FRUIT 'N' CREAM CREPES
Steps:
- In a small bowl, combine the first 7 ingredients. Cover and refrigerate for 1 hour., In an 8-in. nonstick skillet, melt 1 teaspoon butter. Stir batter; pour about 2 tablespoons into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Make 3 more crepes, adding remaining butter to skillet as needed., For filling, in a small bowl, beat the cream cheese, 3 tablespoons confectioners' sugar, milk and vanilla until smooth. Spread 1 rounded tablespoon on each crepe; top with 1/4 cup fruit and roll up. Sprinkle with remaining confectioners' sugar.

FRUIT KEBABS

- Cut apricots in half and remove pits. Cut peaches in eighths (or quarters, depending on size). Cut pineapple in chunks. Peel tangerine and cut in quarters. Peel bananas and cut into 1-inch chunks. Peel apples and cut into eighths. Put apples, peaches and bananas in bowl with lemon juice and coat thoroughly. Place a mixture of fruits on each skewer.
- To make sauce, melt butter, sugar, orange juice and orange rind in small sauce pan and stir until melted and then add Grand Marnier. Grill kebabs over medium heat, basting frequently. Combine remaining sauce with 1/2 cup cream and serve with hot kebabs.
TROPICAL FRUIT KEBABS

Steps:
- Place the butter in a small skillet. Split the vanilla bean and scrape the seeds onto the butter. Mash seeds into the butter with the back of a spoon. Add the scraped pod and melt the butter over low heat. Remove from heat and set aside to steep.
- Heat the coconut cream and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until melted and smooth. Stir in the lime zest. Set aside. (The vanilla butter and chocolate sauce can be made up to 3 days ahead, refrigerated, and reheated before grilling.)
- If using wooden skewers, soak them in water for 30 minutes before grilling. Prepare an outdoor grill with a low-medium fire.
- Prepare the fruit for the skewers, cutting the fruit into 2-inch chunks. Thread the fruit onto 8 (8-inch) skewers, alternating the mango and papaya. Brush lightly with some of the vanilla butter. Grill the fruit until lightly charred but not mushy, turning as needed, about 5 minutes per side. Pool about 2 tablespoons chocolate sauce on each of 4 plates, arrange 2 skewers on each plate, and drizzle with a bit of vanilla butter.
TROPICAL FRUIT KEBABS
Steps:
- 1. Soak eight 8-inch bamboo skewers in water for 30 minutes. Heat a grill to medium low.
- 2. Place butter in a small skillet. Split vanilla bean and scrape seeds onto butter and mash with back a spoon. Add scraped pod and melt butter over low heat. Remove from heat and set aside to steep.
- 3. Heat cream of coconut and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until chocolate is melted and smooth. Stir in lime zest. Set aside.
- 4. Cut mango and papaya into 2-inch chunks and alternately thread onto skewers. Brush lightly with vanilla butter and grill until fruit is lightly charred, turning as needed, about 5 minutes per side. Serve with chocolate sauce.

QUICK N' EASY FRUIT CREPES
A girl named Sophie shared this recipe with me, I am not sure where she got it from, but it remains in my memory forever! These crepes are very tasty and would double as pancakes if that's what you prefer, although they make thin pancakes.

Steps:
- Spray non-stick on pan, and heat on medium heat.
- Combine all ingredients in a measuring cup.
- When pan is ready (water droplets thrown on it should sizzle), pour on crepe batter until desired size. (Swivel the pan a little to spread out the batter a bit).
- Once the edges have changed colour and firmed up, flip the crepe and leave on the other side for about 10 seconds.
- Cover with fruit topping and whipped cream.
- Fruit Topping Suggestion: Combine frozen fruit in pot with water and sugar (You can use fresh fruit too, I just happen to have a lot of frozen fruit handy.).
- Heat on medium high heat (while you are making the crepes).
- When it's heated you can either leave as is or puree it.

This recipe is light and healthy. Great for get togethers and whats even better is that is great for all ages and all lifestyles, whether your dieting or not. The possibilities are endless, but you could use kiwi, mango, blueberries, raspberries, melons (i.e cantaloupe, watermelons) etc.

Steps:
- Put the cut up bananas in a medium bowl. Combine the orange juice with the bananas and gently toss a couple of times to coat bananas.
- This method should keep bananas from turning brown.
- Take a wooden skewer and thread your fruit on.
- *To enhance the sweetness of the strawberries, instead of using whole strawberries, cut each one in half place in a medium bowl and add a wee bit of sugar and toss around.
- Method 2.
- Add about 5 large tbsp of apple jelly to a small saucepan and stir over a medium jelly, until it because less lumpy, let cool.
- Slice bananas and coat with apple jelly.
- Slice strawberries and cut in half and coat with either sugar or apple jelly.
- Slice the rest of the fruit and set aside.
- Stick the fruit on the skewers.
- Enjoy!
