1 beef rump roast or bottom round roast (3 pounds)
2 cups water
1 envelope zesty Italian salad dressing mix
1 envelope au jus gravy mix
1 medium onion, thinly sliced
1 can (4 ounces) chopped green chilies
12 Italian rolls, split

Steps:

  • Cut roast in half. Place in a 4-qt. slow cooker. Combine the water with salad dressing and au jus mixes; pour over meat. Top with onion and chilies., Cover and cook on low for 9-11 hours or until meat is tender. Remove meat. When cool enough to handle, shred meat with two forks. Skim fat from cooking juices. Return meat to slow cooker; heat through. Serve on rolls. Freeze option: Freeze individual portions of cooled meat mixture and juices freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve on rolls.

Number Of Ingredients 13

3 to 4 pounds boneless beef eye of round (trimmed of excess fat)
1 tablespoon canola or vegetable oil
salt and pepper
1 large onion (peeled, trimmed, and roughly chopped)
6 garlic cloves (peeled and smashed with the side of a knife)
1/2 to 3/4 teaspoons crushed red pepper flakes (optional but tasty)
1 can of 14.5 ounces fire roasted tomatoes or petite diced tomatoes (or 1 1/2 cups)
2 cups beef broth
1 cup dry red wine
1 jar julienne cut sun dried tomatoes 8.5 ounces packed in oil
1 jar green olives (5.75 ounces, drained and roughly chopped)
1 jar capers (3.5 ounces, drained and rinsed)
4 to 5 strips of jarred roasted red peppers

Steps:

  • Sprinkle the trimmed beef round generously with salt and pepper. Drizzle the oil in a heavy-bottomed frying pan set over high heat. Sear all sides of the beef round for several minutes, or until browned on all sides. Use the tongs to transfer the roast to the slow-cooker. Return the pan to the burner and lower the heat to medium low. Add the onions and garlic to the pan and sautee just until fragrant. Add the beef broth, red wine, sundried tomatoes AND their oil, green olives, capers, roasted red peppers, and tomatoes and raise the heat back up to HIGH. Bring to a boil, scraping the bottom of the pan to release any of the beautiful brown bits the beef left behind. Allow the mixture to boil for one minute, then pour over the beef round in the slow cooker. Cover and cook on HIGH for 4 to 5 hours or LOW for 6 to 8 hours. Carefully transfer the beef to a rimmed plate or dish. Use two forks to shred the beef before returning it to the slow-cooker and tossing to distribute everything evenly.
  • Serve over polenta, noodles, rice, or on crusty rolls.

1/4 cup tomato paste
8 hoagie rolls, toasted
2 cups shredded mozzarella cheese

Steps:

  • In 4 to 5 quart slow cooker, place onions.
  • Place beef on onions.
  • In small bowl mix diced tomatoes and tomato paste, pour over beef.
  • Cover aand cook on Low heat setting 8 hours.
  • Remove beef from cooker, place on cutting board.
  • Use 2 forks to pull beef into shreds.
  • Return beef to cooker.
  • Spoon about 1/2 cup beef mixture onto each bun.
  • Top with 1/4 cup cheese.

This makes a sandwich similar to one I used to get at a local restaurant when I lived in a suburb of Chicago. My all time favorite! Serve on crusty rolls with roasted sweet or hot peppers, if desired.

1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast

Steps:

  • Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
  • Place roast in slow cooker, and pour salad dressing mixture over the meat.
  • Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

Recipe originally called for a chuck roast but the picture was definitely not a chuck roast. Next time, I will buy a better cut of meat. It also called for beef broth but due to sodium, I used water and it was really tasty that way.

1 onion, quartered
1 1/4 cups water
1 (1 ounce) au jus mix
1 (2/3 ounce) package dried Italian salad dressing mix (such as Good Seasonsà )
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Place beef chuck roast into a slow cooker and scatter onion quarters around the meat. Pour the water over the meat and sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast.

3 medium green peppers, diced
2 large onions, diced
1 can (6 ounces) tomato paste
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons chili powder
2 teaspoons salt
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
14 to 16 sandwich buns, split

Steps:

  • In a 6-qt. slow cooker, combine the beef, green peppers and onions. In a small bowl, combine tomato paste, brown sugar, vinegar, chili powder, salt, Worcestershire sauce and mustard. Another delicious recipe from my friend Hazel. When she served this everyone around the table was going "mmmmm"! I have served this MANY times and always get asked for the recipe when I do. This isn't a fast recipe, but well worth the time it takes to make it!

3 lbs stewing beef, in 1 inch cubes
1 large onion, minced
3 beef bouillon cubes
2 cups hot water
1 cup Burgundy wine (or other dry red wine)
1 package good seasons Italian salad dressing mix

Steps:

  • Brown the beef in a small amount of oil until nice and brown.
  • Add the remaining ingredients.
  • Simmer until the beef is very tender and starts to shred, a MINIMUM of 3 hours.
  • Check as it simmers to make sure it doesn't dry out.
  • Adding more water, wine, or beef broth as needed.
  • But not until necessary.
  • Serve on crusty hard rolls.
  • We sometimes like to add sauteed pepper strips and a slice of Provolone cheese.
