POTLUCK ENCHILADA MEATBALLS
This is a twist on the ordinary potluck meatballs. It's easy, inexpensive and a hit at any occasion I serve them. -Terina, Lewis, Decatur, Illinois

- Preheat oven to 400°. Prepare and bake muffin mix according to package directions. Cool completely and crumble; transfer to a large bowl. Add 1 envelope taco seasoning, eggs, 1-1/2 cups enchilada sauce and meat; mix lightly but thoroughly. Shape meat mixture into 1-1/2-in. balls; bake on greased racks in 15x10x1-in. baking pans lined with foil until lightly browned, 10-12 minutes., Place meatballs in a 5- or 6-qt. slow cooker. Combine remaining enchilada sauce, salsa, chiles, 1/2 cup cheese and remaining envelope taco seasoning; pour over meatballs. Sprinkle with remaining cheese. Cook, covered, on low until meatballs are cooked through, about 3 hours.

SLOW COOKER TURKEY ENCHILADA MEATBALLS
Steps:
- spray slow cooker with non-stick spray (or use a slow cooker liner)
- place meatballs in slow cooker
- add enchilada sauce, chili peppers and taco seasoning to slow cooker
- stir to combine
- cover and cook on low for 4-6 hours
- If you want a creamy dish (my personal preference) add sour cream to slow cooker 15-30 minutes prior to serving and stir to combine.
- top with shredded cheese, sliced green onion and chopped cilantro when serving

SLOW COOKER TURKEY MEATBALLS IN TOMATO SAUCE
These slow cooker turkey meatballs in tomato sauce are a great alternative to traditional beef meatballs. Can be served over pasta or make meatball sandwiches with sauteed onions and peppers with melted Italian cheese over the top. Fantastic!

Steps:
- Saute onion and Italian dressing in a small saute pan over medium heat for 5 minutes. Remove from heat and let cool slightly, about 5 minutes.
- Combine turkey, bread crumbs, garlic, sauteed onions, Italian seasoning, salt, and pepper in a bowl; mix well.
- Combine diced tomatoes and marinara in a second bowl; set aside.
- Form 1/2 of the turkey mixture into 1 1/2-inch meatballs and layer them in the bottom of a slow cooker. Pour 1/2 of the tomato mixture over the meatballs. Form the remaining turkey mixture into meatballs and layer with remaining tomato mixture.
- Cover and cook until no longer pink in the centers, about 4 hours on High, or 8 hours on Low.

- In a large bowl, beat egg lightly. Add turkey, Old El Paso Chopped Green Chiles, breadcrumbs, chili powder, cumin, and cheese. Combine until everything is evenly distributed. Do not over mix (use hands or a wooden spoon).
- Turn broiler to high with rack positioned about 4-5 inches from the broiler. Broil meatballs until browned, turning once, about 10-12 minutes. Meatballs will not be cooked through at this point.
SLOW-COOKER ENCHILADA MEATBALLS - OLD EL PASO

- In large bowl, mix 3/4 cup of the cheese, the cornbread, cilantro, onion, taco seasoning mix, garlic and egg. Crumble beef into cheese mixture, mixing with hands just until blended (do not overmix). Shape mixture into 32 (1-inch) balls. Place in pan. Bake uncovered 15 minutes or until lightly browned.
- Spray 4- to 5-quart slow cooker with cooking spray. With slotted spatula, remove meatballs from pan to slow cooker. Pour enchilada sauce over meatballs; stir to coat.
- Cover; cook on Low heat setting 1 hour 30 minutes. Transfer meatballs to serving dish; pour sauce over meatballs. Sprinkle with remaining 1/2 cup cheese. Serve meatballs with toothpicks or cocktail forks. Meatballs can be held on Low heat setting up to 1 hour; stir occasionally.
