This recipe was handed down from my dad. I adjusted it to go into the slow cooker. It's a lot easier. Just set it and forget it.

- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and transfer beans to a pot; add enough water to cover beans.
- Bring water to a boil, reduce heat, cover pot, and simmer until beans are slightly tender, about 1 hour.
- Mix 4 cups water, molasses, brown sugar, salt, mustard, and pepper together in a bowl until smooth.
- Mix beans, salt pork, and onion together in a slow cooker. Add molasses mixture and more water to cover beans if needed; stir well.
- Cook on Low for 8 to 10 hours.

- The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.

- Combine the beans, fennel, tomato, 6 cloves garlic and the lemon zest in a 6- to 8-quart slow cooker. Tie the thyme, parsley stems and 1/2 leek together with kitchen twine; add to the pot. Add 4 1/2 cups water, 1 teaspoon salt and a few grinds of pepper. Cover and cook on low until the beans are tender, 7 to 9 hours.
- Preheat the broiler. Discard the leek bundle from the beans and stir well. Gently smash the garlic against the side of the slow cooker; season with salt and pepper. Let stand uncovered.
- Thinly slice the remaining 1/2 leek into matchsticks. Heat 1/4 cup olive oil in a medium nonstick skillet over medium heat. Add the leek and cook, stirring frequently, until lightly browned and crisp, 6 to 9 minutes. Transfer the crispy leek to paper towels with a slotted spoon; season with salt. Reserve the leek oil.
- Arrange the bread on a baking sheet and brush both sides with the leek oil. Pour any excess leek oil into the beans. Broil the bread, turning once, until golden, 3 to 5 minutes. Rub with the remaining garlic clove and season with salt.
- Stir the lemon juice into the beans. Divide among bowls with a slotted spoon; pour some bean broth into each bowl. Drizzle evenly with the remaining 2 tablespoons olive oil. Top with the crispy leek, chives and chopped parsley. Serve with the bread.

- Soak 2 cups of bean in water over night, or in the morning. The beans must have soaked a minimum of 6 hours. For those who have never soaked beans, pour the beans in to a bowl and cover beans with water. Water should be at lease 1/2 inch to 3/4 of an inch above beans. This allows beans to absorb enough water with out getting dry.
- Strain and pour the beans in the crockpot. Slice your bacon I use scissors if it is completely unthawed medium to thin slices. Chop onions to your preferred size I like Medium, and chop garlic. Add to the beans.
- Pour water into a bowl and mix remaining ingredients in the water and stir. Pour over beans and mix well.
- Cover turn on LOW and cook 8 to 10 hours. DO NOT LIFT THE LID, only when it is close to the end of cooking time. Take a test and see if you like the texture, if not cook for remainder time.

- In a large pot over high heat, combine the beans with water to cover and bring to a boil for 10 minutes. Remove from heat, but let sit for 1 hour.
- Drain beans and place them in a slow cooker. (If using ham hocks, add now.)
- Add the onion, brown sugar, maple syrup, salt and water.
- Mix well, cover and cook on high setting for 4-5 hours, stirring occasionally.

- If your beans have soaked overnight, Add enough HOT water to cover beans by about an inch.
- Stir.
- Cover.
- Cook on High 1 hour or longer until beans are tender.
- Beans need to be tender before you add the other ingredients otherwise it is hard to cook them to the soft stage.
- Drain.
- If you forgot to do this step then, place 4 cups beans into slow cooker.
- Add at least 10 cups hot water, cover.
- Cook on High for 2 hours.
- Test a bean - they should be soft/tender BEFORE adding remaining ingredients.
- Drain.
- Put remaining ingredients into slow cooker.
- Stir gently.

I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.
