1 bag (16 oz) frozen cooked meatballs (about 32)
1 jar (12 oz) beef gravy
1 can (14.5 oz) diced tomatoes, undrained
Freshly ground black pepper, if desired

Steps:

  • In 4- to 5-quart slow cooker, layer all ingredients in order listed.
  • Cover; cook on Low setting 8 to 10 hours. Before serving, gently stir stew.

2 cups (about 4 large) carrots, cleaned and sliced
1 medium onion, chopped finely
3 stalks celery, cleaned and sliced
1 (10¾ oz) can tomato soup
1 (10½ oz) can beef gravy
1 cup water
1 envelope onion soup mix
2 beef bouillon cubes or 2 teaspoons granules

For added kick, you could add one tsp of dried chili peppers. **May9, 2008 - it appears not all slowcookers are the same so I have made a small adjustment with the addition of water to the recipe. My cooker doesn't require this but it appears to be a minority! So give it a whirl and then adjust recipe to suit yours.

1/3 cup Italian style seasoned breadcrumbs
1 egg
2 tablespoons milk
2 tablespoons grated Parmesan cheese
¾ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon pepper
2 carrots, peeled and sliced into bite-sized rounds
6 ounces tomato paste
2 cups beef broth, plus additional (to thin to desired consistency, as needed)
½ cup marinara sauce
1 teaspoon seasoned salt (such as Lawry's)
½ teaspoon oregano
½ teaspoon basil
1 (10.8 ounce) package frozen Italian-style vegetables (I used Birds Eye Steamfresh Italian Blend)
Optional, for serving: cooked pasta or rice
Optional garnish: fresh parsley; fresh basil

Steps:

  • Place carrots in bottom of slow cooker.
  • In a large bowl, use hands or a fork to gently combine meatball ingredients. Form meat mixture into 1-inch balls.
  • Place meatballs on top of carrots in the slow cooker.
  • In a separate bowl, combine tomato paste, broth, marinara, seasoned salt, oregano, and basil. Pour over meatballs.
  • Cover and cook on LOW for about 4 hours or on HIGH for about 2 hours. For a thinner soup rather than a stew, add extra broth until it reaches desired consistency.

1/2 cup ​ fine dry breadcrumbs (plain or seasoned)
1 teaspoon Worcestershire sauce
2 large eggs, lightly beaten
1 teaspoon kosher salt (1/2 teaspoon if the breadcrumbs contain salt)
1/4 teaspoon ground black pepper
2 pounds ground beef
2 tablespoons vegetable oil
4 to 5 medium red potatoes
1 to 2 carrots
2 ribs celery
1 medium onion
1 (10 3/4-ounce) can cream of mushroom soup (may use Healthy Request or other low-fat)
1 (10 3/4-ounce) can tomato soup

Steps:

  • In a large bowl, combine the eggs with the dried minced onion, breadcrumbs, Worcestershire sauce, and salt and pepper. Add the meat and mix with your hands to blend thoroughly.
  • Shape the meat mixture into meatballs about 1 1/2 inches in diameter.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Arrange the meatballs in the hot oil and cook for about 15 minutes, frequently turning to brown all sides.
