SMOKED CHICKEN AND SHRIMP BISQUE

2 pounds wood chips of choice, soaked (recommended hickory, pecan or applewood)
1 tablespoon paprika
1 tablespoon onion powder
1 teaspoon cayenne
1 tablespoon brown sugar
1 tablespoon kosher salt and freshly ground black pepper blend
1 tablespoon grapeseed oil
4 (10 to 12-ounce) bone-in chicken breasts
3 tablespoons butter
2 celery ribs, chopped
1/4 cup chopped onions
1/3 cup all-purpose flour
3 cups shrimp stock
1/2 cup milk
1 1/2 cups heavy cream
3 tablespoons freshly chopped parsley leaves
1/2 pound cooked bay shrimp (50-60 count)
1 tablespoon minced garlic
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the grill on high.
  • Chicken: Poke 6 to 10 holes with a screwdriver through the top of 1 aluminum pan, and put the water soaked chips in bottom of second aluminum pan and top with a wire roasting rack. Put the pan with soaked chips on the preheated grill until a solid burn occurs, about 15 to 20 minutes. Reduce the heat to medium-high. In a large bowl blend all the seasonings with the grapeseed oil. Toss the chicken with the blended seasoning, arrange on the rack in the smoker and cover with the aluminum pan with the holes. Smoke the chicken until an instant-read thermometer registers 160 degrees F when inserted into the thickest part of the chicken, about 35 to 40 minutes. Remove the chicken to a cutting board and let cool. After cooling, remove the skin, and shred the smoked breast by hand. Discard the bones.
  • Bisque: In a medium saucepan, over medium-high heat, melt the butter and add the celery and onions, stirring throughout until the onions are translucent. Add the flour, and stir with a wooden spoon until the flour and butter become a paste (pan roux). Reduce the heat and add the stock, milk and cream. Cook until the mixture has thickened, about 20 minutes. Add the parsley, shrimp, garlic and shredded chicken and continue cooking for 10 minutes over low heat. Season, to taste, with salt and pepper. Ladle into serving bowls and serve.

5 onions, julienned
1 cup (2 sticks) unsalted butter
5 pounds small (90/110 count) Gulf shrimp
7 tablespoons salt
4 tablespoons ground black pepper
3 tablespoons cayenne pepper
10 bay leaves
2 sprigs fresh sage
1/2 bunch fresh thyme
1 gallon crab stock
One 3-ounce packet crab boil seasoning, such as Zatarain's
3 tablespoons MSG
2 quarts Louisiana popcorn rice
1 bunch green onions, chopped
1 bunch fresh parsley, chopped
15 feet hog casing (29- to 32-millimeter diameter)

Steps:

  • Cook the onions in the butter in a large rondeau, skillet or Dutch oven over very low heat, stirring occasionally, until caramelized, about 45 minutes. Add the shrimp, 3 tablespoons of the salt, 2 tablespoons of the black pepper and 1 tablespoon of the cayenne. Cook until the shrimp are pink and fully cooked, about 10 more minutes. Turn off the heat and set aside.
  • Wrap the bay leaves, sage and thyme in a cheesecloth and tie with twine. Add the sachet to a large stockpot or Dutch oven along with the crab stock, crab boil seasoning, MSG and the remaining 4 tablespoons salt, 2 tablespoons pepper and 2 tablespoons cayenne. Bring to a boil, add the rice and stir once. Lower the temperature to medium low, cover the pot and cook until the rice is done, 15 to 20 minutes.
  • In a large bowl, mix the cooked rice together with the reserved shrimp mixture and the green onions and parsley. Let cool briefly. While still warm, pipe the mixture into the hog casing with a sausage stuffer and twist into 6-inch sausages.
  • Prepare a smoker for smoking at about 200 degrees F. Smoke the sausages until the internal temperature has reached 155 degrees F, 1 hour to 1 hour 30 minutes. Serve immediately.

