SQUID BREAD SALAD WITH SMOKED CHILE VINAIGRETTE

Extra-virgin olive oil
Salt and freshly ground pepper
1 loaf day-old Italian bread, cut into 1-inch thick slices
2 ripe beefsteak tomatoes, cut into 1/2-inch thick slices
1/4 cup chopped fresh Italian parsley leaves
Smoked Chile Vinaigrette, recipe follows
1/4 cup fresh mint leaves, torn
Red wine vinegar, for drizzling, optional
1/3 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon pureed chipotle peppers in adobo sauce
1 tablespoon honey
2 cloves garlic, finely chopped
Salt and freshly ground pepper
3/4 cup olive oil or canola oil
2 tablespoons finely chopped fresh mint leaves

Steps:

  • Heat grill to high. Place the squid in a bowl, drizzle with a few tablespoons of oil, and season with salt and pepper. Grill the squid bodies and tentacles for about 2 minutes per side. Remove from the grill, let rest 5 minutes, then cut the bodies crosswise into 1/2-inch thick rings. Keep the tentacles whole.
  • Brush the bread lightly with oil on both sides and season with salt and pepper. Grill for approximately 1 minute per side or until lightly charred. Remove and cut each slice into 1/2-inch dice. Brush the tomatoes with oil, season with salt and pepper, and grill until slightly charred, about 1 minute; remove and coarsely chop.
  • Toss the squid, bread cubes, and parsley with some of the vinaigrette in a large bowl. Let stand for 10 minutes. Arrange the tomato slices along the bottom of a serving platter. Top with the squid-bread mixture. Garnish with torn mint and drizzle with additional olive oil and red wine vinegar, if desired.
  • Whisk together vinegar, mustard, chipotle puree, honey, and garlic in a medium bowl. Season, to taste, with salt and pepper. Slowly whisk in the oil until emulsified. Stir in the mint. Let sit at room temperature for 15 minutes before using.

Cornbread Salad with Smoked Chile Vinaigrette image

3 cups 1/2-inch diced stale cornbread
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/4 cup finely diced red onion
1/4 cup finely sliced green onion
2 cloves garlic, finely chopped
1/4 cup rice wine vinegar
1/3 cup olive oil
1 teaspoon pureed canned chipotle pepper
1 tablespoon honey
1/4 cup coarsely chopped cilantro
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees F. Spread cornbread in an even layer on a baking sheet and bake for 20 minutes, or until crispy. Place the cornbread in a large bowl and add the peppers, onions and garlic. Mixtogether the vinaigrette ingredients, add to the cornbread mixture and toss to combine.
  • Let sit 15 minutes at room temperature before serving.

2 tablespoons canola oil
4 cloves garlic, finely chopped
2 small yellow onions, cut into small dice
1 poblano pepper, ribs and seeds removed, cut into medium dice
1/4 cup chili powder
3/4 to 1 cup heavy cream
1/2 cup chicken stock, plus more if needed
One 15-ounce can hominy, drained and rinsed
2 pounds smoked chicken thighs, shredded (can also be grilled if you don't have a smoker)
One 15-ounce can white beans, drained and rinsed
1/4 cup masa harina, plus more if needed
Kosher salt
Serving suggestions: shredded fontina cheese, tortilla chips, sour cream and lime wedges

Steps:

  • Heat the canola oil in a large pot over medium-low heat. Add the garlic, onions and poblanos and cook for about 10 minutes or until soft. Add the chili powder and continue to cook for approximately 3 minutes, stirring frequently. Add the heavy cream, chicken stock, hominy and shredded chicken thighs. Bring to a simmer, then reduce the heat to the lowest possible setting and cook for 45 minutes.
  • To finish, add the white beans and masa harina. Bring back to a simmer to thicken, stirring frequently. Season with kosher salt. If desired, adjust the consistency with either more chicken stock or masa harina.
  • Serve with fontina cheese, tortilla chips, sour cream and lime wedges.

