SHORT RIB STROGANOFF

3 pounds stew meat (I'm using beef short ribs)
2 tablespoons paprika
Salt and black pepper
3 tablespoons oil (I'm using olive)
2 cups sliced mushrooms (I'm using shiitakes)
4 cloves garlic, sliced
1 onion, thinly sliced (I'm using yellow)
3 tablespoons all-purpose flour
1 cup red wine
1 cup liquid (I'm using mushroom stock made from the shiitake stems)
1 cup milk
1 pound dry pasta (I'm using pappardelle)
1/2 cup sour cream
1/4 cup diced pickles (I'm using gherkins)
1/4 cup chopped fresh parsley, optional

Steps:

  • Season the meat with the paprika and some salt and pepper. Heat a Dutch oven or heavy-bottomed pot over medium heat and add the oil. When hot, add the meat and cook until brown on both sides. Remove to a plate and set aside.
  • Add the mushrooms and cook until brown, about 2 minutes. Add the garlic and onions and cook, stirring occasionally, until starting to soften, an additional 2 minutes. Add the flour and cook the roux, stirring, for a couple minutes. Whisk in the red wine and bring to a simmer. Add the stock and milk, whisking to remove any lumps. Place the ribs back in the pot and simmer until the meat is tender, about 2 hours. (Alternatively, cook in the oven at 275 degree F until tender.)
  • When you are ready to serve, bring a pot of water to a boil and salt liberally. Add the pasta, give it a stir and cook until al dente according to the package directions. Drain and set aside.
  • Remove the stroganoff from the heat, mix in the sour cream, pickles and parsley if using and serve with the pasta.

3 pounds boneless beef short ribs
Half a 750-millliliter bottle red wine
3 cloves garlic
1 carrot, peeled and diced
1 onion, peeled and diced
1 sprig fresh thyme
3 cups orecchiette pasta
Salt
1/4 pound (1 stick) butter
1 pound button mushrooms
1 cup Madeira
1 cup heavy cream
1 pound wild mushrooms
1/4 pound (1 stick) melted butter
4 sprigs fresh thyme
1 cup creme fraiche
1 ounce lemon juice
Zest of 1 lemon
Cracked black pepper

Steps:

  • For the short ribs: Sear short ribs, then add to a pressure cooker with red wine, garlic, carrot, onion and thyme. Cook on high pressure for 45 minutes to 1 hour. Cool and let pressure release, then open and remove short ribs from the liquid. Strain the liquid, reduce to a glaze and glaze the meat.
  • Boil the orecchiette until tender in salted boiling water. Strain and mount with butter.
  • For the mushroom puree: Chop the mushrooms and saute lightly in a saucepot. Deglaze with Madeira and reduce. Deglaze with cream and reduce until mushrooms are tender. Blend until smooth.
  • For the mushrooms: Preheat a wood-burning oven. Toss the mushrooms in the melted butter. Put on a sheet tray, cover with the thyme and roast in a wood-burning oven until tender.
  • For the lemon creme fraiche: Combine the creme fraiche, lemon juice, lemon zest and some black pepper.
  • Sauce the bottom of the plate with the mushroom puree, then top with orecchiette, mushrooms, glazed meat and a dollop of the lemon cream.

1 cup fat-free reduced-sodium beef broth
3 Tbsp. LEA & PERRINS Worcestershire Sauce

1 pkg. (16 oz.) egg noodles

Steps:

  • Mix 1/4 cup (4 Tbsp.) flour and 1 tsp. paprika. Add to ribs; toss to evenly coat. Heat oil in large skillet on medium heat. Add ribs; cook 5 min. or until evenly browned, turning occasionally.
  • Place ribs in slow cooker; top with remaining paprika, vegetables, garlic, pepper, broth and Worcestershire sauce. Cover with lid. Cook on HIGH 6 hours (or on LOW 8 to 10 hours).
  • Remove ribs from slow cooker; skim surface of sauce. Remove and discard rib bones. Return meat to slow cooker with sour cream and remaining flour; stir. Cook, covered, on LOW 10 to 15 min. or until slightly thickened. Meanwhile, cook noodles as directed on package.
  • Drain noodles; place in large serving bowl. Add meat mixture; stir.

