1/4 cup firmly packed brown sugar
1/4 cup light corn syrup
1 tablespoon butter or 1 tablespoon margarine
4 cups kellogg's Honey Smacks cereal
1/2 cup peanuts

Steps:

  • Lightly coat a 15 x 10 x 1-inch nonstick baking pan with nonstick cooking spray. Set aside.
  • Combine sugar, corn syrup, and butter in a medium heavy-bottomed saucepan over moderate heat. Bring to a boil, stirring constantly.
  • Immediately remove from heat and quickly stir in the Honey Smacks and nuts and immediately pour the mixture onto the prepared baking pan. You must work quickly, as the mixture will harden.
  • After about 30 seconds, using rubber gloves, take hold of the edge of the candy and, lifting it slightly from the pan, pull it as thin as possible.
  • Brake the candy into irregular pieces. Store tightly covered. Makes 1 dozen pieces.

200g caster sugar
100g roasted peanuts
1 tsp sea salt flakes

Steps:

  • Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
  • Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.

1 cup water
2 cups sugar
1/2 cup light corn syrup
1/2 cup red chile honey (honey that has red chilies in it)
2 teaspoons salt
2 tablespoons unsalted butter, at room temperature
4 garlic cloves, roasted and pureed
1/4 teaspoon baking soda

Steps:

  • To make chili honey, take the honey and place 4 chilies (I roasted them slightly first) and then place in a jar overnight.
  • If you want, you can puree some of the chilies with the garlic for a extra kick.
  • For the Brittle: Line 2 baking sheets with parchment or waxed paper.
  • Combine the water and sugar in a large nonstick heavy-bottomed saucepan over medium-high heat.
  • Stir to dissolve the sugar, 4 to 5 minutes.
  • Add the corn syrup, honey, and salt, and stir constantly and slowly with a wooden spoon until the mixture comes to a gentle boil, about 2 minutes.
  • Continue stirring until the mixture reaches 290°F on a candy thermometer.
  • Remove the pan from the heat.
  • Add the butter, garlic puree, and baking soda and stir until the butter is completely melted, about 1 minute.
  • Pour the mixture onto the baking sheets, being careful as it is very hot, and spread it evenly with a rubber spatula.
  • Let cool completely.
  • Break the brittle into shards.

"A Christmastime treat! This holiday confection is gobbled up quickly by guests, and it is so easy to make. The cool crunch of peppermint with creamy white chocolate is a divine combination."

2 lbs white chocolate
30 small peppermint candies

Steps:

  • Line a large jellyroll pan with heavy-duty foil.
  • Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5-6 minutes. Stir occasionally, until chocolate is melted and smooth.
  • Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks.
  • Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour.
  • Break into pieces by slamming pan on counter.
