BEEF CARNITAS
With very little prep time, these Mexican-inspired Beef Carnitas are so incredibly tender, and extremely flavorful, with a touch of crispiness. They are perfect for tacos, burritos, quesadillas or even on top of nachos.

- Preheat the oven: Preheat the oven to 300°F.
- Combine ingredients: Place the meat in a Dutch oven or oven safe pot, and add the beef, peppers, onion, juice from the orange and the remaining orange halves, Cajun seasoning, jalapeños and water. You should have enough water to cover everything in the pot. Bring to a boil over medium-high heat.
- Cook: Cover the pot and place it in the oven and cook for 3 hours or until the meat falls apart when prodded with a fork. You can also cook this on the stovetop over low heat for 4 hours.
- Remove the meat: Remove the meat from the pot using a slotted spoon and place it on a baking sheet lined with aluminum foil. Remove everything else from the pot except the liquid using a slotted spoon and discard. Cook the liquid over medium high heat for 20 minutes or until it reduces to about a cup.
- Shred the meat: Using 2 forks, shred the meat into smaller pieces. Pour the reduced liquid over the shredded meat.
- Broil meat: Place the baking sheet under the broiler for about 5 to 10 minutes or until browned and crispy. Watch it so that it doesn't burn, each oven is different. Flip the meat and broil for another 5 minutes until brown and crispy.
- Serve: Serve on tacos or burritos.

I use this recipe all the time. It is the best! The meat just falls apart, and it's delicious served in flour tortillas with guacamole and salsa. This also freezes well.

- Preheat oven to 300 degrees F (150 degrees C).
- Place roast on heavy foil large enough to enclose the meat. In a small bowl, combine the green chile peppers, chili powder, oregano, cumin, garlic and salt to taste. Mix well and rub over the meat.
- Totally wrap the meat in the foil and place in a roasting pan.
- Bake at 300 degrees F (150 degrees C) for 3 1/2 to 4 hours, or until the roast just falls apart with a fork. Remove from oven and shred using two forks.

CARNITAS
Carnitas (or "little meats") are a traditional Mexican dish of cubed pork shoulder braised with spices and citrus until tender. Fresh orange, crushed garlic, earthy oregano and aromatic cinnamon and bay leaf create a rich and fragrant braising liquid that imparts its savory flavors into the pork as it cooks. There's very little hands-on work involved, and the carnitas can be made a day ahead. Store the pork in the liquid overnight, then gently reheat before serving. A final finish under the broiler creates a golden, crispy exterior on the meat.

- Heat oven to 350 degrees. In a large Dutch oven, combine pork, 1 tablespoon salt, 1 teaspoon pepper and the oregano, and toss to evenly coat the meat in the spices. Squeeze orange juice all over the pork and add the juiced orange quarters to the pot. Add onion, garlic, cinnamon stick and bay leaf, and toss until well incorporated, nestling everything in an even layer. Drizzle oil evenly over the meat. Cover and braise in oven until pork is tender, about 2 1/2 hours, stirring once halfway through the cooking.
- Heat broiler to high, setting a rack 6 inches from the heat source. Transfer pork to a rimmed baking sheet and shred the meat. Strain juices from the pot through a fine-mesh sieve into a small bowl, pressing on the solids; discard solids. Skim fat from top and reserve the juices.
- Broil pork until golden and crisp in spots, about 4 to 5 minutes. Transfer carnitas to serving plates and drizzle with some of the reserved juices. Serve warm with tortillas and toppings of choice.
THE BEST SLOW COOKER CARNITAS, GREAT FOR TACOS!
These carnitas cook low and slow in the Slow Cooker or Crockpot and finish on the stove for a crispy and delicious filling for tacos, burritos or nachos. This is the new taco filling for Taco Tuesday at our house. My whole crew prefers this to traditional taco filling made with ground beef or ground turkey.

- Mix the kosher salt, garlic powder, ground cumin, ground coriander, dried oregano and black pepper together in a small bowl. Coat the pork shoulder roast with the dry rub.
- Place the sliced onion and bay leaves in the bottom of your slow cooker, lay pork shoulder roast on top. Carefully pour water or chicken broth around the roast, making sure you don't disturb the dry rub.
- Cover and cook on Low until the pork shreds easily with a fork, about 6 hours. Turn the meat after it has cooked for 3 hours.
- When the pork is tender, remove from slow cooker, remove and discard excess fat and shred with two forks. Reserve cooking liquid.
- Place shredded pork into a large skillet with 1 cup of reserved cooking liquid over medium high heat, stirring occasionally. Once liquid has cooked down completely, add canola or vegetable oil. Stir occasionally for 15-20 minutes or until the meat has reached desired crispiness.
- Serve in warm flour or corn tortillas with your favorite taco toppings. We serve ours cilantro, pickled red onions, salsa or pico de gallo, guacamole, sliced cabbage and lime wedges,.

- Mix the first nine ingredients. Cut roast in half; rub with 1/4 cup spice mixture. THE BEST EVER SLOW COOKER CARNITAS
What makes these carnitas different? They are crisped and browned on the stove after low and slow cooking in the crock pot. These are incredibly easy to make and have replaced traditional taco filling at our house. These carnitas or "little meats" are great in Tacos, Burritos, Enchiladas, Tamales or Nachos. When served with corn tortillas, they are also gluten free!

- Mix cumin, garlic powder, oregano, coriander, kosher salt and ground black pepper together in a small bowl to make a dry rub. Pat the pork shoulder roast or boston butt dry with paper towels, and then cover roast with dry rub.
- Place the pieces of onion and the bay leaf in the bottom of your slower cooker, lay the roast on top. Carefully pour the chicken stock or the water around the roast, taking care not to wash away the dry rub. Cook on low for 6 hours or until the pork easily falls apart.
- Once the pork is easily falling apart, remove from slow cooker to cool. Reserve 1 cup of the cooking liquid. Remove and discard the excess fat, shred the remaining pork.
- Place the reserved cooking liquid in a large non-stick skillet with shredded pork. Cook over medium high heat until the liquid is absorbed, tossing the pork occasional to coat.
- Once the cooking liquid is absorbed, add the oil and crisp up the carnitas to your desired doneness. We like our extra crispy, usually about 14-18 minutes.
- Serve with your favorite taco fixings, like corn or flour tortillas, cilantro, lime, shredded cabbage, pico de gallo, sour cream and cheese.

- If desired, brown your beef roast in a pan or Dutch oven. Heat a small drizzle of oil over medium heat, add the beef roast and cook 5-7 minutes per side, or until it’s very browned and crisped.

- In a small bowl, mix the salt with the rest of the spices. Cut the excess fat off the piece of meat and cover it with the spice mix, making sure to coat it all around. Cover the meat with kitchen plastic wrap and refrigerate for 2 hours.
- Put a pan on the stove over medium high heat with some oil. Put the pice of meat on it to seal it all around. It will cook for about 2 minutes each side, until it turns golden brown.
- From here on, the meat can be cooked in the oven or in a slow cooker. To make it in the slow cooker, put the meat in it, along with the onion, orange juice and tomato sauce. Cook over high level for about 3 to 4 hours or in the low setting for 7 to 8 hours until the meat comes apart easily with a fork.
- To make the carnitas in the oven, preheat it to 302º F (150º C) and line a rectangular baking sheet with high walls parchment paper. Put the onion on the baking sheet and once the meat has sealed, put it on the same baking sheet along with the orange juice and tomato sauce.
