1 cup raisins
1 can (8 ounces) crushed pineapple, undrained
2 large firm bananas, halved
1 can (12 ounces) evaporated milk
1 can (10 ounces) frozen nonalcoholic pina colada mix
1 can (6 ounces) unsweetened pineapple juice
3 large eggs, room temperature
1/2 cup cream of coconut
1/4 cup light rum, optional
1 loaf (1 pound) French bread, cut into 1-inch cubes
Whipped cream and maraschino cherries, optional

Steps:

  • In a small bowl, combine raisins and pineapple; set aside. In a blender, combine the bananas, milk, pina colada mix, pineapple juice, eggs, cream of coconut and, if desired, rum. Cover and process until smooth., Place two-thirds of the bread in a greased 6-qt. slow cooker. Top with 1 cup raisin mixture. Layer with remaining bread and raisin mixture. Pour banana mixture into slow cooker. Cover and cook on low 4-5 hours or until a knife inserted in the center comes out clean. Serve warm, with whipped cream and cherries if desired.

2 eggs (slightly beaten)
2 ½ cups 2% milk
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup brown sugar
½ cup chopped dates
4 cups brioche bread (cut into 1-inch cubes)

Steps:

  • In medium mixing bowl, combine first 5 ingredients and whisk to combine. Add in brown sugar and dates and stir. Cut brioche bread into 1-inch cubes. Combine bread with egg and milk mixture and stir until bread is well coated.
  • Pour into an oven-safe casserole dish that will fit into your slow cooker.
  • Add ½ cup hot water to the slow cooker.
  • Put a trivet, aluminum foil shaped into a ring, or Mason jar lids onto the bottom of the slow cooker croc. Put the casserole dish on top of that.
  • Cover the slow cooker and cook on high for 2 hours. Serve pudding warm or cold.

1 cup margarine or butter, softened
1 teaspoon ground cinnamon
8 eggs
5 cups toasted bread cubes
2 cans (15.25 ounce size) unsweetened crushed pineapple, drained
chopped pecans, optional
whipped cream, optional

Steps:

  • In a bowl, beat sugar, margarine and cinnamon with mixer. Add eggs and beat until well blended. Fold bread cubes and pineapple into creamed mixture. Pour into crock pot. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. Before serving, top with chopped pecans and whipped topping if desired. Serve warm.

I love pineapple so I love anything with pineapple in it. This is a recipe I found stuck in one of my old cookbooks. It was given to me by a co-worker years ago and I have always liked it. I have even replaced the pineapple with apple pie filling when that was all I had.

1 c butter, softened
2 can(s) (15-1/4 oz) unsweetened crushed pineapple, 1 drained, 1 not drained
2 c sugar
1 tsp cinnamon
6 c toasted bread cubes (i use hawiian bread)
1 c dark or golden raisins
8 eggs, slightly beaten
chopped pecans (optional)
whipped topping (optional)
powdered sugar for garnish

Steps:

  • 1. In a bowl, beat butter, sugar and cinnamon with an electric mixer. Add eggs and beat until fluffy.
  • 2. Fold pineapple and bread cubes into the creamed mixture.
  • 3. Pour into the crockpot. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • 4. Before serving top with chopped pecans, whipped topping and/or powdered sugar if desired. Serve warm.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
  • In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. 1 cup brown sugar

Steps:

  • If using whole pineapple: Peel, quarter, and cut away the core from the pineapple. Discard the core. Cut each quarter in half lengthwise then slice 1/4-inch thick slices crosswise.
  • Stir the pineapple together with the sugar, ginger, and cinnamon in a slow cooker. Cover and cook on HIGH for 4 hours, until the pineapple is very tender and slightly sweet.
  • Serve warm with scoops of coconut ice cream on top. The compote keeps for up to a week tightly sealed in the refrigerator.
