These delicious Traeger Grilled Clams are wonderful as an appetizer, or serve with some pasta or rice and make it a meal!

2 pounds live butter or manilla clams, washed
2 cups water
1/2 cup white wine
4 teaspoons minced garlic
1/4 cup minced shallots
1/8 cup chopped fresh parsley
1/2 teaspoon kosher salt
1 stick salted butter

Steps:

  • Fire up your Traeger according to factory instructions and preheat to 400° (or high).
  • Place everything in a large Dutch Oven, and put it on your preheated Traeger grill at 400° for 20-25 minutes, or until all of the clams are opened.
  • Once the clams are open, enjoy! Serve with additional melted butter if that's your thing, or just slices of toasted crusty bread to sop up the clam nectar / sauce at the bottom of the pan.

18 littleneck clams, scrubbed
2 diced seeded plum tomatoes
1 shallot, thinly sliced
Leaves from a few sprigs of flat-leaf parsley and oregano sprigs, coarsely chopped
A pinch of red pepper flakes
1 tablespoon unsalted butter (optional)
1/4 cup dry white wine

Steps:

  • 1. Stack two 2 1/2-foot-long pieces of heavy-duty aluminum foil. In the center, heap 18 littleneck clams, scrubbed; 2 diced seeded plum tomatoes; 1 shallot, thinly sliced; and the leaves from a few sprigs of flat-leaf parsley and oregano sprigs, coarsely chopped. If desired, add a pinch of red pepper flakes. Top with 1 tablespoon unsalted butter (optional). Fold up the sides of the foil to form a pouch.
  • 2. Pour 1/4 cup dry white wine over the clam mixture, and roll the top edges over several times to seal tightly, leaving plenty of room for the clams to steam.
  • 3. Place the pouch on the hot grill and cook for 12 to 15 minutes, until the shells have opened. Serve immediately with grilled crusty bread.

  • cut raw bacon into 1 inch pieces and saute until crispy. Remove bacon and let coll on a paper towel. saute the scallions, diced bell pepper and garlic in the bacon fat. then let cool to room temperature.
  • fold the sauteed vegies, crispy bacon and 1/4 cup of the pork king good breadcrumbs with the softened butter. then mix in remaining seasonings and 2 tbsp parmesan cheese.
