Crock Pot Jalapeño Popper Corn Dip is full of corn, bacon, jalapeños in a creamy filling. Serve with tortilla chips or corn chips!

3 (15 ounce) cans fire-roasted corn, (drained well)
2 jalapeños, (seeded and diced)
1/2 cup sour cream
1 cup shredded Mexican cheese blend
salt and pepper, (to taste)
8 ounce block cream cheese, (cubed)
1/2 pound bacon, (cooked and crumbled)
sliced green onions, (to garnish)

Steps:

  • Place drained corn, diced jalapenos, sour cream, shredded Mexican cheese blend into a 2.5 quart crock pot (or larger); season with salt and pepper, to taste.
  • Stir until well combined. Top with cubed cream cheese.
  • Cover and cook on low heat for 2 hours.
  • Uncover and stir until everything is combined well.
  • Sprinkle top with bacon and sliced green onions. Serve with tortilla or corn chips.

This creamy and cheesy slow cooker dip is the perfect snack to feed a hungry crowd on game day or to get any party started. If you are expecting a large crowd, you may want to double this recipe so you do not run out before the party is over. With only eight ingredients and minimal prep time, this recipe will become your go-to recipe for entertaining. Simply stir the first seven ingredients together in the slow cooker and let it cook. You will know the dip is ready when it is creamy and bubbling. If you are short on time, you can switch your slow cooker to high, instead of low, and have it ready in 1 ½ to 2 hours. The sweet corn and spicy jalapeño create the perfect flavor combination. Serving this appetizer in the slow cooker will allow you to spend less time in the kitchen, while also keeping the dip warm until the final play of the game. When the dip is ready, stir in the crumbled bacon slices and garnish with extra scallions if desired, and make sure you have plenty of corn chips to serve alongside the dip. 2 (8-oz.) packages.s cream cheese, softened and cubed
1 (8-oz.) packages. pre-shredded sharp Cheddar cheese (about 2 cups)
2 cups frozen corn kernels, thawed
3/4 cup half-and-half
1/3 cup chopped scallions, plus more for garnish
2 teaspoons minced garlic
1 jalapeño chile, seeded and minced
8 thick-cut bacon slices, cooked until crisp and crumbled
Corn chips

Steps:

  • Stir together cream cheese, Cheddar cheese, corn, half-and-half, scallions, garlic, and jalapeño in a 3-quart slow cooker.
  • Cover and cook on LOW 3 ½ to 4 hours or on HIGH 1 ½ to 2 hours until creamy and bubbling, stirring halfway through. Stir in bacon.
  • Garnish with scallions, if desired. Serve with corn chips.

2 cups shredded pepper Jack cheese (8 oz)
1 package (8 oz) cream cheese
3 cloves garlic, finely chopped
16 oz frozen corn
1/4 cup pickled jalapeño chiles, chopped
2 tablespoons liquid from jar of jalapeño chiles
4 slices bacon, crisply cooked and crumbled
Chopped scallions, as desired
Tortilla chips and lime wedges, as desired

Steps:

  • Spray slow cooker with cooking spray. Place cheeses, garlic, frozen corn, jalapeño chiles, and liquid from chiles in slow cooker. Cover and cook on Low heat setting 2 hours, stirring a couple of times during cooking.
  • Stir in half of the chopped bacon. Transfer to serving bowl, and top with remaining bacon and scallions. Alternatively, you can serve this dip right out of the slow cooker.
  • Serve with tortilla chips and lime wedges on the side.

1 pound frozen corn kernels, thawed
8 ounces cream cheese, cubed
1/2 cup chopped jarred pimientos
2 jalapeños, seeded and finely chopped
1 clove garlic, finely chopped
1 teaspoon chili powder
Kosher salt
1/4 cup chopped fresh cilantro
Tortilla chips, for serving

Steps:

  • Combine the corn, cream cheese, pimientos, jalapeños, garlic, chili powder and some salt in a slow cooker. Cook on low heat for 1 hour. Stir to mix in the cream cheese. Continue to cook for another 2 hours. Stir in the cilantro and season with salt.
  • Serve warm with tortilla chips for dipping.
