SLOW COOKER ROAST PORK WITH HONEY GARLIC BUTTER GRAVY
Delicious slow cooked pork shoulder with cajun spices smothered in a delicious garlic honey butter sauce.

Steps:
- Set up your slow cooker
- Prepare your pork shoulder by removing the skin and fat layer as best you can
- Place the roast in a large dish
- Combine the spice rub ingredients of cajun spice mix, paprika, salt and pepper
- Drizzle over the olive oil and rub into the meat with your hands on all sides
- Pour over the spice rub and massage this into all sides of the meat until fully covered
- In a frying pan add the second measure of olive oil and once heated add the pork roast and begin to sear the outside of the pork, turning to ensure each side is browned but not burnt to lock in the flavour of the spices.
- Remove and place pork into the slow cooker bowl
- Clean out your frying pan or wipe with a paper towel and add the butter and melt on a medium heat
- Once the butter has melted add the crushed garlic and cook for a minute until it begins to go golden brown and aromatic.
- Then add the honey, cider vinegar, chicken stock, salt and pepper, mix with a whisk to combine.
- Bring this mixture to the boil, and once boiling allow this to simmer for 1 minute
- Carefully pour this mixture over the pork shoulder
- Cover and cook on low for 10 hours, until the pork is tender, or until the pork shoulder reaches 65C internal temp, turning once during cooking
- Once cooked remove the pork roast from the slow cooker and cover in foil to rest
- Drain the juices through a sieve into a frying pan.
- In a small cup add the cornflour and a few tablespoons of the juices and mix well
- Pour this back into the frying pan and bring the mixture to the boil
- Continue to boil for at least six minutes until the mixture thickens, it can take longer, you ideally want it near runny honey texture, it will also thicken upon standing
- Remove the gravy from the heat and transfer to a pouring jug
- Serve thick slices of the Roast pork with sides of your choice, and smother in lashings of the gravy sauce

SLOW COOKER GARLIC BUTTER PORK ROAST
Steps:
- Blot roast dry with paper towels. Sprinkle roast with Cajun seasoning, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Add pork and sear on all sides. Transfer to a 6-quart slow cooker.
- Scatter the garlic on top of and around pork. Sprinkle the thyme and red pepper flakes over pork.Scatter butter over pork.
- Place lid on slow cooker and cook on LOW for 5 to 7 hours or on HIGH for 4 to 5 hours.
- Pour cooking juices into a medium saucepan. Place cornstarch in a small bowl and add 3 tablespoons of beef broth. Stir until mixed. Pour into saucepan along with remaining beef broth.
- Bring to a simmer for 2 to 3 minutes to thicken. Season to taste with salt and pepper.
- Slice pork roast and serve with gravy.

- Heat oil in a large skillet over medium-high heat. Season pork with salt and pepper. Place pork in the hot skillet and sear until brown on all sides, about 3 to 4 minutes per side. Transfer pork to a 6-quart slow cooker.
- Add garlic cloves to the skillet. Cook, stirring often, over medium-high heat until brown, about 5 minutes. Add onion and cook until softened, about 3 minutes. Sprinkle flour over garlic and onion and cook, stirring, for 2 minutes.
- Pour chicken broth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in lemon juice, Italian seasoning, salt, and pepper, and bring to a boil. Pour broth mixture and honey over the pork in the slow cooker.

I tried this cut of meat when it was on sale, and for lack of any other ideas I took suggestions from the back of the label, with a few tweaks (like making gravy). This is a very popular dish at our house, and it could not be easier! Instead of rubbing the roast with the onion soup mix and then adding the cranberry sauce, you can also just mix the onion soup mix with the cranberry sauce and pour the whole mixture over the roast.

- In 12-inch skillet, heat oil over medium-high heat until hot. Place pork roast in skillet and cook until just browned on all sides.
- Transfer pork to 5 to 6 quart slow-cooker pot, sprinkle with salt and pepper. Add broth, onion, garlic, lemon peel, potatoes and carrots to pot. Sprinkle with thyme.

- Trim excess fat from pork. Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides. Sprinkle with salt and pepper.

- Trim pork roast of excess fat and pat dry with paper towels.
- Make a spice rub by mixing smoked paprika, thyme, garlic powder, onion powder, 2 teaspoons salt, and 1/2 teaspoons black pepper in a small bowl.
- Rub the pork roast with 1/2 tablespoon of extra virgin olive oil.
- Sprinkle the spice rub over the pork roast, patting to adhere the spice rub all over.
- Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium heat.
- Add the pork roast to the skillet and sear on all sides until golden brown, taking care not to burn the spices.
- Place the pork roast in the slow cooker.
- Wipe out the skillet with a paper towel.
- Add the butter to the skillet and melt over medium heat.
- Add the minced garlic to the skillet and cook for about 1 minute.
- To the skillet, add the honey, cider vinegar, 1/2 teaspoon salt, and 1/4 teaspoon of black pepper, mixing well.
- Simmer the honey butter sauce for about 30 seconds.
- Pour the honey butter sauce over the pork roast in the crock pot, saving the skillet for later use.
- Cover the crock pot and cook on low for 4 to 5 hours.
- When done, remove the pork roast to a serving platter and cover with foil to rest.

- Begin by making vertical slits with a pointy knife in the roast. Insert a piece of garlic in each of the holes.
- Melt the butter with the olive oil in a heavy skillet on medium high heat. Sprinkle the roast with salt and pepper then brown it on all sides in the hot butter.
- When it's browned all over, remove from the heat and slather the mustard on all sides of the roast.
- Place about 1/2 of the cut potatoes and carrots in the bottom of the crockpot, then put the roast on top of this.
- Return the skillet to the heat and add the onions. Brown the onions for five minutes, stirring occasionally. Place the browned onions on top of the roast and add the rest of the carrots and potatoes as well.
- Return the skillet to the heat one last time and add about 1/2 cup of the beef bouillon. Use a wooden spatula to scrape the bits off the bottom of the pan and into the bouillon. When most of the bits are unstuck, pour this along with the rest of the bouillon on top of the roast.
- Cook the pork roast for 6 hours on low heat. If you are home, you can give things a stir every once in a while.
- To serve, remove the roast form the crock pot and cut iit n thick slices. Serve in a deep plate with the potatoes and carrots and topped with a ladle of the sauce. Don't forget the French bread!
- Notes: This slow cooker pork roast recipe couldn't be simpler and you can change it around as you wish. You could for example, include green beans along with the other vegetables or use different herbs. A splash of wine would be a fine addition as well. A good tip from duonyte, if you twist the knife blade slightly as it is piercing the meat and slide the garlic sliver down the blade and into the meat. The garlic permeated the meat. I thank her for this.
- Don't worry about the mustard flavor being too strong. Mustard loses its bite when it is cooked, so all you get here is great flavor.
- Slow cooking in a juicy sauce is perfect for pork roasts, which otherwise have a tendency to be a bit dry. You'll want to serve this slow cooker pork roast recipe with a good loaf of French bread because there is lots of great sauce to sop up. A deep plate, called a soup plate, is ideal for serving juicy dishes like this.
