This incredible slow cooker sweet and sour chicken will be a huge hit if you are a huge fan of the traditional version of this dish.

500 g (1.1 lb) chicken thigh, cubed
440 g (15.5 oz) can pineapple Pieces with unsweetened juice (Do not drain)
1 onion, quartered
1 carrot, peeled & sliced
1 large red bell pepper, chopped
½ tsp ginger, chopped
3 Tbsp brown sugar
4 Tbsp ketchup
2 Tbsp soy sauce
¼ cup apple cider vinegar
2 Tbsp cornstarch
2 Tbsp water

Steps:

  • In a slow cooker, add the chicken, pineapple, onion, carrot, red bell pepper, ginger, brown sugar, ketchup, soy sauce, and apple cider vinegar. Mix until combined.
  • Cook on low for 6-8 hours.
  • In a small bowl, mix together the cornstarch and water. Once well combined, pour into the slow cooker and mix well.
  • Cook on high for a further 15 minutes or until thickened.
  • Serve & Enjoy.

Tender chunks of chicken coated in a crispy batter covered in a sweet and tangy sauce with pineapples and fresh peppers. A take-away classic made easily in the slow cooker.

435 g pineapple chunks in juice (1 can, both the fruit and the juice will be used)
150 ml apple juice (or pineapple juice if preferred)
1 green pepper (cut into 3cm pieces)
1 red pepper (cut into 3cm pieces)
½ white onion
4 tbsp tomato ketchup
3 garlic cloves (peeled and minced)
3 tbsp dark brown sugar
2 tbsp soy sauce
2 tbsp apple cider vinegar
1 tsp ground ginger
2½ tbsp cornflour
½ mild chilli powder
750 g chicken breast
400 ml vegetable oil
100 g plain flour
35 g corn flour
100 ml water (cool)
1 tsp baking powder
1 egg (beaten)
2 tsp salt (finely ground)
½ tsp garlic powder
½ tsp black pepper (finely ground)

Steps:

  • Peel the onion and core the peppers and cut into 3cm squares. Place these into the slow cooker along with the minced garlic.
  • Add the ginger, cornflour and chilli and stir well to coat the vegetables.
  • Add the sugar, soy sauce, vinegar, tomato ketchup, pineapple chunks and juice from the can and then top up with the apple juice. Mix everything together.
  • Cook on low for 4-5 hours, stirring half way through cooking.
  • In a large mixing bowl beat the egg and water together. Then gradually sieve in the plain flour, corn flour and baking powder while whisking continuously to avoid any lumps.
  • Once the flour is mixed in, stir in 1 tsp of salt and a pinch of black pepper. Set the batter aside whilst the chicken is prepared.
  • Remove any sinew from the chicken and cut each breast into chunks of 3-4cm square (approximately 6-8 chunks per chicken breast depending on their size).
  • In a bowl add garlic powder, 1 tsp of the salt and a pinch of black pepper and mix. Now put the chicken pieces in the bowl and coat evenly with the seasoning.
  • In a separate bowl put in 2 tablespoons of flour, take each piece of seasoned chicken and dredge in the flour making sure all sides are covered. The flour helps the batter to stick to the chicken.
  • Place a large frying pan over a medium to high heat then pour in the oil to a depth of around 1 to 2 cm (depending on the size of the pan not all of the 400ml of oil may be required). After 1 - 2 minutes test the oil is hot enough to begin cooking by dropping in a little of the batter (see recipe notes).
  • Now dip each piece of the chicken in the batter ensuring each piece is submerged entirely - I find it easiest to do this using cooking tongs. Transfer the pieces to the frying pan carefully placing them into the oil as to avoid any of the hot oil splashing. Leave space between them so they don't stick together whilst cooking. Fry for around 3-4 minutes on each side.
  • Test the chicken is cooked through by taking one of the fattest pieces and cutting in half, the chicken should be white with clear juices. The batter should be crisp and golden.
  • Place the cooked chicken pieces on a wire rack over a tray for a few minutes to allow any oil to drip away. The chicken pieces can be placed into the sauce in the slow cooker for the final 30 minute of cooking (to entirely soak them in the sauce!). Otherwise enjoy them crisp and pour the sauce over when serving.

1/4 cup packed brown sugar
1/3 cup Catalina dressing
1/4 cup light soy sauce
1 teaspoon grated gingerroot
1 tablespoon cornstarch
1 (8 ounce) can pineapple chunks, drained, liquid reserved
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
3 cups cooked white rice

Steps:

  • PLACE onions, carrots and celery in slow cooker; top with chicken.
  • MIX sugar, dressing, soy sauce and ginger; pour over chicken. Cover with lid.
  • COOK on LOW 4 to 5 hours, increasing heat to HIGH for the last 30 minute
  • STIR cornstarch into reserved pineapple liquid. Add to slow cooker with pineapple and peppers; stir. Cook, covered, 30 minute or until sauce is thickened. Serve over rice.

1 (16 ounce) can pineapple chunks in syrup, drained and liquid reserved
1 (14 ounce) can low-sodium low-fat chicken broth
1/4 cup vinegar
3 tablespoons brown sugar or 1 1/2 tablespoons Splenda brown sugar blend
1 teaspoon minced garlic
2 teaspoons reduced sodium soy sauce
1 large red bell pepper, cut into 1 inch chunks
1 medium onion, cut into 1 inch chunks
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Spray inside of slow cooker with cooking spray.
  • Place chicken breasts in slow cooker. combine pineapple syrup, broth, vinegar, brown sugar, garlic, and soy sauce in small saucepan.
  • Cook over medium heat, stirring frequently until sugar dissolves.
  • Pour mixture over chicken.
  • Cover and cook on high heat for 1 hour.
  • Add pineapple chunks, onion, bell pepper; cover and cook on low for 6-8 hours.
  • Combine cornstarch and water in a small bowl and mix until smooth.
  • Add mixture to slow cooker and stir to mix. Cover and cook on LOW for 30 minutes.

1-1/4 pounds boneless skinless chicken breasts, cut into 1-inch strips
1 tablespoon canola oil
Salt and pepper to taste
1 can (8 ounces) pineapple chunks
1 can (8 ounces) sliced water chestnuts, drained
2 medium carrots, sliced
2 tablespoons soy sauce
4 teaspoons cornstarch
1 cup sweet-and-sour sauce
1/4 cup water
1-1/2 teaspoons ground ginger
3 green onions, cut into 1-inch pieces
1-1/2 cups fresh or frozen snow peas
Hot cooked rice

Steps:

  • In a large skillet, saute chicken in oil for 4-5 minutes; drain. Sprinkle with salt and pepper. Drain pineapple, reserving juice; set pineapple aside. In a 5-qt. slow cooker, combine the chicken, water chestnuts, carrots, soy sauce and pineapple juice. Cover and cook on low for 3 hours or until chicken juices run clear., In a small bowl, combine the cornstarch, sweet-and-sour sauce, water and ginger until smooth. Stir into the slow cooker.   • To a 6-quart or larger slow cooker, add the chicken, carrots, red bell pepper, yellow bell pepper, onions, and carrots. To a medium bowl, add the soy sauce, honey, Worcestershire, white vinegar, tomato paste, garlic, ginger, and sambal oelek. Whisk to combine. Pour over the chicken.
  • Cover the slow cooker and cook on LOW 3 1/2 to 4 1/2 hours or HIGH for 1 1/2 to 2 1/2 hours, until the chicken reaches an internal temperature of 165 degrees F on an instant-read thermometer. The timing will vary based on your particular slow cooker model, so check early to make sure the chicken doesn’t overcook, especially if you are using chicken breasts.
