SIMPLE SLOW-COOKER TZIMMES



Simple Slow-Cooker Tzimmes image

Tzimmes is a traditional sweet-and-savory Passover dish featuring dried fruit, sweet potatoes and carrots. We've added butternut squash for more veggie power and cooked everything in a slow cooker to make it convenient for entertaining.

Number Of Ingredients 11

1 1/4 pound sweet potatoes (about 2 medium), peeled and cut into 3/4-inch cubes
1 pound carrots (about 6 medium), peeled and cut into 1/4-inch slices
1/2 butternut squash, peeled, seeded and cut into 3/4-inch cubes (about 1 pound)
1 1/2 cup low-sodium chicken or vegetable broth
3 tablespoons honey
1 1/2 teaspoon ground cinnamon
1 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1/2 cup pitted prunes, chopped
1/2 cup raisins
1 1/2 cup dried apple slices, cut into strips

Steps:

  • Combine sweet potatoes, carrots, squash and dried apples in a 5- to 6-quart slow cooker and toss.
  • In a bowl, whisk together broth, honey, cinnamon, salt and pepper.
  • Pour over vegetables and fruit.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 3 1/2 hours, until vegetable mixture is just tender.
  • Add prunes and raisins, cover and cook on low for 1 hour more.
  • Serve warm.

Number Of Ingredients 10

3 cups carrots (washed, peeled and cut into 1-inch pieces on the bias)
3 cups sweet potatoes (washed, peeled and cut into chunks)
2 cups onion (cut into chunks)
3/4 cup brown sugar
1/4 cup honey
2 teaspoons cinnamon
2 cups orange juice
1 cup wine (I used a dry red, but sweet or dry, red or white will work)
1 cup broth (chicken or vegetable)
1 cup dates (pitted)

Steps:

  • Toss your carrots, sweet potatoes and onion chunks into your crock pot.
  • Add brown sugar, honey and cinnamon.
  • Then cover with orange juice, wine, and broth.
  • Cook on high for 6 hours or until vegetables and soft but not mushy and sauce is thick and coats the vegetables. Add the dates after 5 1/2 hours and continue cooking.
  • VERY IMPORTANT: if the vegetables are soft and the sauce is not thick yet, remove vegetables and continue to cook the sauce in the crock pot or a sauce pan until it is thick. Pour over vegetables.

2 tablespoons finely chopped crystallized ginger
3 teaspoons ground cinnamon
3 teaspoons pumpkin pie spice
2 teaspoons grated orange zest
1 teaspoon salt
Vanilla yogurt, optional

Steps:

  • Place the first seven ingredients in a 5- or 6-qt. slow cooker. Combine orange juice, honey, ginger, cinnamon, pie spice, orange zest and salt; pour over top and mix well., Cover and cook on low until vegetables are tender, 5-6 hours. Dollop servings with yogurt if desired.

3 pounds sweet potatoes (about 4 large), peeled and cut into chunks
2 pounds medium carrots, cut into 1/2-inch chunks
1 package (12 ounces) pitted dried plums (prunes), halved
1 cup orange juice
1 cup water
1/4 cup honey
1/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup dairy-free margarine or butter

Steps:

  • Preheat oven to 350°. In a greased 13x9-in. baking dish, combine sweet potatoes, carrots and plums. Combine orange juice, water, honey, brown sugar and cinnamon; pour over vegetables. , Cover and bake for 1 hour. Uncover; dot with butter. Bake until vegetables are tender and sauce is thickened, 45-60 minutes, carefully stirring every 15 minutes.

1 ½ pounds carrots, peeled and cut into 1/4-inch rounds
⅓ cup seedless golden raisins
¼ cup freshly squeezed orange juice
1 ½ tablespoons honey
1 ½ tablespoons brown sugar
kosher salt and ground black pepper to taste
2 tablespoons minced fresh parsley

Steps:

  • Heat oil in a pan over medium-high heat. Add carrots, raisins, orange juice, honey, brown sugar, salt, and pepper; bring it to a boil. Reduce heat; cover and simmer until carrots are tender, about 25 minutes. Uncover, raise heat to high, and cook until sauce has thickened, about 5 minutes. Sprinkle parsley on top before serving.

2 large Uncooked sweet potato(es) peeled and cut into bite-size chunks
0.5 pound(s) Uncooked baby carrots cut in half if large
8 small Uncooked new potato(es) cut in half (unpeeled)
1 cup(s) Prune(s) pitted
4 tbsp(s) Fresh lemon juice divided (from 2 small lemons)
5 tsp(s) Honey divided
1.5 tsp(s) Table salt
0.5 pinch Black pepper
0.25 tsp(s) Ground cinnamon
1 cup(s) Canned beef broth

Steps:

  • Place onion, beef, garlic, sweet potatoes, carrots, new potatoes, prunes, 2 tablespoons of lemon juice and 1 tablespoon of honey in a 5- to 6-quart slow cooker. Add salt, pepper, cinnamon and broth; stir well.
  • Cook on low setting for 7 to 8 hours. About 5 minutes before serving, stir in remaining 2 tablespoons of lemon juice and remaining 2 teaspoons of honey; cover and cook on low for 5 minutes.

2 pounds sweet potatoes, peeled and thinly sliced
2 pounds yams, peeled and thinly sliced
1 cup (4 ounces) dried apple rings, cut in quarters
1 1/2 cups (8 ounces) pitted prunes
1 cup (4 ounces) dried pears, coarsely chopped
1 cup (4 ounces) dried apricots, cut in half if large
1 cup (4 ounces) dried sweet cherries
3/4 cup (3 ounces) dried sour cherries
1 cup packed dark brown sugar
2 teaspoons ground cinnamon
2 cups orange juice
2 cups white wine (sweet or dry)

Steps:

  • Place the carrots, onions, sweet potatoes, yams, dried apples, prunes, dried pears, dried apricots, and dried sweet and sour cherries in the insert of a 5 1/2 to 6 quart slow cooker. Stir to mix. Sprinkle the brown sugar and cinnamon on top. Pour in the orange juice and wine and add enough water to cover. Cover and cook on HIGH for 10 to 11 hours, or until the vegetables are very soft. Serve hot or at room temperature.

I use the canned yams so no need to soften them as you do the carrots. I like the short cut! I just made this again and added dried apricots and orange zest. You can be creative with this dish.

3 large carrots, thickly sliced
3 yams or 3 sweet potatoes, peeled and thickly sliced
1/2 lb prune, pitted and soaked until softened
3 granny smith apples, peeled, cored and thickly sliced
8 tablespoons brown sugar
salt, to taste
fresh ground pepper, to taste
3 tablespoons margarine or 3 tablespoons schmaltz
1 cup water or 1 cup orange juice

Steps:

  • Preheat oven to 350 degrees F.
  • Parboil carrots and yams in lightly salted water until not quite tender.
  • Drain vegetables and prunes.
  • Layer carrots, yams, prunes, and apples in a casserole dish, sprinkling layers with sugar, salt, pepper and dot with butter, margarine, or schmaltz.
  • Pour 1 cup of water or orange juice into the casserole dish, cover and bake for 30 minutes or until apples are tender.
  • Uncover and bake for about 5 minutes or until top is lightly browned.
  • Serve hot as an accompaniment to main dish.