2 sticks unsalted butter, softened
2 chipotle peppers, canned in adobo
2 cloves garlic
2 tablespoons chopped shallots
1 lime, juiced
Salt and freshly ground pepper
10 tomatillos, husked and washed, 5 cut in half and 5 coarsely chopped
3 tablespoons fresh lime juice
1/4 cup finely chopped red onion
1 jalapeno pepper, finely chopped
2 tablespoons olive oil
1 tablespoon honey
Salt and freshly ground pepper
1/4 cup coarsely chopped cilantro
48 large shrimp, shelled and deveined
Smoked Chile Butter
Kosher salt and freshly ground pepper
Tomatillo Salsa

Steps:

  • For the Smoked Chile Butter: Place ingredients in a food processor and process until smooth. Scrape into a bowl and refrigerate for 1 hour. Remove 20 minutes before using.
  • For the Tomatillo Salsa: Place the halved tomatillos and the lime juice in a blender and blend until smooth. Place the coarsely chopped tomatillos, the onion and the jalapeno in a bowl, add the tomatillo mixture and toss to coat. Add the olive oil and honey and season with salt and pepper. Fold in the cilantro just before serving.
  • For the Shrimp: Preheat grill or grill pan. Grill the shrimp on both sides for 2 to 3 minutes, brushing with the butter every 30 seconds. Remove shrimp to a platter and immediately brush with the remaining butter. Sprinkle with salt and pepper. Serve the Tomatillo Salsa alongside.

One 8- to 10-pound pork butt
1/4 cup cayenne pepper
Kosher salt and freshly ground black pepper
Sweet and Smoky BBQ Sauce, recipe follows
Canola oil, for frying
1 pound Brussels sprouts, roots trimmed and halved lengthwise
1 cup Thai Chili Vinaigrette, recipe follows
1/4 cup chopped fresh cilantro
1 tablespoon sesame seeds, toasted, plus additional for garnish
4 lime wedges
8 ounces brown sugar
1 ounce Bourbon Barrel brand bourbon-smoked paprika
3 tablespoons cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Kosher salt and freshly ground black pepper
30 ounces tomato sauce
18 ounces ketchup
8 ounces tomato paste
6 ounces honey
6 ounces molasses
6 ounces Bourbon Barrel brand bourbon barrel-aged Worcestershire sauce
4 ounces cola, such as Coca-Cola
4 ounces apple cider vinegar
2 ounces browning and seasoning sauce, such as Kitchen Bouquet
3 tablespoons liquid smoke
1 1/4 cups fish sauce
1 cup white sugar
Zest of 3 limes plus 1/2 cup freshly squeezed lime juice
1/4 cup rice wine vinegar
2 tablespoons peeled and chopped ginger
1 tablespoon chopped garlic
1 teaspoon minced kaffir lime leaf
3 Thai chiles, de-stemmed and chopped
1/2 cup sambal oelek (an Asian chile paste)

Steps:

  • For the smoked pork butt: Trim some of the fat off of the pork butt and expose about a quarter of the meat. Stir together the cayenne, 2 cups salt and 2 cups pepper and rub the pork butt all over with the spice mix. Let sit at room temperature, 1 hour.
  • Meanwhile, prepare a smoker for cooking at 225 degrees F. Place the pork butt in the smoker and smoke, adding wood chunks as necessary and maintaining a temperature of 225 degrees F, until an instant-read thermometer inserted into the pork registers 165 degrees F, about 9 hours. Remove the pork and shred off the meat. (Yield: 10 to 12 servings)
  • For the Brussels sprouts: Fill a large pot with canola oil and bring to 350 degrees F over medium-high heat. Line a baking sheet with paper towels. Fry a quarter of the Brussels sprouts until caramelized, 2 to 3 minutes, then transfer to the lined baking sheet for 30 seconds. Transfer to a stainless steel bowl and toss with a quarter of the Thai vinaigrette, a quarter of the cilantro and a quarter of the sesame seeds. Bring the oil back to 350 degrees F and repeat with the remaining ingredients in the same manner.
  • Put the Brussels sprouts into a bowl and garnish with lime wedges and some toasted sesame seeds. Serve with some Smoked Pork Butt and Sweet and Smoky BBQ Sauce. Reserve the remaining
  • In a large bowl combine the brown sugar, bourbon smoked paprika, cayenne pepper, garlic powder, onion powder, 12 tablespoons salt and 1 teaspoon black pepper. Whisk them together very well, making sure there are no lumps.
  • In a separate bowl, combine the tomato sauce, ketchup, tomato paste, honey, molasses, Worcestershire sauce, cola, vinegar, browning and seasoning sauce and liquid smoke. Whisk together until well combined.
  • Pour the wet ingredients into the dry spices and whisk vigorously until combined. Pass through a strainer to get any lumps out.
  • Place the fish sauce, sugar, lime juice, vinegar, ginger, garlic, lime leaf and chiles in a blender and blend until smooth. Transfer to a stainless steel bowl and whisk in the lime zest and sambal oelek. Set aside.

