2 chicken breasts, pounded
1 (24 ounce) jar pickle juice (Claussen or Vlasic)
1/2 large onion, sliced
3 mushrooms, sliced
2 slices swiss cheese
2 slices American cheese
2 tablespoons butter
salt and pepper
3 slices bacon (cooked and chopped up)

Steps:

  • Marinade chicken in pickle juice from 1 - 5 hours.
  • Heat Kamado Joe grill up to 300 degrees set up to cook indirect. On the gridle side of the grill saute onions and mushrooms in butter sprinkle with salt and pepper. Remove from grill and set aside.
  • Place chicken on grill and cook until internal temperature is 160 degrees.
  • Put the bacon, sauteed mushrooms and onions on top the chicken and cover with cheese. Final chicken temperature should be 165 degrees.
