2 to 4 hours, preferably with some sort of breeze or fan on it. Or you can leave it to dry in the fridge uncovered overnight.
  • Truss the meat as you would a roast, or stuff it into sausage netting. If you do the netting, wear an apron, as you will need to manhandle the goose breast into the netting. Take your time and do it little by little. Tie off the ends of the string or netting, leaving enough at the end with the most fat -- this should be the thick end of the breast -- to hang. You want the fattiest part of the goose breast at the top, so the fat can drip down and keep the meat moist.

  • Dice meat and fat into about 1 inch chunks. Toss in salt, pepper, rosemary, garlic and marjoram. Mix well.
  • Make sure all meat and fat is cold. You can even keep it in the freezer until it get a little bit frosty. When it is 40°F or colder (but not a sold rock), grind through the small die of your grinder. If it is hot out, or really if your kitchen is warmer that 68°F or so, grind into a bowl that is set in another bowl full of ice. The cold is critical to bind the meat and fat nicely. If it gets too warm, it will break and feel crumbly when you eat it, which isn’t very nice.
  • Put the meat mixture into the bowl of a stand mixer. Add the wine and mix on the lowest setting of your mixer for 1 minute to 90 seconds. You can do it by hand with a wooden spoon, too. You want it to look like a paste.
