1 (16 ounce) package dried navy beans
4 cups water, or more as needed
½ cup molasses
2 tablespoons brown sugar
1 teaspoon salt
¾ teaspoon dry mustard
⅛ teaspoon ground black pepper
¼ pound salt pork, thinly sliced
1 onion, sliced

Steps:

  • Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and transfer beans to a pot; add enough water to cover beans.
  • Bring water to a boil, reduce heat, cover pot, and simmer until beans are slightly tender, about 1 hour.
  • Mix 4 cups water, molasses, brown sugar, salt, mustard, and pepper together in a bowl until smooth.
  • Mix beans, salt pork, and onion together in a slow cooker. Add molasses mixture and more water to cover beans if needed; stir well.
  • Cook on Low for 8 to 10 hours.

3 cups dry navy beans, soaked overnight or boiled for one hour
1 ½ cups ketchup
1 ½ cups water
¼ cup molasses
1 large onion, chopped
1 tablespoon dry mustard
1 tablespoon salt
6 slices thick cut bacon, cut into 1 inch pieces
1 cup brown sugar

Steps:

  • Drain soaking liquid from beans, and place them in a Slow Cooker.
  • Stir ketchup, water, molasses, onion, mustard, salt, bacon, and brown sugar into the beans until well mixed.
  • Cover, and cook on LOW for 8 to 10 hours, stirring occasionally if possible, though not necessary.

8 cups water
4 ounces diced salt pork
1 cup chopped onion
½ cup molasses
⅓ cup packed brown sugar
1 teaspoon dry mustard
⅛ teaspoon ground black pepper

Steps:

  • The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  • In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

One 6-ounce can tomato puree
1/2 cup brown sugar
1/4 cup molasses
1 tablespoon dry mustard
8 slices bacon, cut into 1-inch pieces
1 large onion, diced
1/4 cup cider vinegar
Kosher salt

Steps:

  • Drain the beans, cover with fresh water and bring to a boil. Simmer for about 1 hour.
  • Drain and rinse the beans, then transfer them to a slow cooker insert. Add the tomato puree, brown sugar, molasses, dry mustard, bacon, onion and 1 1/2 cups water and stir to combine. Cook on low until the sauce is thick and syrupy, 8 to 10 hours.
  • Before serving, stir in the cider vinegar and season to taste with salt.

3 cloves garlic
2 dried bay leaves
1/4 cup cilantro leaves plus 1/4 cup chopped cilantro stems, optional

3/4 cup shredded sharp Cheddar or crumbled Cotija or queso fresco
1 lime, cut into wedges

Steps:

  • Put the beans, chicken broth, pickled jalapeños and brine from the jar in a 4-to-7-quart slow cooker. Stir in the oregano, cumin, garlic, bay leaves, cilantro stems if using and 1 teaspoon salt. Cover and cook on high until the beans are tender but still hold their shape, 8 to 10 hours.

Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.

8 ounces dried cannellini beans, rinsed
1 bulb fennel, halved lengthwise, cored and sliced root to tip
1 plum tomato, cored and halved
7 cloves garlic, peeled
6 wide strips lemon zest, plus 1 tablespoon lemon juice (from 1 lemon)
1 small bunch thyme
1/4 bunch parsley stems, plus 1/4 cup chopped leaves
1 large leek, white and light green part only, halved lengthwise
Kosher salt and freshly ground pepper
6 tablespoons extra-virgin olive oil
4 slices white or sourdough bread (1/2 to 3/4 inch thick)
1/4 cup chopped fresh chives

Steps:

  • Combine the beans, fennel, tomato, 6 cloves garlic and the lemon zest in a 6- to 8-quart slow cooker. Tie the thyme, parsley stems and 1/2 leek together with kitchen twine; add to the pot. Add 4 1/2 cups water, 1 teaspoon salt and a few grinds of pepper. Cover and cook on low until the beans are tender, 7 to 9 hours.
  • Preheat the broiler. Discard the leek bundle from the beans and stir well. Gently smash the garlic against the side of the slow cooker; season with salt and pepper. Let stand uncovered.
  • Thinly slice the remaining 1/2 leek into matchsticks. Heat 1/4 cup olive oil in a medium nonstick skillet over medium heat. Add the leek and cook, stirring frequently, until lightly browned and crisp, 6 to 9 minutes. Transfer the crispy leek to paper towels with a slotted spoon; season with salt. Reserve the leek oil.
  • Arrange the bread on a baking sheet and brush both sides with the leek oil. Pour any excess leek oil into the beans. Broil the bread, turning once, until golden, 3 to 5 minutes. Rub with the remaining garlic clove and season with salt.
  • Stir the lemon juice into the beans. Divide among bowls with a slotted spoon; pour some bean broth into each bowl. Drizzle evenly with the remaining 2 tablespoons olive oil. Top with the crispy leek, chives and chopped parsley. Serve with the bread.

