This soup is lovingly simmered on the stove or in the crock pot to produce the richest Beef Barley Soup recipe I've ever tasted. Shredded carrots and potatoes give it a fabulous, thick texture.

2 pounds stew meat (nicely marbled beef chunks)
salt and pepper
2 tablespoons oil
10 cups water
3 tablespoons beef base (mounded tablespoons good quality*)
2 cups celery (chopped)
2 onions (chopped)
5 cloves garlic (minced)
1 large potato (peeled and shredded, about 2 cups)
3-4 large carrots (peeled and shredded, about 2 cups)
1 cup pearl barley (*** rinsed)

Steps:

  • Generously salt and pepper the beef. In a large stockpot, heat the oil over medium-high heat.
  • When it is very hot, add about 1/3 of the meat. Brown for about 1-2 minutes, then turn to brown the other side. Remove to a plate when it is browned on all sides.
  • Repeat with remaining meat in 2 more batches. (If you add it all at once it will steam the meat instead of browning it--not what you want.)
  • When all the meat is browned, add all the meat back to the pot with 10 cups of water. Add 3 healthy tablespoons beef stock concentrate.
  • Add the chopped celery, onions, and garlic. Bring to a boil, then turn the heat to medium-low. Simmer for about 2 hours with the lid on.
  • When the meat is tender and you can break it apart easily with a wooden spoon, add the shredded potato and carrots. Bring to a boil, then continue to simmer on low for another 30-45 minutes, or until the carrots are tender.
  • Add 1 cup of barley. Bring to a boil, then reduce to low. Cook for another half hour, or until barley is tender and the soup tastes...like home.

I found this recipe in Southern Living and made it the other night for dinner. I don't know why it is called a soup there is really no broth. This to me is more like a stick to your ribs stew. I used carne asada cubed. This was so good. Try it with a good garlic bread. Awesome!

1/3 cup flour
3 tablespoons vegetable oil
4 cups water
5 baking potatoes, cubed
3 carrots, sliced

1 cup frozen sweet peas
1 (16 ounce) can whole kernel corn, drained
1 (6 ounce) can tomato paste
2 tablespoons beef bouillon granules
1 -2 teaspoon pepper

Steps:

  • Toss together steak and flour.
  • Brown steak in hot oil in a large skillet over medium-high heat 5 to 6 minutes.
  • Stir together browned steak, 4 cups water, and remaining ingredients in a 5 quart slow cooker.
  • Cook, covered, on high 8 hours or until vegetables are tender.

1 kg Beef cubes (See Note 1.)
3 tbsp Plain flour
2 tbsp Sunflower oil
1 Onion (See Note 2.)
3 Cloves Garlic (See Note 2.)
600 ml Beer (See Note 3.)
3 Carrots (Peeled and chopped.)
1/2 Swede (Peeled and chopped. (Rutabaga if you're in the USA.))
2 Beef stock cubes
3 tbsp Tomato puree
3 tbsp Worcestershire Sauce
Salt and freshly ground black pepper

Steps:

  • Coat the beef in the plain flour until it's well covered.
  • Heat the oil in a pan (or in your slow cooker pan if it's the type you can use on the hob) and brown the beef, in batches, don't overcrowd the pan, until it's browned and golden.
  • Add all of your other ingredients, with all of the browned beef, into the pan. Remove from the heat (or transfer to your slow cooker pan if you have used a different pan for the browning).
  • Pop the lid on and cook in the slow cooker for 5 - 6 hours on HIGH or 8 - 9 hours on LOW (this will vary slightly depending on the size of the cubes of meat and vegetables but don't worry, it's difficult to overcook this!)

2 Cans mushroom soup (10 ounce)

Steps:

  • Place the beef and onion in the crock pot and season with salt, pepper, garlic, thyme, and beef boullion.
  • In a mixing bowl combine the Worcestershire sauce, soup, and broth.
  • Pour over the meat and place the lid on the pan.
  • Cook on high for 4 to 5 hours, or on low for 7 to 8 hours.
  • 20 minutes before serving, cook the noodles according to package directions. NOTE: directions in notes for cooking pasta in the crockpot.
  • Place the noodles on a serving dish and top with the meat and gravy.
  • Sprinkle with parsley.

1 lb beef stew meat, cut into 1-inch cubes (I actually like to use sirloin steak)
fresh ground black pepper
2 tablespoons all-purpose flour
2 tablespoons canola oil
3 large onions, chopped (I only use 2 large onions when adding cabbage)
2 cups green cabbage (chopped or shredded, can use more)
12 small red potatoes, cut into quarters
2 medium carrots, peeled and sliced
4 garlic cloves, minced
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme leaves, crushed
2 tablespoons tomato paste (can use more)
1 1/2 teaspoons instant coffee crystals
4 cups beef broth
salt, to taste
sour cream (optional)
chopped green onion (optional)

Steps:

  • Season beef with black pepper and coat with flour.
  • Heat oil in skillet.
  • Add beef and cook until browned.
  • Place onions, cabbage, potatoes, carrots, garlic and thyme in slow cooker.
  • Top with browned beef.
  • Mix tomato paste, coffee and 1 cup broth, making sure tomato paste is dissolved.
  • Pour coffee mixture and remaining broth into slow cooker.
  • Cover and cook on LOW 8-10 hours or until done.
  • I add salt at the end to suit our taste and stir well.
  • Serve with sour cream and chopped green onions, if desired.
  • Notes: You can also use lower sodium or certified organic beef broth in place of the regular beef broth.
  • I also save time by buying meat that has already been cut into cubes. Sometimes I still have to cut the cubes smaller, though.
  • I also cut the vegetables the night before to save prep time in the morning.