1 1/2 pounds beef chuck roast
2 tablespoons all-purpose flour
1 teaspoon sweet paprika
1 teaspoon dried thyme
Kosher salt and freshly ground pepper
1 onion, chopped
2 cloves garlic, minced
8 ounces sliced mushrooms
1 1/4 cups mushroom or vegetable broth
12 ounces whole-wheat egg noodles
1 tablespoon unsalted butter
3/4 cup sour cream
Chopped fresh parsley, for serving

Steps:

  • Trim the excess fat from the chuck roast, then cut the meat into quarters. Transfer to a 6-quart slow cooker and toss with the flour, paprika, thyme, 1/2 teaspoon salt and a few grinds of pepper. Add the onion, garlic, mushrooms and broth. Cover and cook on low until the beef is fork-tender, 7 to 8 hours.
  • Skim off any excess fat from the slow cooker with a ladle. Using two forks, break up the beef into bite-size pieces and keep warm.
  • Bring a large pot of salted water to a boil. Add the egg noodles and cook as the label directs. Drain and return to the pot; toss with the butter.
  • Divide the noodles among bowls. Add the sour cream to the slow cooker and stir to combine. Divide the beef mixture among the bowls and top with parsley.

1 tbsp. canola oil
3 pounds bone-in beef chuck short ribs
2 medium onions, peeled and quartered
2 medium carrots, cut into large chunks
2 medium parsnips, cut into large chunks
2 medium turnips, peeled and cut into large chunks
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 sprigs fresh parsley, stems and leaves separated
1 tbsp. Worcestershire sauce
1 tbsp. spicy brown mustard
1 (12-ounce) dark stout beer, such as Guinness
Kosher salt
Black pepper

Steps:

  • In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
  • While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
  • To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

750g stewing steak , such as chuck, cut into strips
1 tbsp vegetable or rapeseed oil , plus a little more if needed
2 onions , halved and sliced
2 garlic cloves , crushed
1 beef stock cube , or 1 tbsp liquid stock
1 tbsp Dijon mustard
50g butter
200g chestnut mushrooms , halved
2 tsp cornflour
200g soured cream
small bunch parsley , chopped tagliatelle or mashed potato and a pinch of paprika, to serve

Steps:

  • Turn on the slow cooker. Season the beef. Heat the oil in a wide frying pan and add the beef in batches so as not to overcrowd the pan. Cook over a high heat until deep brown, then transfer to the slow cooker. Add the onion and garlic to the pan and cook for a few mins until soft, adding more oil, if needed. Add a splash of water and scrape any bits from the bottom of the pan. Tip everything into the slow cooker.
  • Add the stock to the beef, then the mustard and season. Add enough water to just cover the beef, put the lid on and cook on Low for 6-8 hrs or High for 5-6 hrs.
  • About 30 mins before serving, melt the butter in a frying pan and cook the mushrooms until soft and caramelised. Tip into the slow cooker. Mix the cornflour with a little liquid from the stroganoff in the frying pan until smooth, then add about 100ml more and bring to a simmer. Once thickened, pour into the slow cooker with the sour cream. Turn to High (if not already) and cook for another 20 mins. Stir through the parsley. Serve with tagliatelle or mash, sprinkled with paprika.

1/2 teaspoon pepper
1 tablespoon canola oil

1 cup beef broth
4 fresh thyme sprigs

2 large onions, cut into 1/2-inch wedges
6 garlic cloves, minced

2 cups dry red wine or beef broth

Steps:

  • Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add carrots, broth, thyme and bay leaf to ribs., Add onions to the same skillet; cook and stir over medium heat 8-9 minutes or until tender. Add garlic and tomato paste; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook 8-10 minutes or until liquid is reduced by half. Add to slow cooker. Cook, covered, on low 6-8 hours or until meat is tender., Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard thyme and bay leaf.   • In a large enameled cast-iron casserole, heat 1 1/2 tablespoons of the vegetable oil until shimmering. Add half of the short ribs and cook slowly over moderately low heat, turning, until browned, about 10 minutes. Transfer the short ribs to a platter and repeat with the remaining oil and ribs.
  • Add the onions to the casserole and cook over low heat, stirring occasionally, until softened, about 8 minutes.