Shrimp Stock
2 tablespoons extra-virgin olive oil
3/4 cup dry white wine
3 cups homemade or canned low-sodium chicken stock
Pinch saffron threads (about 24)
2 ribs celery, coarsely chopped
1 medium onion (about 8 ounces), coarsely chopped
4 fresh bay laurel leaves, torn, or 2 dried
3 3-inch springs fresh sage
2 cups pumpkin purée, fresh (see Note) or canned
1/2 cup heavy cream
About 3/4 teaspoon salt, less if using canned stock
Scant 1/8 teaspoon cayenne pepper
1 tablespoon freshly squeezed lemon juice
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 teaspoons finely chopped fresh sage

Steps:

  • 1. Shrimp stock: Peel and devein shrimp, reserving the shells. Cover the shrimp and refrigerate. Heat the olive oil in a medium (3-quart) heavy-bottomed saucepan over high heat until it begins to smoke. Add the shrimp shells to the pan and cook, stirring constantly, until they turn deep orange and are just beginning to brown, 3 to 4 minutes. This step-pan roasting the shells-gives the stock much of its flavor, so take the time to do it carefully. The roasted shells should release a concentrated, toasty, shrimp aroma that will fill your kitchen. Add the wine to the pan, first turning off gas flames to prevent the alcohol from igniting, then boil it over medium heat until all the liquid is evaporated. Add the chicken stock, saffron, celery, onion, bay leaves, and sage. Bring to a boil, then reduce the heat to the lowest setting. Partially cover the pan and simmer gently for 30 minutes. Strain the stock through a fine sieve, pushing down on the solids with the back of a spoon to extract all the liquid. Rinse out the saucepan and pour the stock back into it.
  • 2. Soup: Whisk the pumpkin, cream, salt (omit if using canned stock), and cayenne into the shrimp stock. Bring the soup to a simmer, then cook very gently uncovered over low heat for 10 minutes. Stir in the lemon juice, taste, and season with black pepper and more salt if needed. (The soup can be made up to this point up to 1 day ahead store covered in the refrigerator. Keep the peeled shrimp in a resealable bag buried in a bowl of ice in the refrigerator.)
  • 3. Finishing the soup: Pour the olive oil into a large sauté pan placed over medium heat. When hot, add the reserved shrimp and sage and cook, tossing often, until the shrimp is just cooked through, pink, and no longer translucent, but not curled into a circle, 2 to 3 minutes. They should still have a tender snap when you bite into them. Arrange the shrimp in warmed serving bowls or a tureen. Bring the soup back to a simmer and then ladle it over the shrimp. Serve right away.

  • Substitute winter squash purée, such as butternut or acorn, for the pumpkin.

1 medium red bell pepper, chopped
½ cup chopped yellow onion
½ pound cooked or raw shrimp, tails removed, cut in pieces
2 cups fat-free half-and-half
1 cup no-salt-added tomato sauce
¼ teaspoon hot chile sauce, or to taste
salt and freshly ground black pepper to taste
1 teaspoon butter
¼ cup grated fresh Parmesan cheese

Steps:

  • In saucepan, heat olive oil. Add red pepper and onion; saute on low heat until soft, 15 to 20 minutes, stirring occasionally. Add shrimp, half-and-half, tomato sauce, hot sauce, salt and pepper. Bring to a boil, reduce heat and simmer 5 minutes. Add butter.
  • Put 1/2 hot mixture in a blender and carefully process at high speed about 10 to 15 seconds, or until no large pieces remain. Transfer bisque into soup bowls.
  • Repeat with remaining mixture. Sprinkle on Parmesan cheese.
  • Optional garnishes: herbs and additional shrimp.

2 cups cubed cooked chicken
1 jar (4 ounces) diced pimientos, undrained

Transfer the purée to a large sieve lined with a double layer of cheesecloth and let it drain for 2-3 hours until it is firm enough to hold its shape on a spoon.

  • Substitute winter squash purée, such as butternut or acorn, for the pumpkin.

