SMOKY WHITE BEANS & HAM
I had never made or eaten this dish before meeting my husband here in Kentucky. Now I make it at least once a week. I serve it with some homemade sweet cornbread. Delicious! -Christine Duffy, Sturgis, Kentucky

Steps:
- Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Transfer beans to a 6-qt. slow cooker. Add ham hocks. Stir in onion, broth, water and seasonings. Cook, covered, on low 6-8 hours or until beans are tender., Remove meat from bones when cool enough to handle; cut ham into small pieces and return to slow cooker. Serve with a slotted spoon. Sprinkle with onions if desired.

SLOW COOKER HAM AND BEANS
Slow cooker Ham and Beans soup! I use my leftover meaty ham bone from Easter just like my mom used too. You'll love the way the ham falls off the bone as you shred it for the soup. Throw in all the ingredients and let it cook all day and then enjoy. Don't forget the chunky bread to dip in the soup.

Steps:
- You will need a large crock pot.
- Soak navy beans over night or for 12 hours in large bowl. Drain beans and reserve liquid.
- Place beans in slow cooker.
- Place Meaty Ham Bone on top of beans.
- Place vegetables around ham.
- Using reserved liquid, measure 5 cups of bean water and pour over ham and vegetables.
- Cover with Lid and slow cook for 8-10 hours. When done, the meat should be falling off the bone and the beans should be soft.
- Removed bone and meat. Discard bone and shred meat with forks.
- Place meat back in soup. Remove any excess vegetables you do not want.
- With large spoon, smash some of the beans against the side of the crock pot. Do this a few times. It makes the soup creamy.
- Season with salt and pepper to taste.

SLOW-COOKER WHITE BEAN SOUP

- Combine the beans, carrots, celery and garlic in a 6- to 8-quart slow cooker. Stir in the tomatoes with their juices and 1 tablespoon olive oil. Add the chicken broth, 1 cup water, the bay leaves, 1/2 teaspoon salt and a few grinds of pepper. Stir well, cover and cook on low until the beans and vegetables are tender, 7 to 8 hours.
- Uncover and stir the soup. Cut the corn kernels off the cobs and add to the soup along with the ham. Cover and cook on low until the corn is crisp-tender, about 10 minutes. Stir in the chives and remaining 1 tablespoon olive oil; season with salt and pepper. Discard the bay leaves. Divide among bowls and top with more chives.

- Combine the tomato paste, Worcestershire sauce, red pepper flakes and paprika in a 5-to-6-quart slow cooker. Add the ham, beans, bay leaf and thyme. Pour in 4 cups water; cover and cook on low, undisturbed, 8 hours.
- Pour the tomatoes into a bowl and crush them with your hands. Add the tomatoes and their juices, the scallions and garlic to the slow cooker. Cover and cook 30 more minutes.
- Remove the ham from the slow cooker and transfer to a cutting board to cool slightly before slicing. Set aside about one-third of the ham and 3 cups of the stewed bean mixture to make Ham Jambalaya. Serve the remaining ham with the bean mixture.
- Turn leftovers into Ham Jambalaya

- Heat a large skillet over medium-high heat. Cook and stir diced ham in hot skillet until browned, about 5 minutes. Transfer ham to a slow cooker.
- Place black beans, great Northern beans, artichoke hearts, baby corn, mushrooms, green chilies, celery, potatoes, carrot, leek, garlic, rosemary, parsley, thyme, brown sugar, Creole seasoning, white pepper, black pepper, salt, cayenne pepper, and red wine in the slow cooker.

SLOW COOKER NORTHERN WHITE BEAN
White beans are cooked in a slow cooker with smoked neck bones, aromatic vegetables, seasonings, and chicken broth. This recipe can be used for cooking most any dried bean in the slow cooker. Adjust liquid when cooking tougher skin beans (such as pinto beans). Add garlic and onion powder to taste, if desired.

- Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Place neck bones in a slow cooker and pour chicken broth over the top; stir in soul seasoning.
- Cook on High until meat is falling off the bones, about 1 hour. Transfer bones and meat to a plate and shred meat from bones; discard bones.