1/2 teaspoon cayenne
1/2 teaspoon onion powder

Steps:

  • In a slow cooker, combine the beans, andouille, celery, ham shank, onions, bell peppers, chili powder, cumin, garlic powder, cayenne, onion powder, paprika, brown sugar and 2 teaspoons salt. Add the chicken stock and 2 cups water and stir to mix.

2 cups navy beans (measured prior to soaking)
1 1/4 cups water
3/4 lb bacon (sliced small)
1 medium onions (chopped) or 1 large onion (chopped)
3 garlic cloves (chopped or sliced)
3 tablespoons ketchup
3 tablespoons brown sugar
2 tablespoons molasses (optional)
1 1/2 tablespoons dry mustard
1 tablespoon chili powder
1/4 teaspoon cayenne pepper

Steps:

  • Soak 2 cups of bean in water over night, or in the morning. The beans must have soaked a minimum of 6 hours. For those who have never soaked beans, pour the beans in to a bowl and cover beans with water. Water should be at lease 1/2 inch to 3/4 of an inch above beans. This allows beans to absorb enough water with out getting dry.
  • Strain and pour the beans in the crockpot. Slice your bacon I use scissors if it is completely unthawed medium to thin slices. Chop onions to your preferred size I like Medium, and chop garlic. Add to the beans.
  • Pour water into a bowl and mix remaining ingredients in the water and stir. Pour over beans and mix well.
  • Cover turn on LOW and cook 8 to 10 hours. DO NOT LIFT THE LID, only when it is close to the end of cooking time. Take a test and see if you like the texture, if not cook for remainder time.

1 onion, chopped
1/2 cup brown sugar, packed
1/2 cup maple syrup
1 teaspoon salt
1 cup water
1/2 cup ketchup
2 tablespoons prepared mustard
1 lb ham hock (optional)

Steps:

  • In a large pot over high heat, combine the beans with water to cover and bring to a boil for 10 minutes. Remove from heat, but let sit for 1 hour.
  • Drain beans and place them in a slow cooker. (If using ham hocks, add now.)
  • Add the onion, brown sugar, maple syrup, salt and water.
  • Mix well, cover and cook on high setting for 4-5 hours, stirring occasionally.

And the same principles for cooking beans on the stovetop apply: Skip soaking the beans; use flavorings to infuse the beans and the bean-cooking liquid; and salt before and after cooking. You can follow this formula for almost any dried bean, but know that the cook time will vary based on the age and type of bean, as well as the size and strength of your slow cooker. Start checking at the six-hour mark to see how quickly your beans are cooking. Keep flavorings in fairly large pieces, as the long cook time could turn smaller bits to mush.

Steps:

  • In a 5-quart or larger slow cooker, add the beans, olive oil, 1 teaspoon salt and your selection of flavorings. Add water to cover 2 inches above the beans, then cook on low until tender, 8 to 10 hours. 3 -4 cups raw dried navy beans, cover with
8 -12 cups cold water, and soak overnight
3 teaspoons salt
1 tablespoon molasses or 1 tablespoon corn syrup
2 teaspoons prepared mustard
1/2 cup brown sugar
2 cups ketchup
1 tablespoon soya sauce (optional)
3 cups water
1/4-1/2 lb bacon, slices raw

Steps:

  • If your beans have soaked overnight, Add enough HOT water to cover beans by about an inch.
  • Stir.
  • Cover.
  • Cook on High 1 hour or longer until beans are tender.
  • Beans need to be tender before you add the other ingredients otherwise it is hard to cook them to the soft stage.
  • Drain.
  • If you forgot to do this step then, place 4 cups beans into slow cooker.
  • Add at least 10 cups hot water, cover.
  • Cook on High for 2 hours.
  • Test a bean - they should be soft/tender BEFORE adding remaining ingredients.
  • Drain.
  • Put remaining ingredients into slow cooker.
  • Stir gently.
  • Cover and cook: On Low for 8 to 10 hours or on High for 4 to 5 hours.

  • Heat the slow cooker if necessary. Heat the oil in a large frying pan and fry the onion until it starts to brown, then add the garlic and cook for 1 min. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

16 ounces dried navy beans
1 1/2 cups ketchup
1 1/2 cups water