1 lb shrimp
2 tablespoons butter
1/2 onion, diced
1 -2 jalapeno pepper, seeded and minced (optional, but we like them!)
1 stalk celery, diced
2 cups fresh corn kernels or 2 cups frozen corn
1 1/2 tablespoons all-purpose flour
1 (14 1/2 ounce) can chicken broth
1 cup half-and-half
fresh cilantro stem, for garnish

Steps:

  • Leaving tails intact on 4-6 shrimp, peel and devein shrimp; butterfly tail-on shrimp and chop the remaining shrimp.
  • In a large saucepan, melt butter.
  • Add butterflied shrimp and saute just until bright pink and cooked through. Remove with slotted spoon and set aside.
  • Add onion,chilies( if using ), and celery to pan; saute until onion is tender, but not browned.
  • Stir in chopped shrimp and saute until just pink.
  • Add all but 1/4 cup corn and saute 30 seconds longer.
  • Sprinkle flour over vegetables and shrimp then cook and stir 1 minute more.
  • Add broth and half and half.
  • Cook, stirring constantly, until smooth, heated through and slightly thickened, about 4 minutes.
  • Serve in bowls, garnished with remaining corn kernels, butterflied shrimp, and cilantro sprigs.

GARLIC BUTTER SMOKED SHRIMP

One of the quickest meals you can make in your smoker is shrimp, done in just 30 minutes. These shrimp are lightly seasoned to let the smoke flavor shine, but add more seasoning if desired. Because of the short smoke time, feel free to use a stronger-flavored wood such as hickory or mesquite. Serve with cheesy grits, rice, atop a salad, or as an appetizer with a remoulade sauce.

1 teaspoon Cajun seasoning
1 teaspoon olive oil
½ cup butter
1 clove garlic, minced

Steps:

  • Place shrimp in a resealable plastic bag. Sprinkle with Cajun seasoning and drizzle with olive oil. Toss shrimp around in the bag to evenly distribute seasoning. Refrigerate for 1 to 2 hours.
  • Preheat a smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's instructions.
  • Place butter in a microwave-safe dish and cook on high until completely melted, 20 to 30 seconds. Stir in lemon peel, garlic, red pepper flakes, and black pepper.
  • Arrange shrimp in even rows in a 8x10-inch aluminum pan. Place thyme sprigs between each row. Drizzle butter mixture over shrimp.
  • Place in the preheated smoker and cook shrimp until firm and orange-pink in color, about 30 minutes. The internal temperature should be 120 degrees F (49 degrees C), about 30 minutes. Do not overcook as the shrimp will become rubbery. Serve immediately.

1 carrot, chopped fine
3 tablespoons rice
1 lb shrimp, uncooked and peeled
4 cups chicken broth
1 cup white wine
1 tablespoon lemon juice
2 tablespoons tomato paste
1 cup cream

Steps:

  • In large saucepan melt butter and saute shrimps until just cooked through about 4 minutes.
  • Using slotted spoon transfer shrimps to a bowl.
  • Add celery,onions, carrots and lemon juice to saucepan.
  • Saute until vegetables are soft, about 10 minutes.
  • Add white wine and boil 2 minutes.
  • Add chicken broth, rice and tomato paste.
  • Cover pot and simmer until rice is tender about 20 minutes,stirring occasionally.
  • Add cream and puree.
  • Add shrimps and blend until shrimps are coarsely chopped.
  • Be careful not to overprocess them.
  • Season with salt and pepper.
  • Top each bowl with extra shrimp.

2 -3 cloves garlic, chopped
2 cups chicken broth
3 tablespoons white rice (not instant)
12 ounces cooked shrimp
3 tablespoons tomato paste
1/2 teaspoon cayenne pepper (or more if you like it spicier)
1/2 teaspoon chopped fresh tarragon
1 1/2 cups half-and-half or 1 1/2 cups heavy cream

Steps:

  • Melt butter in pan.
  • Add onion and garlic and saute until tender, about 5 minutes.
  • Add broth and rice and bring to boil.
  • Reduce heat to low.
  • Cover and simmer until rice is tender, about 15 minutes.

  • To start, melt 2 tablespoons butter in a medium saucepan over medium heat.

  • Stir in evaporated milk and wine.

Remove the shrimp and once cool, peel the shells off and cut the shrimp into smaller pieces and set both the broth and shrimp aside. Set a soup pot over medium heat and add the olive oil.
