TURKEY CHILI MAC
There are two things that make for a great Thanksgiving leftovers recipe. The first one is, it shouldn't remind you of the original meal. Plus, and just as important, it should be super easy and simple to make. Not only does this turkey chili mac satisfy those two requirements, it also happens to be incredibly delicious and pretty nice to look at. Garnish with grated cheese, onions, sour cream, and cilantro if desired.

Steps:
- Heat olive oil in a pot over medium-high heat. Add onion and 1 teaspoon salt; cook, stirring, until it starts to soften and turns translucent, about 5 minutes.
- While onion cooks, make the spice mixture by combining chili powder, chipotle pepper, cumin, black pepper, cocoa, cinnamon, and oregano in a small bowl.
- Add garlic and the spice mixture to the onion and cook, stirring, 1 to 2 minutes.
- Stir in 4 cups chicken broth, diced tomatoes with chiles, and tomato sauce. Raise the heat to high and bring to a simmer. Reduce the heat to medium-low and simmer, stirring occasionally, for 15 minutes.
- Add the leftover turkey meat along with additional chicken broth if needed, and cook, stirring occasionally, for another 15 minutes.
- Taste for salt and other seasonings and adjust as needed. Raise the heat to high and bring to a boil. Stir in pinto beans and elbow macaroni and cover tightly with a lid. Cook, covered, until the pasta is just barely tender, about 5 minutes.
- Turn off the heat, remove the lid, and stir very well. Cover back up and let sit with the heat off for 5 minutes. Uncover, stir in Cheddar cheese, and serve immediately.

SLOW COOKER TURKEY CHILI
Cocoa powder may seem a bit out of place in chili, but it has two jobs in this mole-inspired version: It adds depth of flavor and helps thicken the sauce. We suggest serving the chili with tortilla chips, but it would also be great with cornbread.

- Heat the oil in a large nonstick skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne and cook, stirring, until the oil is brick-red and the mixture is dry, about 2 minutes. Add the ground turkey and 1 teaspoon salt and cook, stirring and breaking up into smaller pieces, until the mixture is combined (the turkey doesn't need to be cooked all the way through at this point). Transfer the mixture to the insert of a 6-quart slow cooker.
- Add the tomatoes, chicken broth, cocoa powder, vinegar, oregano and 1 teaspoon salt to the skillet over medium-high heat and bring to a simmer, whisking. Cook for about 2 minutes. Add the tomato mixture, beans, onions, crushed tortilla chips and garlic to the insert and give the mixture a good stir. Cover and cook on low for 6 to 8 hours.
- Add chicken broth to thin the chili, if necessary. Season with salt. Serve with scallions, Cheddar, sour cream, pickled jalapeno and tortilla chips.

Add turkey and onion; cook until meat is no longer pink, breaking up turkey into crumbles, 8-10 minutes., Transfer to a 5-qt. slow cooker; stir in seasonings. - Spray the inside of the crock with nonstick cooking spray or grease with olive oil. In a medium-size skillet, heat the oil over medium-high heat and cook the onions and garlic until soft. Stir in the ground turkey and cook until the turkey is cooked through, stirring occasionally to break it up. Drain the fat and place the mixture in the slow cooker.
- Add the tomatoes, chili powder, ancho chile powder, cumin, marjoram, and salt to the crock; stir to combine. Cover and cook on LOW for 4 hours.
- Stir the cooked pasta, corn, and olives into the chili. Cover and cook on LOW for another 1 to 1½ hours.
- Top with the cheese to let it melt, and serve out of the crock. Sprinkle each bowl of chili with cilantro.