1 tablespoon light brown sugar
1 teaspoon chile de arbol powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
24 large shrimp, shelled and deveined
Salt and freshly ground pepper
3 tablespoons olive oil
8 ounces arugula, washed and dried
Smoked Chile Vinaigrette, recipe follows
Chopped cilantro leaves, for garnish
1/4 cup rice wine vinegar
1 tablespoon chipotle pepper puree in adobo
1/4 cup chopped fresh cilantro leaves
1/2 cup olive oil
1 tablespoon honey
Salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl, combine the ancho chili powder, light brown sugar, chile de arbol, cinnamon, and cumin, and set aside. In a medium size bowl, place the shrimp. Salt and pepper the shrimp aggressively. Then, sprinkle the shrimp with the spice mixture on both sides. Place the shrimp on a baking sheet and drizzle with oil. Roast for 4 to 5 minutes, or until just cooked through.
  • Place the arugula in a bowl, drizzle with some of the Smoked Chile Vinaigrette and season with salt and pepper, to taste. Divide the seasoned arugula among 4 plates. Place 6 shrimp around each plate. Drizzle with more of the vinaigrette and chopped cilantro.
  • Combine vinegar, chipotle and cilantro in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified. Season with honey, salt, and pepper, to taste.

WOOD-GRILLED OYSTERS IN CHIPOTLE VINAIGRETTE



Wood-Grilled Oysters in Chipotle Vinaigrette image

It used to be that you could buy and eat oysters only in months with an "R" in them. That's because during the summer months of spawning, wild oysters develop an "off" flavor. Transporting oysters in hot weather, before the days of refrigerated trucks, was also problematic. Today, about 80 percent of oysters are farm-raised in submerged nets, dining on plankton in carefully controlled marine environments. They spawn at different times during the year, so there's always a variety available that's good to eat. When ready, they're harvested and shipped by air to seafood markets. If you're not comfortable shucking oysters at home, have the fishmonger shuck them for you and ask him or her to give you a half shell for each oyster. In this recipe, you'll get smoky flavor from two sources: the wood-grilling technique and the chipotle chile in the vinaigrette.

3 tablespoons sherry vinegar
1 tablespoon balsamic vinegar
2 cloves garlic, minced
2 canned chipotle chiles in adobo sauce, very finely chopped
2 tablespoons adobo sauce from the can
1/2 teaspoon salt
2/3 cup olive oil
Freshly ground black pepper to taste
36 oysters, shucked, on the half shell
1 cup hickory or mesquite chips soaked in water for 1 hour for a charcoal grill, or 1/2 cup dry wood chips in a smoker box or an aluminum foil packet poked with holes for a gas grill

Steps:

  • 1. Prepare a hot fire in a grill.
  • 2. To make the vinaigrette, whisk all the ingredients in a small bowl until well blended. Set aside. (Vinaigrette can be made up to 4 days ahead of time and stored, covered, in the refrigerator.)
  • 3. Arrange the oysters in their half shells on a large baking sheet. Spoon about 1 teaspoon vinaigrette over each oyster and bring out to the grill. Add the wood chips to the coals or place the smoker box or packet close to a gas jet on a gas grill. When you see the first wisp of smoke, quickly arrange the oysters on the grill grate. Close the lid and grill for 3 to 5 minutes or until the edges of the oysters have begun to curl.
  • 4. Arrange the oysters on plates or a platter and serve, passing extra vinaigrette at the table.
